I lived in Germany and they do a pork fat "pate" as a spread for bread. You cut up an onion to a fine mince and add to the hot bacon fat in the pan (grated apple can be used too if you like a sweet pate). Cook over a medium heat so that the onions carmelize some and let out their flavour. Salt and pepper it a bit, you can add some dry thyme or parsley to it. Pour into tiny crockware dishes and let cool until it starts to firm up. Stir it to bring some of the solids to the surface and smooth the top. Put in the fridge until it is firm.

Not overly healthy, but it is a cheap and interesting spread for a good quality "chunky" bread like caraway rye or oatmeal brown. Probably no worse then butter which is saturated as well. You wouldn't need much at all because it is an intense flavour.

i feel bad for just chucking it down the drain with the hot water.


dont feel bad just chucking it down the drain. you are doing a great service for the future. it will build up in the pipes...clog em..and then you will either have to buy a dissolver or call a plumber to break the clog thus helping stimulate the economy.

I keep a drip can in the freezer....and everytime I cook bacon...I pour the drippings into the container and put it back in the freezer.....

Then when I am making cabbage rolls (holubchi) or perogies...I use it in making the filling......

In addition, I buy the back fat (that is just the fat of the pig still attached to the skin).
I cut the fat away from the skin, cut it into little squares...and fry it in a frying pan....you will end up with lots of liquid fat...but some of the squares get crunchy....
and that has a unique taste.......and is excellent in making the filling for cabbage rolls...

Oh, for cryin' out loud....

OP, I'm happy that you chose an interest in this culinary aspect. I'm sure you're not an idiot and need no advice on your health. Meaning that, you understand all the "bad" things can lead to "horrible" health consequences. So, without further adue.....May I offer up a wonderful recipe for German Potato Salad?

Keep in mind, others may not appreciate the wonderful uses of bacon fat. (Okay, my parents are like yours. I grew up watching them spread it on white bread)

In this instance, it is the backbone of this entire recipe. Keep in mind that you also need some of that bacon itself. There are tons of recipes for this and hopefully, if you like it, you will tailor it to your liking. It's so easy to make. I make it all the time, but don't have exact measurements because I "just know". So, I went to FoodNetwork and searched for one just like mine. (I'm of German heritage, I was born and raised in Milwaukee!)
Also, the shelf life is rather long as long as you keep it covered. It's got a way of making friends with everything else in your frig.
Enjoy using that bacon fat! Good for you! Now, get crackin' on that potato salad!! (I never use the hard-boiled eggs for garnish. Save them for the deviled eggs!) Let me know how it turns out!

Warm German Potato Salad Recipe courtesy Liz Darland
Show: FoodNation With Bobby Flay
Episode: Milwaukee

1 to 1 1/2 pounds new potatoes
1/4 pound bacon
1 medium onion, coarsely chopped
1 stalk celery, chopped
1/2 teaspoon all-purpose flour
1/2 teaspoon sugar
1 teaspoon salt
1/8 teaspoon pepper
1/2 cup water
1/2 cup cider vinegar
Fresh snipped chives, optional garnish
Minced parsley, optional garnish
Hard boiled eggs, optional garnish

Scrub potatoes and cook in boiling salted water until tender. Drain and, while hot, skin and cut into 1/4-inch slices. You should have about 4 cups. Set aside.
Place bacon in a skillet and fry until almost crisp. Remove bacon from pan and add onion and celery, cook until tender and transparent, remove from pan.
Drain off all but one tablespoon of bacon fat; add flour, sugar, salt and pepper to skillet stir until slightly browned. Add vinegar and water and cook until mixture is slightly thickened. Add back the bacon, onion, and celery.
Pour hot dressing over potatoes; stir gently to blend. The potatoes should look glossy. Garnish with hard-boiled egg slices, sprinkle minced parsley, and chives over top. Serve warm.

HJA your potatoes sound delish!!!

I make Stewed Potatoes

2 1/2 lbs Peeled an cubed Potatoes (any but baking potatoes they get mushy)
2 heaping tablespoons bacon grease
2 tablespoons of sugar
salt and pepper to taste

Add water till you can just see it in the pan Don't cover the potatoes it's too much. Bring to boil, turn heat down to simmer, at least 45 min(maybe longer) stir occasionally. It makes it's own gravy!! You may need to add more bacon grease, sugar or salt and pepper. Taste and add to your liking. YUMMMMMM

Rub it into your clodhoppers and they last twice as long. And all the dogs love you and don't jump up on you. The stuff is great. I use it on fire to flavor pork chops

My mom would make chicken fried steak and put country gravy made from bacon fat and milk, that and mashed potatoes and peas and carrots, I'm back home....and the biscuits

And I'm German! I eat enough unhealthy stuff, thank you!

I just cut open an old juice carton, pour the bacon fat in there
and convert it into heat in the fireplace. Burns nice!

We used to fry morel mushrooms in bacon fat. The mushrooms were so good. Then Mom would fry eggs in the grease for breakfast. Really delicious.

As mentioned before, you can use it to make your own suet instead of buying which gets expensive. Birds love it and it holds together nicely. After you are through with your bacon grease, put it into a square dish and add a variety of bird seed, mix it well, and let it set up. There are cages designed especially for suet and you can fit your mixture into the cage also.

Another idea for bacon fat is to make you a nice Wilted Lettuce Salad. I love taking some fresh greens from the garden, slices of onion, and VERY hot bacon grease poured over the top. Like mentioned it makes a great dressing.

It seems like nothing we eat anymore is good for us and you take those chances when just going to the grocery store. You not only have to worry about fats clogging arteries, you have to worry about Ecoli on your vegetables and other produce. So, I say, enjoy it while you can because life is short. I would rather die smiling and know that I have enjoyed my time here on earth, then worrying about counting calories and such.

You need to watch Emeril. If you did you would already know that "Pork Fat Rules"!

Save it to cook with or freeze it in a can so its solid and toss it out in the trash.
Pouring it down a drain will only lead to stinky, clogged drains and is not recommended.

For the leavening in cornbread it gives an awesome flavor. It's sort of the family secret (of sorts..lol) to our cornbread recipe that's been handed down for generations. I guess the secret is out now. Ah well.
