The blackened aligator...seems like a strange way to cook such delicate fair, but, ok, could be good. I know I loved Blackedened Amberjack with Sauce Yvette...WOW
Why would anyone make burger out of perfect wild game???? Never Ostrich, too dang good as MEAT/steak/more. Buffalo, same way, but.....One of the best burgers I have ever had was a buffalo burger at The Buffalo Restaurant and Bar in Idaho Springs, CO on I70 just west of Denver. So tender, so delectable, so flavorful, so juicy and with port wine cheddar, mesclun, I would have never guessed. Awesome. Try it with raspberry beer.
Dave....same thing, tsk, tsk. Why would any sensible human make a to die for elk into burger????? Has anyone ever noticed how 90% of the cooks/restauranrts in this country are operated and cheffed by non-capables?

naturechaser, you are right on, but I would certainly throw in a few more...like any broken bone, the marrow is what makes a rich stock. Turkey tails are maybe number one for deep rich full bodied stock. Aromatics/herbs are a must.
I love this thread. Please continue to post. I have a few more thngs to say, but my grandfather passed and I have to take care of the legalities and the family, so I may be somewhat absent over the next week, but I am still reading, because it is a nice break for me from the stresses. Oops, sorry Dave, you said ostrich, someone said elk. Oh well. Dave, find a place that serves Ostrich steaks, or buy your own. Now, if you cook it, remember #1, lower heat than beef, shorter cooking and the juices running dark pink is cooked, light pink is well done and clear is unetable. Just a quick low heat grill, or quick sear in the cast iron skillet. Serve it over quinoa cooked in any kind of broth and make a blackberry sauce. This is a no fat, no cholesterol, high flavor, high fiber, high protein meal bursting with major flavor. Season the meat, but pepper after. Excellent.

It's actually intestines. They must be pealed first then they are tender enough tobe roasted. It's a by product of dairy fed veal so it's real cheap. In Florida they sell it at Sam's. It's actually got cream in it so it's got a great texture too. An old Italian buddy of mine showed me this dish simply roasted with rosemary. It was awesome. | |

Take the skins and boil them, then run them through the grinder with the meat and season as you would regular Italian sausage. Stuff in normal casings and grill on low. When it gets hot the skin inside sort of melts, the texture in incredible! | |

Any wild game, I've eaten raccoon, porcupine, beaver as well as the more common small and large game. In fact wild game is the staple meat of my diet. So I do not find it unusual, but some do.
I think the reason people claim not to like wild game is two fold. One, most of it can not be cooked like it is a piece of domestic beef. More care needs to be taken to retain moisture. Also field care and processing and aging are very important to wild game.

Oh those Chinese are so cruel (no offense)..one Chinese guy told me how his mom would rip the shell off a turtle and quickly throw it in boiling water. It's really an obsession at getting the freshest meat possible. It is true about the monkey brains too.

Posted: 3/19/2008 9:08:08 PM | Except for lips, ears, snouts, and eyes, I believe I have eaten everything that everyone has mentioned so far. Of course, I may have also eaten the aforementioned items as ingredients in sausages/hot dogs, unknowingly. I have not eaten, and hope never to eat, monkey anything.
I haven't had rattlesnake, but I have eaten cobra, and elephant (How do you eat an elephant? One mouthful at a time. ), emu, and kangaroo, along with bone marrow from different "critters". I've enjoyed most (though not all) of the "exotic" things I've eaten, too.
I have not eaten porcupine or raccoon, nor have I had menudo, though I know what it is. | |

Sorry Naughtical.... Girl, he kind of surprised me with that tubesteak thing. I am not offended, but I also never knew about hot dogs. Really? Was this a community thing, or a family thing? I remember when I was 13-14, this was guys number 1 try to look cool and give you the come-on line. Us girls used to just think.....How uncouth! Unless something just tastes/smell awful, I think most of the food prejudices are probably a learned behavior from your environment (i.e. your parents/family's opinions).
So I have a theory on vegetarians. No offense to the vegetarians. I don't want to be stoned to death. My theory is that if not for religious reasons, most veggies are just picky eaters to the extreme. And for those that are religious, well, maybe a LONG LONG time ago some leader of the religion is a VERY VERY picky eater and decided for everyone that if they don't like something, nobody should.

Your theory is a load of rubbish, I chose to treat animals and people how I would like to be treated my self, there is ne humane to kill animals and I would not be able to sit at the table thinking that what is infront of me once had a life of its own, was probally fed on hormones to make a fat profit and most likely kept in an un humane way just for me.. Iwouldn't sleep on a night, I am not a fussy eater I will eat anything, I have an extremely healthy diet and clear skin, good hair nails etc...
I do not slag off people who eat meat and it would be nice if people did the same, respect I have the right to chose what I eat without judging me..
