I was losing sleep over NOT being able to find the recipe for you since you are a vegan and all my searching paid off...so voila....
REALLY EASY MIXED BEAN CHILI Serves 6 (easily doubled to serve more)
1 15 ounce can pinto beans - rinsed and drained 1 15 ounce black beans - rinsed and drained 1 package taco seasoning mix (mild or hot depending on your heat index preference) 1 8 ounce jar of salsa - your favorite 1 10 ounce package of frozen corn 1 sweet potatoe - peeled and cubed (this makes the recipe special)
Dump it all into a crockpot. Set on low and cook for 6 to 8 hours. Mix well before serving. How hard is that???
Per Serving: 283 Calories; 1g Fat(3.4% calories from fat); 15g Protein; 55g Carbohydrates; 15g Dietary Fiber; 0mg Cholesterol; 584mg Sodium. Exchanges: 3 Grain (Starch); 1/2 Lean Meat; 1/2 Vegetable; 0 Other Carbohydrates.
Serving Suggestions: Serve with your favorite cornbread(make or buy) and a great big salad. Enjoy!!!
*** Note for you meat eaters...If you relish this recipe, but want meat in it. Just brown up about a pound of ground beef or turkey that has been seasoned and then drained of all the fat, then add to the finished crockpot recipe up above to have a chili with meat in it.

| The Slow Cooker AKA Crock Pot Posted: 5/30/2008 8:20:45 AM | Here's a dish I made last night.
2 cups of beef stock 1 cup of water 1 can mushroom soup 1 package dry onion soup
I took an eye of round rump roast, seasoned with salt, pepper and montreal steak, and then seared two sides of it over high heat in a frying pan. Then, put it into the mixture above and cooked on low for about 6 1/2 hours. The flavor of the meat was really good, and the sauce becomes a tasty gravy. It makes a little bit too much gravy, but you can never have too much of a good thing. I suggest using reduced sodium beef broth and then season the gravy to taste.

| The Slow Cooker AKA Crock Pot Posted: 6/19/2008 8:51:53 PM | | I can't think that chicken in a crock pot would be all that good? Unless you don't care to have the crispy skin on the outside of it? I know it has been done before just that I have never wanted to try it! Maybe someone has done it that can advise? | |
|
| The Slow Cooker AKA Crock Pot Posted: 6/19/2008 10:02:32 PM | Oh chicken in a crockpot is very, very good for a great many dishes. If you want the crispy skin you can always stick it in a hot oven to crisp up. Uncle?? It would take an awfully big crockpot to fit a whole turkey, wouldn't it? I' m sure it would be good, because I always do one a year in a big stockpot for a bunch of dishes I like throughout the year (I freeze the turkey and broth for later use) but holy cow--where would you find one that big?? I KNOW!!! It's called a NESCO Roaster with all the steam vents plugged up!! LOL | |

| The Slow Cooker AKA Crock Pot Posted: 6/19/2008 10:31:22 PM | Yeah I know that's why I was wondering. I heard it right here on POF. Would you cut it up ? Guess so. | |

I've done so with the half breasts you can buy fresh in the store's poultry section. Use a can of low-sodium chicken broth in the crock pot as well, and you can also add seasonings such as some chopped onion, a bit of dried sage, etc.
Wonderful and Thanksgiving just about any time of the year. I save back a little of the broth and use it in homemade dressing, and make gravy with the rest of the broth. Incredibly easy with the crock pot!
I just bought one with an automatic timer; I work and am gone pretty much all day, so I can either put the food on low in the morning or put something on over the noon hour and cook on high. When the timer is done, it switches to a keep warm setting -- won't cook the food any longer, but keeps everything at a safe temperature.

| The Slow Cooker AKA Crock Pot Posted: 1/1/2009 6:16:29 PM | I finally bought a crock pot a couple of days ago, and tried it out. I made honey garlic pork ribs and it was good.
I heard its important to add lots of seasoning, and not as much liquid, as before, and do you need to cook chicken before adding it to receipes?
I'm looking forward to trying many things, and never knew you can make desserts, beverages and look forward to hearing you're learning experiences.

Crock-pot Whole Turkey turkey (9-1/2 lbs. is the MAXIMUM to fit in a 6-1/2 quart crock pot) olive oil salt pepper garlic powder dried parsley onion apple meat thermometer
Your turkey must be completely and totally thawed. Can remove most of the skin if you’re worried about it, but the skin seems to brown a bit in the crock-pot. Remove the neck and the bag of stuff they put inside the turkey. Pat the turkey with paper towels to dry it off. Rub a handful of olive oil all over the bird, inside and out. Sprinkle salt, pepper, dried parsley, and garlic powder all over and in it, and rub it around. Peel an onion, quarter it, and shove inside. Core an apple and do the same. Lower the bird into your crock-pot breast side up. Cover. Cook on high for 3 hours, then check the internal temperature – should register 140°F minimum. Cover again and cook on high for another 4-5 hours; check temperature – should read 170°F or higher. Carefully remove turkey from crock-pot. The edges will have browned nicely. If you'd like, you can broil the top for a few minutes in the oven; put the turkey in a roasting pan and broil 7-8 minutes. Tent and let stand 15-20 minutes before carving.
Question is why use a crock pot if it takes 7-8 hours to cook. Takes less time to cook a 25 lb. stuffed gobbler in the oven.
Food warning: Many food experts say cooking a whole chicken in the slow cooker is unsafe, because the low cooking temperature keeps the cavity at an ideal temperature for breeding bacteria for too long a time. The same holds true for turkey. Note that a slow cooker is not the same as a roaster oven, such as those made by Nesco.

| The Slow Cooker AKA Crock Pot Posted: 4/19/2009 8:09:17 PM | I do like to put in some chicken with some cream of mushroom soup. Spices, veges, and some pasta.
I like the little pasta, that looks like rice. I forget the name. But even when they really swell up, they are still small.
Then when it's all done, I make some rice and just serve the crock pot meal on hot rice.
Yum!!!

| The Slow Cooker AKA Crock Pot Posted: 4/21/2009 6:16:42 PM | Yeah, that's it!! I had to check my pantry... lol
I always try to keep a box of most types of pasta at the ready, and I use orzo for soups and whenever I needed little juice sponges... :)
When I cook the chicken in the crock and usually make rice and then ladle out chicken on a pile of rice, well when you use orzo, it kind of blends with the white rice. Different texture of course.
