Hope someone is still following this thread. I got a new one for you. I bought a 5 pound ham at Easter with an expiration date in June. It is still sitting on the bottom shelf of the fridge and people have told me that I need to throw it out. They said I was supposed to freeze it. Aren't these things smoked or something? Why would they have an expiration date in June, if it was going to go bad in the fridge. Toss it or no?

^^^Packaged ham can have a long shelf-life if unopened. Once opened, the shelf-life of ham is about four days depending on your refrigerator and how it was prepared. My advice, seeing I can't see the label from here, is: asked about the expiration date at the place of purchase.

I do what I can (reach to the very back of the refer when selecting dairy products) and then don't worry about it. Dried spices I would think are harmless unless obvious ( mold or ?) but will lose some of their potentcy so you might want to use more and crush it in your hand to release the essntials.
I got deathly ill on an imortant NFL playoff game day and had to spend all day in bed. I thought it was because I opened the can and left it in the refer for a while. Now I think it was in the canning process.
The culprit was enchilada sauce.

Probably not. Food should never be left in the can, once it's opened. Put it in a proper storage container. Also, how long did you leave the can out, before storing it in the fridge? No more than two hours is the recommendation.

It might not of been the enchilada sauce that made you sick, but something else you ate.

I think I ate it with eggs which might be a more likely suspect.
