Parboil them, LIMP, shall we say, and dowse them in ice water, then fry in good oil, NOT, Olive Oil. Best is Peanut or Sunflower oil.

| Home made french fries Posted: 5/9/2008 3:24:06 PM | The real question should be, "Why can't I get real french fried potatoes in a restaurant?" The closest restaurant to me that I can walk into, order french fried potatoes and get french fried potatoes is 150 miles away. What is with the American consumer? Why do we tolerate this treatment. I think we should go on a great french fry strike. If it ain't real, we ain't buying. I'm mad as hell, and I'm not going to take it anymore. Go to your window, open it up, stick your head out, yell, "I'm mad as hell and I not going to take it any more."
Oops, gotta run -- got a customer at the window, "Do you want fries with that ma'am?"
