One of my favourite ways to get my greens. You better love your baby bok choy.

Cook bacon to desired crisp, reasonable portions to suit.
Remove bacon from pan, place between papertowel sheets and press.

Depending on what other garbage you've eaten that day (Peanut Butter M&M's are evil) You decide if you drain the fat before throwing the bok choy on. Cook to desired tenderness while cutting the bacon into small strips.

Rinse some fresh baby spinach, toss with Thai vinagrette, plate portions to suit. Top with bacon, bok choy, and stop salivating, you get to eat it now. Enjoy!

Has any one had deep fried boc choy or kai choy ? I had it at a chinese restaurant in Nowra AU and never heard of it being cooked like that before. Crispy then salted.
Probably need a deep fryer to make it correctly or a wok.
