I made chili and rice tonight. Yummy. I'm thinking of cutting and scoring my usual....red ruby grapefruit and throwing in another load of laundry. ..zzzzzz MAYBE, I'll grill the grapefruit...what do you think about that? with a little brown sugar perhaps? ~~Beth~~ | |

| Summer BBQ Posted: 6/4/2008 9:38:41 PM | Hey Beth... we used to make eggs in orange skins. Bet you could do the same with grapefruit. Cut the thing in half around the equator- scoop out all the insides. Prep the eggs: 3 Large eggs 2 Tbsp Whipping cream diced veggies (onions, peppers, etc) Diced meats (ham, turkey, etc) 2 Tbsp shredded cheese
Whip the eggs and cream together in a blender or with a stick blender until it's nice and frothy. Stir in the veggies, meat & cheese. Pour into the grapefruit half.
Set the "bowl" into a bed of coals and let it cook. Takes about 20 minutes on an open fire with good coals. You'll have to experiment with your own timing.
While the eggs are cooking in the fire, pit the rest of the grapefruit that was removed and arrange on a plate. The eggs are done when they are medium firm- turn out to the plate and serve with some home fries.

Orange Djon mustard sauce
1 small can OJ 1 med size jar djon mustard 1 jar Orange marmalade 1/4 to 1/2 cup brown surgar 1 small bottle white wine Vinegar
Heat in pan OJ a good helping of Djon (flavor to taste) several tbl spoons Marmalade brown sugar and several tbl spoons of the Vinegar heat slowly and adjust to taste. | |

Creamy Potato Salad Made Over 1 lb. red potatoes, unpeeled, cut into chunks 1/4 cup KRAFT Light Zesty Italian Reduced Fat Dressing 1/3 cup MIRACLE WHIP Light Dressing 1-1/2 tsp. GREY POUPON Dijon Mustard 1 hard-cooked egg, chopped 4 green onions, sliced
COOK potatoes in boiling water 15 min. or until tender; drain. Rinse potatoes with cold water until cooled; drain again. MIX dressings and mustard in large bowl. Add potatoes, egg and onions; mix lightly. Cover. REFRIGERATE at least 30 min. before serving. fromcreamcheese.com | |
