I found this recipe in a magazine a while back. It's easy to make, tastes great and is healthy. A great recipe that most men can pull off and show some cooking prowess.

Orange Balsamic Salmon Steak

1/4 cup orange juice concentrate
1/4 cup balsamic vinegar
1 1/2 Tbsp finely chopped fresh rosemary
4 salmon steaks about 6 oz (you can vary the amount/weight)

Place first three ingredients in a large zip-top plastic bag and shake well. Add salmon and refrigerate for 30-60 minutes. Remove steaks from marinade and pat dry with paper towel. Discard remaining marinade. Coat a grill with cooking spray and heat on high. Grill steaks, turning once, until no longer translucent in the center (about 4 minutes per side).

Just a side note remember that fish does not need long to cook so do not walk away and do something else while your salmon goes black. I have found personally rice and a simple salad work well as side dishes. I am by no means a cooking guru and I can pull this one off with ease.

Yum Yum, couldn't be any easier! Sounds Great! I think I'm going to substitute fresh key lime juice for the OJ concentrate!
