I enjoy Boudan on crackers and usually make that a meal for myself. But it seems lacking if I were to serve this to others. But I can't think of anything that just makes that perfect fit.

Any ideas?

Growing up, it was fried as part of a meal. Usually with a fruit compote and potatos or spatzelle.

Reminds me of the song Legionare's sing on the march. The first line is "voila du boudin".

A traditional blood sausage from France. I believe that there is a version made in Louisiana too. Similar to bllod pudding from the UK.
Boudin Blanc, is a version made without blood, just pork.

Blood sausage, blood pudding? Can honestly say that I have neither one. But this sausage, is it kind of like a spreadable pate??

I believe boudan found in La. is a pork sausage which does not contain blood and has rice as an important ingredient. When cooked they split open, looking and tasting much like a stuffing.

OOOOOHHHH NO! No blood sausage here! I remember my grandmother making German bloodsausage.....nope, not gonna happen lol

Boudin here in the Southeast Texas/Louisiana area is a very spicy rice sausage.

Ok are you talking about boudin which is like dirty rice in a sausage? I don't know what boudan is.

not much you can do with boudin except eat it. i like to smoke is rather than boil it.

i guess lafayette, or scott, is the boudin capital

Well some of us are talking about exactly that kind of boudan, very much like dirty rice {yum}. But I think the folks up North are speaking of something else.

hmm smoking it sounds interesting. I've never had it that way.
I usually add a little water to a frying pan and keep over medium heat until the water is gone and the casing cracks.
