| Things I can cook with my slow cooker... Posted: 7/21/2008 3:04:15 PM | | Okay, so I have not one, but two slow cookers for college and no clue what simple stuff I can make with them. Any suggestions (just reminding you, this is a guy who's on a college budget and low cooking skills)? | |

| Things I can cook with my slow cooker... Posted: 7/21/2008 3:39:27 PM | Totally simple, cheap and really good:
Crock Pot Mac 'N Cheese 2 lbs Velveeta Cheese (1 box) 1 stick Butter 16 ounce Macaroni Noodles 1 can Evaporated Milk 1 1/2 cups Milk
Set crockpot on High.
Spray or butter crockpot. Place velveeta and butter in crockpot and let melt. Meanwhile, boil water and cook noodles. Once most of the mixture is melted add cooked noodles, evap. milk and regular milk. Set crockpot to low and cook for 1 to 2 hours, stirring macaroni every 45 mins or so. Serve when Mac n cheese is creamy!
You can add broccoli and chicken if you want or make it a TexMex mac n cheese by adding some spicy canned Rotel tomtoes.

| Things I can cook with my slow cooker... Posted: 7/21/2008 3:57:14 PM | I'd say spaghetti sauce is the easiest to make....
Brown your meat (ground beef - ground turkey - ground pork) & drain off the fat. Put it in your crock pot, add all ur veggies that you want (onions, peppers, mushrooms, garlic etc;) and your spaghetti sauce. Cook 4-6 hours on Low.... The if you make too much.....
The next day add kidney beans, pork & beans chillie powder and whatever you'd like to add... And you have some great chillie!!!

| Things I can cook with my slow cooker... Posted: 7/21/2008 5:31:19 PM | Crock Pots make lots of food - you will have plenty of left overs unless you have room mates to help share.

| Things I can cook with my slow cooker... Posted: 7/21/2008 8:41:40 PM | I hope this doesn't double-post. I'm having a little trouble with my internet connection.
My favorite easy one-pot crockpot complete meal: Cut up into chunks: a couple potatoes, onions, a few stalks of celery, and a carrot and put it into the pot. Add about an inch of water in the bottom. Sprinkle it with salt, pepper if you like. On top of that put in a cut up chicken - you can buy it cut up or buy a whole one and cut it up yourself. Sprinkle some salt on that. Let it cook at least 4 hours. Take out a piece of the chicken and see if it's done. Your cooker may be different but mine is done within 4 hours. You've got your chicken and your vegetables, a nice complete meal and it's real easy. You can get fancy and add some herbs - sprinkle in some thyme or rosemary or Italian seasoning. If it tastes bland, sprinkle a little more salt when you eat it. The broth at the bottom will be really good.
Someone else mentioned dried beans. Crock pots are great for cooking beans. They are cheap and a good source of protein and fiber. Plain boiled beans are not very interesting but you can do all sorts of things with them. If you soak them over night (toss out the soaking water and use fresh to cook them) most beans will cook in the crockpot in about four hours. If you don't soak them, they'll take six or eight. I cook them overnight. They should be soft enough to smash them with your tongue against the roof of your mouth. If they're at all crunchy, they aren't done. The exception is garbanzo beans.
You can make bean soup by cooking a mess of beans and adding chopped onions, celery, and carrots. Get the beans pretty soft first and then add the veggies in the last hour or two, cook until it's all real soft. I like to smash some of the beans to make it thick & gravy-like. You can add a can of stewed tomatoes to it, a little garlic if you like. A bay leaf is good in there. I like black bean soup. You cook a mess of black beans. Then you slice up a lot of onions, garlic, and green bell peppers. Cook them in a frying pan with a generous amount of olive oil until they're soft, then add them to the black beans. Add a generous amount of green taco sauce. It's delicious!
Remember: if something tastes bland, it probably needs some salt.
Good luck and have fun. Let us know how your cooking experiments go.

| Things I can cook with my slow cooker... Posted: 7/22/2008 3:41:17 AM | Whole Chickens are inexpensive...here is one I make when I am in a hurry. I usually make a veggie and mashed potatoes and gravy to go with it. It turns out very tender and falls off the bones when you take it out.
I usually use the left overs to make chicken noodle soup or chicken salad.
Whole Chicken Crock Pot Recipe
3 lb whole chicken 1/2 c chicken broth 2 carrots, sliced 2 celery stalks with leaves 2 onions, sliced 2 tsp salt 1 tsp basil 1/2 tsp black pepper
1. Put carrots, celery and onions into the bottom of the crock pot. Add a whole chicken.
2. Add salt, pepper, and chicken broth. Top with basil.
3. Cover and cook on low 8 to 10 hours.

| Things I can cook with my slow cooker... Posted: 7/22/2008 4:16:29 PM | 1 roast (beef or pork) about the size of a medium to large steak 2-3 large potatoes, wash them and do a large dice 2 onions dice them large salt pepper 1 bay leaf 1 can of beef broth as much garlic as you can stand (powdered works fine) half a can of beer (you're in college, so I'm SURE you'll find something to do with the other half)
Not sure if you have access to a grill, but briefly grilling each side of the meat gives you a better consistency.
Anyway, throw everything in the crock pot (I do it right before bed), set it to cook on low for 8 hours. The outsides of the potatoes will start to fall apart, thickening it up. When you're ready to eat, spoon some over some brown rice or egg noodles. Invite your friends over to share.
No need to set an alarm clock, your place will be filled with lovely beef stew aromas.
You could also throw in some carrots, okra, bell peppers....a cat! Get inventive with it.

I use cream of chicken or mushroom. Spread soup right out of can over the chicken. Take a box of dry chicken stuffing mix and sprinkle over soup and chicken. Moisten stuffing mix by sprinkling with water. Cook on low all day long.

| Things I can cook with my slow cooker... Posted: 7/23/2008 9:23:38 PM | BEER MEATBALLS * 1 can of beer * 1 6 oz can spicy V-8 juice * 1 tsp. lemon juice * 1 tsp. hot sauce * 1/2 c. Italian bread crumbs * 1 c. onions * Salt and pepper to taste * 1 lg. bottle ketchup * 1 tsp. horseradish * 1 tsp. Worcestershire sauce * 2 to 3 lbs. ground beef * 2 to 3 eggs Combine ground beef, 1/2 cup onions, Italian bread crumbs, eggs. Make the mixture into small meatballs. Then fry or bake the meat. In saucepan combine remaining ingredients. Simmer for 15 minutes. Put meatballs and sauce into slow cooker/Crock Pot. The sauce should cover the meat. Allow to simmer in slow cooker/Crock Pot for at least 3 hours, however, the longer you let them simmer, the better they are! 6 to 10 hours on low temperature is great. Stir them occasionally. You may wish to add more ketchup, or V-8 juice - spice them up if you like them hot.

| Things I can cook with my slow cooker... Posted: 7/24/2008 2:36:46 AM | Hi, if you ever fancy a peice of beef for a meal or a sandwich, just get a joint of beef that fit's in the cooker, put any thing on it you want ie herbs or leave it plain. wrap securly in silver foil, pour around it hot water until its three quaters up to the joint, pop the lid on and cook on high for 3 to 3.5 hours.
Any fat in the beef will come out and its cooked in its own natural juices it could not be any easier, 2 mins and thats it to prepare. x

| Things I can cook with my slow cooker... Posted: 7/26/2008 1:01:56 PM | Either whole chicken, chicken breasts,or turkey breast. (turkey & chicken are a lot cheaper than beef or pork)
put a little olive oil in the bottom ..say a couple of Tablespoons. (can be substited for toasted sesame oil to give a woody flavor) put your meat in evenly spread around the pot Add enough water to cover the meat & all of whatever else is going in chop an onion & toss in a couple of minced garlic toes or 1 Tablespoon of minced garlic if you're not going to chop it 1 heaping teaspoon of Italian spice blend if you like it hot & spicy, add some cayenne pepper starting with 1 teaspoon 2 or 3 chicken boullion cubes crushed Cook on High for 1 hour then turn down to about a 4th of the way from being the slowest level & cook for 4 hours.
This cooked meat can then be used for whatever through the week. You can make casseroles with it, eat it with rice & veggies, make chicken salad, chicken burritos, or anything else you want. You can cook one big pot of it & work with it through the rest of the week without having to "cook" every single day.
PS. I call it a "crack pot." LoL :^)

| Things I can cook with my slow cooker... Posted: 7/26/2008 3:31:14 PM | Boneless country style pork ribs. Toss em into the pot and season with garlic, salt, pepper,, what ever you like. Put the lid on, set at low and forget them for 6 to 8 hrs. Thicken the pan juices to make gravy, serve over rice or noodles. OR add BBQ sauce at the beginning and when it's done break up the meat with a fork ~ shredded sort of ~ Spoon into buns for great sandwiches.. That's dinner at my house tonight, as a matter of fact.

| Things I can cook with my slow cooker... Posted: 7/26/2008 7:11:53 PM | It's harder to find things you CAN'T cook with a crock pot.
Take any fresh roast. Put in bottom of crock pot. Add a can of condensed Cream of Mushroom (or any other "Cream of-" condensed soup). That makes the gravy. Add cut-up peeled potatoes and chunks of carrots, and any other fresh vegetables you like. Simmer on Low for 8 hours or so.
My crock pot has a removable liner, I set it up the night before with the carrots and potatoes covered in salted water. In the morning I drain off the salty water, add the roast and the soup, put it on Low (or, if so equipped, use "Auto-Shift," which brings it up to temp then turns back to simmer), let 'er rip all day.
Alternatively, cut the roast up into bite-size chunks first.
Use salsa, diced tomatoes, or spaghetti sauce instead of soup.
Do away with the potatoes, use brown rice instead, put it in the bottom of the pot, under the meat.
Do away with the meat, use dried lentils or beans (sort them and WASH THEM FIRST) and a little water.
Great to come home to the smell of dinner ready to eat.
I use crock pot liners, it makes cleanup much easier.

1 bone in pork roast 2 tall cans of beer 1 bay leaf BBQ sauce
combine all in crock pot - set on low for about 8 hours remove roast and throw out juice - (do not put down drain-could cause clog) let stand for 30 minutes (juices will redistribute) shred with fork put meat back in crockpot and cover in BBQ sauce for about 1 hour
Enjoy!! | |
