| Easy Italian Chicken Posted: 8/12/2008 3:16:47 PM | Boneless Skinless Chicken Breast Italian Dressing Season Salt Grated parmesan cheese
Rinse chicken and put in baking dish. Pour bottle of italian dressing over chicken until it is submerged. Add season salt to taste. Cook in 350 degree oven for approximately an hour or until chicken is done depending on size of breasts. If you'd like, put parmesan cheese on top when finished. Very easy and VERY good! Goes great with garlic bread or cheese bread, mashed potatoes, and a vegetable.
Anyone else has chicken recipes feel free to share chicken is my favorite!

| Easy Italian Chicken Posted: 9/26/2008 9:37:56 PM | This is one of the easiest chicken recipes I know, and mighty tasty.
Chicken Thighs or Drumsticks ( I like it bone in and with skin) 1 Carrot 1 Celery 1 onion 4 lemons 5 springs of thyme 5 sprigs of rosemary 3 cloves of garlic 1/2 cup of white wine Kosher Salt to taste 1/2 cup Olive Oil (doesnt have to be extra virgin)
Preheat the oven at 450 degrees.
Slice the lemons into circles, and cut the vegetables very coarsely. Place the lemon slices, vegetables, garlic onto a sheet pan and drizzle with the olive oil. Season the thighs or drumsticks on both side with salt and pepper and place it skin side up on the vegetables. Place the herbs all over, on top of the chicken, the side it really doesnt matter. Pour the white wine so theres just enough liquid on the bottom and toss it in the oven.
Depending on the size of the chicken, it should take about 30-40 minutes. The chicken juices would be absorbed by the vegetables and that white wine you used in the beginning will emulsify with the olive oil and turning into a sauce. When your all done, you would have perfectly roasted chicken, roasted vegetables and sauce all in one pan. You can use any good baking vegetables too. Potatoes, winter squash or even sweet potatoes work really well.
Restaurants do this all the time with chicken and make great money off it. Its cheap, and tasty. Plus it's one pan.

| Easy Italian Chicken Posted: 9/27/2008 5:32:05 AM | | Reba....sounds good but I use Rosemary Olive Oil and a small amount of Balsalmic Vinegar instead of all the dressing, so the chicken does no cook from acidity before it makes it to the grill or oven!!! 10 minutes before it is done, I add thin slices of tomato and goat cheese on top, just long enough melt it. It comes out VERY tender and I eat it will egg plant or any veggie (no starch.) :) | |

Thanks Paul, may you rest in peace!!!!!
I like the addition of celery and tomatoes with some Parm cheese.
Hmmm, I think that I know what I am making tonight...

| Easy Italian Chicken Posted: 7/3/2009 7:08:06 PM | This is one of my favorites, Ive never used the parmesan cheese though, Ill try that next time. Thanx.
I have found that the zesty Italian, makes a stronger flavor, this is good to me. Found if one takes the excess Italian in bottom of pan and put in bowl for dipping chicken on the table.
