| EZ BBQ ribs falling off the bone Posted: 9/1/2008 6:50:05 AM | Here is a method for ribs from a Detroit rib joint!! So easy, yet the ribs come out falling off the bone, moist meat, finger lickin' good!
Baby back ribs, remove the skin on the underside of the ribs
Place in a deep baking pan, pour 1/2 can Coca cola over the ribs, cover with aluminum foil with vent slits.
Bake at 325 to 350 degrees for 2 hrs, remove and drain off liquid, apply sauce and return to oven for 15 min more, uncovered.
Best and easiest way to make ribs, great for football season!!

| EZ BBQ ribs falling off the bone Posted: 9/1/2008 7:14:38 AM | Bless you, this sounds wonderful! I am a good cook but for some reason I have "steered" away from making ribs. Tried making them a long time ago and had a complicated recipe and felt it was too much work for the results.
I am really excited to try this! How thoughtful of you to share : ) Thanks!

| EZ BBQ ribs falling off the bone Posted: 9/1/2008 8:06:32 AM | That sounds really easy and yummy, too! So, the soda is a tenderizer, or is it just the slow cookin'?
I've always boiled mine in a really big pot until it produces broth, drained off most of the broth and then added my sauce and cooked until very tender...hours. Then I place them in the oven to brown them, or on the grill, and they are really quite awesome!
Every now and again, I'll use my crock pot, but they literally fall apart and you end up with "pulled" BBQ that is only fit for sandwiches.

I like a sweet BBQ sauce and a favorite is "Sweet Baby Rays" but I also sprinkle brown sugar on after the sauce is on and then stick it into the oven for the last 15 min.....your family and friends will rave about this!

| EZ BBQ ribs falling off the bone Posted: 9/1/2008 7:37:34 PM | | ...There have been 13 previous threads started on how to cook ribs. There are a thousand different ways to cook ribs..and most of them are pretty good. This recipe focus's on the use of the fructose and water in the soda. It's a fairly common idea, even though some people don't believe you should "steam" ribs...They're really proud of their BBQ talents. If you want to vary this recipe..you can actually dry rub the outside of the ribs...stick them in a piece of foil with a piece of ice for moisture..and seal them up...then cook them for 2.5 hours at 300 degrees before whipping them onto a broiler pan or the grill for the saucing and carmelizing... | |

| EZ BBQ ribs falling off the bone Posted: 9/1/2008 8:08:36 PM | | there is also the tenderizing ability of the Coke to consider, not just the sugar and water combination, it has been said that Coke will degrease your cement driveway,,,,go figure! | |

it has been said that Coke will degrease your cement driveway,,,,go figure!
That's what makes it scary that people drink it. Imagine what it will do to your insides!

| EZ BBQ ribs falling off the bone Posted: 9/2/2008 12:14:08 AM | I made awesome ribs today on my Traeger pellet-fired grill
The Traeger is actually a wood-fired convection oven in that it uses indirect heat to cook with, it has a firebox in the bottom of it that burns the pellets, and a forced air fan that keeps the air circulating in the firebox, and also circulates it up to the cooking grate. You get the genuine wood flavors and smoke, but with even controlled heat like an oven. Food cooked in these things is just amazing, tender juicy, never burned even on the bottom. Gas and charcoal cannot EVEN touch this thing...
It also has a slanted "grease tray" that sits under the cooking grate which catches the grease and guides it out the side of the grill into a small bucket. Oven methods don't have the ability to drain off the fat like grilling does.
baby backs ($2.99/lb oh yeah!) sprinkle both bottom and top with the following in order:
Basil Cinnamon Curry powder Cayenne pepper
Grill for 2.5hrs @ 280-300F test with toothpick it should go through meat easily. If you want them falling apart, cook another 30-45 mins.
I combine 50% Kraft original, 25% Kraft thick and spicy, 25% Kraft hickory smoke and brush on thickly, cut heat down to 180F and cook until sauce is caramelized.
Got away from using rubs, they are all just too salty, nothing added to the sauce, you could use the same seasonings and sauce in tin foil in the oven.

| EZ BBQ ribs falling off the bone Posted: 9/4/2008 8:49:02 AM | | ..Right..Coke has Phosphoric acid added to it...That's the same acid they use in Naval Jelly to remove rust...so you're darn tootin' it will probably help tenderize the rib. | |
|
| EZ BBQ ribs falling off the bone Posted: 9/4/2008 9:11:51 AM | Hmmm...the pH of stomach acid is about 1 - 2 I believe, so coke won't do much.
So you're brazing the ribs? Almost?
|
| EZ BBQ ribs falling off the bone Posted: 9/4/2008 11:39:00 AM | | No, it more like baking them although they will get browned on top. You will be surprised how tender and most they become, literally can pull the bones out clean! | |
|
| EZ BBQ ribs falling off the bone Posted: 9/4/2008 12:46:25 PM | | ..I'm not sure I can go into the probability of phosphoric acid acting on a piece of tissue any more...it's been 30 years since my last Chemistry class..LOL. But I do know that to have a reaction between two compounds...a fairly precise set of conditions have to be met. Whether Phosphoric Acid will react with a stomach lining is beyond my capabilities any more...LOL. | |

| EZ BBQ ribs falling off the bone Posted: 9/4/2008 1:08:09 PM | I normamally slow cook my ribs on a gas grill. They come out perfect when I am by myself but usually when I have company someone is always running late and I end up keep the ribs on just a little to long to keep them hot. I will try this, it should save a lot of headaches.
If any of you do the beer can in the chickens but, try using coke for that to. I think it changes the flavor a little
|
| EZ BBQ ribs falling off the bone Posted: 9/4/2008 1:25:22 PM | | Vinny...the beauty of this method...is the ability to hold those ribs until the last minute to sauce them. The moist heat keeps them tender...so tender in fact..that at times they'll fall apart if you try to handle them too much. I usually grab two tongs..and reach into the ribs from opposite ends to support the entire thing when placing them on a rack for saucing and carmelizing....but the OP just goes ahead and does it in the same pan.....limiting the risk of the ribs falling apart. | |
