| Cherry Tomatoes Stuffed with Guacamole

1 clove of garlic, peeled
1/2 teaspoon salt
1 large ripe avocado
fresh lime juice
Small coin sized corn chips
Slice tops off cherry tomatoes and scoop out insides. Reserve 1/2 cup of the pulp and discard the rest.
With a fork, mash clove of garlic with the salt to make paste. Mash the ripe avocado until smooth. Add the garlic mixture. Add the tomato pulp to the mashed avocado. Add a little lime juice.
Stuff the cherry tomatoes with this mixture. These can be chilled for a hour or so. When ready to serve, stick a corn chip in the guacamole in each tomato. | |

But these sound scrumptious!!!
I am going to definitely try these out and they also sound like great party snacks.

or melt some jack on a triscuit and top with tomato, or cold triscuit with cherrytom with goat cheese
or a piece of thick cut bacon / ham on the triscit, w/ cherry tom and cheese
now Im hungry

Posted: 7/19/2009 9:06:09 PM | SAguy meant to say great idea you had ~ n wanted to state to stuff small mini poivrons peppers-red- orange n yellow peppers with guacamole.. Don't know what I did when posting=Darn
Anyhow - wash n de-seed "mini poivrons peppers " from Costco -stuff them with guacamole -topped with sliced black olives on top with a few diced Roma or Plum tomatoes diced fine- chill...You have crunch n flavor all at once.
Like these peppers cause they are not hot but colorful - small -crunchy- n can be used in many dishes...they were good stuffed with egg salad n in salads -sauteed with fish n many meats.. | |

These sound very tasty, BT. Bit fussy to make, but worth it, in my opinion. Nice little canapé for a party.
Just a variation on a theme, if I may ... dunno if they're available where you are, but here we have tortilla chips called "Scoops" ... seems perfect as a serving vehicle for your recipe ... stick a stuffed cherry tomato in a scoop instead of a tortilla chip in the tomato. | |
