| Squirrel and Rabbit recipes? Posted: 2/7/2009 7:26:39 AM | I have 5 Squirrels in the freezer. Red, Fox and Gray. Each one has its own taste. I like BBQ and spicy. So I was wondering if there are any real men left who still hunt and fish that might have a good recipe?

In my experience , there's no such thing as a tender squirrel . Too acrobatic .... Long & slow-cooked is the ticket .
Rabbit is another story . "Spread-eagled" on a sheet pan , brushed *lightly* w/ BBQ sauce , wrapped in foil , 325° for about an hour and a half , uncover , brush again , 10 minutes uncovered , done . | |

Stew was all I ever made with the squirrel, it's good too. Rabbit, I have no idea,, where I grew up there were mostly jack rabbits, my Dad always said they weren't good to eat,,, I don't know, maybe he just didn't like rabbit. I have used lots of domestic rabbit tho,, I like it fried, the same way as I would chicken. I think it's great, wish that's what we were having for dinner.

I saw my first black/ grey squirl when I was in St Louis last year...too cute to shoot.

Posted: 2/7/2009 9:58:28 AM | vf 102 i ran into the same problem last winter . i am an avid hunter but i never hunted the little critters and i had 4 dropped at my door by a buddy so rather than insult him i kept them. what i did was i put them in a large pot with salt water and brought to a boil,turned down to simmer and simmered appx 4 hours. let cool and strip all bones and junk from meat. in frying pan put oil and fry onion green peppers portabella mushrooms and cellery till still crispy but cooked.use spoon with holes and take veggies from pan and keep(i put in a bowl) mix some flour and cold water and make a runny gravy with the goodies left in the fry pan. strain the water you boiled the squirrels in and put in a stock pot add enough water to bring level 2/3 of the pot.add appx 1/2 head cabbage shredded real small and about 1 cup potatos cut real small boil this till cabbaga and taters disolve then add the gravy and the veggies and ripped up squirrel meat and carrots and potatoes and celery and onion , season with pepper and old bay then just cook till potatoes and carrots are tender. make some bisquts and eat. sounds like alot of work but its really not and my kids tore it up .

Posted: 2/7/2009 11:03:03 AM | | i love both fried........simmer in salted water with a stalk or 2 of celery.....when done...pat dry.......shake in a bag of four to coat.salt and pepper and fry slowly in bacon fat till nicely browned......delicious...........older rabbits.add an onion to the water..sometimes they have a strong gamey taste.......you can also make potpie or stew with either................just remember to discard the water from the rabbits | |

I have this interesting recipe from an old Pennsylvania Dutch Cookbook......
Squirrel Pot Pie
1 squirrel 3 cups sifted flour 1/4 cup shortening 1 cup sliced potatoes 1 tbspn chopped parsley 3 tbspns butter 1 cup water
Boil squirrel only till tender, remove from broth.
Mix flour, salt and shortening then add water to make dough. Roll out very thin (1/8") and cut into 2" squares and drop into the boiling broth(about 2 quarts) add potatoes and parsley, 1 tbspn salt and 'copious' amounts of black pepper(their wording!). Boil for 1/2 hour.
Roll pieces of the squirrel in flour and brown in the butter, remove meat from the pan then deglaze the frying pan with 1 cup of water. Add liquid to pot pie and boil just a few mins before serving with the squirrel.
The notes say that this is more of a 'boiled' pie, perhaps it can be adapted for chicken etc and maybe some added ingredients may help the flavour as this seems a little bland but for the 'copious' amounts of black pepper used. Maybe some curry powder or chili powder would work? | |

Fried rabbit on the grill cooked slow with garlic granular-onion powder -salt n pepper with dash of cayenne pepper mixed with melted butter right at the end. | |

1 (2-3 lb.) rabbit Celery tops 1 med. chopped onion 2 tbsp. butter 1 garlic clove, chopped 1/2 c. chopped celery 3/4 c. water 1/4 c. dry wine 1 c. ketchup 2 tbsp. vinegar 2 tbsp. Worcestershire sauce 2 tbsp. brown sugar 1 tsp. dry mustard 1 tsp. salt 1/4 tsp. pepper
Cut cleaned rabbit into serving pieces, boil with celery tops for 30 minutes. Remove rabbit from water and let stand a few minutes. Cook onion in water until browned, then add remaining ingredients and cook for 20 minutes. Add rabbit and simmer slowly for 1 hour. Serve hot. 4 servings. | |

Heh...no, seriously, I have no clue about those lil' guys. Where I came from, all we had were ground squirrels and I'd always heard they carried lots of bad things. I cant get that thought out of my head, and wont eat the regular tree dewlling sort.
As for bunnie, anything that's worked for chicken has been great for me!! If you know a breading/frying method you love for some chicken quarters, you'll probably love it with rabbit!! | |

Posted: 2/8/2009 5:18:02 PM | | this is my personal favorite boil squirrels till tender or as close as you can get them pull all meat from the bone line a casserole dish with about 1 inch or so mashed potatoes set aside mix your squirrel with one bag frozen mixed veggies ad two cans of condenced cream of mushroom soup mix all that together in a pot get good and hot and pour into casserol dish top with those little tube buiscuts bake till biscuits are golden brown yummy enjoy rabbit can also be fixed this way and is very good | |

Posted: 4/17/2009 5:20:09 PM | i am a seasoned hunter, well mind you it is my job, i love rabbit and much better for you than chicken. i also like tree rats too , i have lots of my own recipes for alsorts of wild caught food. i have also tried many other things. due to the credit crunch that is going on in the world many people are cutting down on the spending. one of the most epencive thing to put on the table is the meat. i have noticed people are starting to try wild caught meat and liking it.  | |

Very good combo. If you are not a fan of tomato sauces, instead of the tomato products, add 3 cans of cream of celery and 1 can of cream of mushroom for the last 45 minutes. | |

I never did understand why there's such a knee jerk reaction to "omg, you've eaten rabbit?! but they're so CUTE!" as someone's stuffing their face with a hamburger. You don't think that cow was cute at some point? True hunters are respectful of their game and appreciate the food nature has provided for us.
I'd rather eat wild game that I've (or someone I know) shot than store bought meat any day. Ever see the inside of a slaughter house? Hunting pales in comparison. | |

I'll gut and skin a deer no friggin problem..
Any who, I like to do a rabbit stew, Much like a chicken, Debone and add your stew stuff, Slow cooker work's well.
Most squirrels at the cottage are red, pretty small so I've never bothered.. Ordorves maybe?? | |

Posted: 6/15/2009 6:32:33 PM | Bang the rabbit for 10 mins with a tenderizer then hard boil for 10 mins now be-bone or de-leg chuck rabbit in oven dish pour over a good quality cider chuck in 2 chopped carrots 1 large chopped potato herbs onion stick in oven gas mark 4 for 1 1/2 hours check cider level periodicaly
