Pecan Rice
3/4 lbs. sliced, fresh mushrooms 1/2 cup shallots, minced 2/3 cup butter 1 1/3 cups uncooked brown rice 1 tsp. dried thyme (optional) 1 cup chopped pecans, toasted 4 cups chicken broth Whole toasted pecans Parsley
Preheat ove to 375 degrees In a Dutch oven, saute mushrooms and shallots in butter 5 to 7 minutes or until golden.
Stir in rice. Cook, stirring with woooden spoon, approximately 3 minutes or until rice is hot.
Season with thyme, salt and pepper. Stir in chopped pecans and chicken broth. Heat to boiling. Remove from heat
Cover and bake approximately 1 1/2 hrs. or until liquid is absorbed and rice is tender. Garnish with whole pecans and chopped parsley.
I have a friend who says this is equally good done with walnuts and much less expensive, but I've always prepared it with pecans. | |

BTW the mashed potatoes are fat free!
Cube potatoes either peeled or not, your preference Boil in water with a couple of chicken boullion cubes When soft, pour most of the water off Mash then add 8 oz fat free sour cream, some black pepper and dried dill weed and mix thoroughly | |
