also, what dish do you seem to cook more than any other...Oatmeal doesnt count.

Good idea. Without much thought because it is early in the morning, for me, it would be Mac n' Cheese. Fairly simple I know but then again, awesome dish.

a spinach-mushroom rotollo as an appetizer. then, i make 'chicken in a dark and mysterious sauce,' accompanied by steamed green beans and a tossed salad, followed by my flourless chocolate torte for dessert. a nice merlot complements all the dishes quite well.

Baked stuffed lobster with crabmeat stuffing, although it takes awhile to prepare.
I enjoying baking rich chocolate desserts but try not to eat them!
I cook a lot of Thai food, pai Thai, curries

...I don't know if it's my "signature" dish...but more people have had a taste of my whole roasted hog than anything else I've ever cooked...and believe me..they always remember how good it is..

I'm delighted to share.

Pecan Rice

3/4 lbs. sliced, fresh mushrooms
1/2 cup shallots, minced
2/3 cup butter
1 1/3 cups uncooked brown rice
1 tsp. dried thyme (optional)
1 cup chopped pecans, toasted
4 cups chicken broth
Whole toasted pecans
Parsley

Preheat ove to 375 degrees
In a Dutch oven, saute mushrooms and shallots in butter 5 to 7 minutes or until golden.

Stir in rice. Cook, stirring with woooden spoon, approximately 3 minutes or until rice is hot.

Season with thyme, salt and pepper. Stir in chopped pecans and chicken broth. Heat to boiling. Remove from heat

Cover and bake approximately 1 1/2 hrs. or until liquid is absorbed and rice is tender. Garnish with whole pecans and chopped parsley.

I have a friend who says this is equally good done with walnuts and much less expensive, but I've always prepared it with pecans.

My Italian chicken with pasta, my fried chicken and my homemade chicken noodle soup.

They love my collard greens,and my turnip salad and my homemade mashed potatoes as well.

If I invite a guy over for dinner I usually fix meatloaf, mashed potatoes and fried okra. They usually ask me to marry them right after dinner

BTW the mashed potatoes are fat free!

Cube potatoes either peeled or not, your preference
Boil in water with a couple of chicken boullion cubes
When soft, pour most of the water off
Mash then add 8 oz fat free sour cream, some black pepper and dried dill weed and mix thoroughly

Skirt steak w/chimichurri sauce. And I usually accompany it with a variety of side items: garlic mashed potatoes, scallop potatoes, or borracho/charro beans. I'll also start out with a shrimp or lobster & avacodo salad that I serve in martini glasses - kind of a surf & turf theme I guess.
