I am newly vegetarian and I was wondering if anyone had a favorite veg recipe to share? I've been looking in cook books and online but it's always fun to get suggestions from other people! So anywho, let's share some yummy recipes!

ZITI WITH SUN-DRIED TOMATOES WITH MOZZARELLA
2 c. ziti
1 c. chopped tomatoes
1/4 c. olive oil
1 tbsp. red wine vinegar
1/4 tsp. salt
1/4 tsp. pepper
1 clove crushed garlic
1/4 tsp. oregano
8 oz. Mozzarella, diced
6 sun-dried tomatoes, minced
2 tbsp. chopped basil

Serves 4. Cook pasta. In large bowl, combine tomatoes, oil, vinegar, salt, pepper, garlic and oregano. Add pasta, Mozzarella, sun-dried tomatoes and basil. Toss to blend.


CURRIED WINTER SQUASH BISQUE
2 tbsp. butter
6 scallions, finely chopped
1 clove garlic, minced
1 sm. green pepper, finely chopped
1/4 c. fresh parsley, chopped
2 tsp. chopped fresh basil or 1/2
tsp. dried
2 lbs. butternut squash, peeled,
seeded, cubed
1 can (14 oz.) plum tomatoes
4 c. broth
1/2 tsp. ground allspice
1/4 tsp. ground mace
Pinch of fresh grated nutmeg
2 tsp. curry powder
Salt & pepper
1 c. of milk (optional)

1. Melt butter in a large saucepan over medium low heat. Add scallions. Cook 2 minutes. 2. Add garlic, green pepper, parsley and basil. Cook 5 minutes, stirring occasionally. 3. Add squash, toss to coat. Add tomatoes and broth, allspice, mace and nutmeg. Heat to boiling. Reduce heat. Simmer covered 1 hour or until vegetables are soft. Remove ham bone. 4. Puree soup in batches in a blender, being careful - hot liquid will expand. Stir in curry powder and milk, if desired. Serves 6 to 8.

My daughter announced one day that she was hence-forth a vegetarian (10 at the time). I thought, OK, I'm game - we'll see how long this lasts (about 3 months, I was impressed). During that time, I came up with some pretty interesting veg dishes. I even got her to eat Tofu! Here's the trick:
First, freeze and thaw a block of firm tofu. It gives it a more 'meatlike' texture.
Slice about 1/3 inch thick. Marinate in teriaky sauce (if you don't have premade try mixing up: soy sauce, bit of sugar, powdered ginger, garlic powder, white wine or vermouth, and some veg oil - not olive oil)
allow to marinate for a half hour or so. Fry up on high heat (will crisp edges) and substitute for the beef in pepper steak (you can't cook the peppers and onions with the tofu, it will fall apart - you have to do it separately in oil): stir fry onions and peppers - (I add waterchestnuts) - and make a brown sauce with the teriaky sauce a bit of water and cornstarch (shake up a tablespoon of cornstarch with water to thicken the sauce)

OP There are many shades of vegetarian...do you eat dairy and eggs? Or is it just animal flesh you dont eat? Also do you eat seafood? I was a vegetarian (Macorbiotic and also ovo/lacto) for about 7 years and I have alot of great recipes....

There are 5 levels of vegetarianism.
Lacto vegetarian: dairy, no eggs.
Ovo vegetaran: Eggs, no dairy.
Lacto-ovo vegetarian: Eggs and dairy.
Strict vegetarian: Plant-based diet. No animal products. No meat, no eggs, no dairy, no honey. Essentially, a vegan DIET, which is not the same thing as being vegan.
Vegan: Strictly plant based diet (as above) but extends to other areas of lifestyle. Avoiding animal products in consumables (beeswax, lanolin, wool, silk, pearls, suede, leather, blahblahblah so on and so forth.) Vegans do not eat, wear, or use animals to the best of their ability. They avoid animal testing, traditional zoos, circuses, and anything else that exploits animals for food, clothing, or entertainment.

*a little extra: "vegan" was coined by Donald Watson in 1944 because he was annoyed that people took it upon themselves to consider eggs and dairy vegetables and thusly made them part of a vegetarian diet. Vegan was formed by taking the first 3 letters and the last 2 letters of "vegetarian" symbolizing that veganism should be the beginning and the end of every vegetarian journey. ;) The more you know...

I am NOT a vegetarian, but I do make this on a regualr basis: 2 or 3 Eggs, Mushrooms, Cherry Tomatoes, Spaghetti Squash (cooked), Scallions, Green Peppers, 2 Strawberries, 12 Blueberries, and you have an awesome Omelette with only 5 carbs in it!!! I also use non stick spray, to avoid all the fat in the butter. If anyone wants any LOW CARB recipies, e mail me. I have a lot!!!! Once in a while I will throw in half a cup of real Crab Meat too...YUMMY!!!

I have an entire cookbook on Vegan cooking, so i have LOTS of recipes/suggestions. I do realize that Vegetarian and Vegan are two different things, but it's a start at least.

Grilled Portabella Mushrooms

Easy Marinade

1 cup Zesty Italian dressing
4 tablespoons lemon juice (fresh is best but Real Lemon works.)
3 large minced garlic cloves
1 tablespoon lemon pepper
1 teaspoon salt

Clean and rinse mushrooms, 1 per person depending on size of mushrooms and size of person. Marinade recipe is for 6-8. Refrigerate for one hour. Grill on a medium hot BBQ 4-5 minutes per side.

Serve smothered in sauteed onions, peppers, and your favorite cheeses on a grilled kaiser roll.

Or...serve on a steaming bed of pasta with spaghetti sauce. Have a Caesar salad and garlic bread on the side.

Flourless Quiche...
4 eggs
4 rashers bacon
1-2 cups tasty cheese
1/2 cup s.r. flour
1-1/2 cups milk
1 onion
sprinkle parsley on top.
4 mushrooms, depending on size,

cut./chop up bacon & mushrooms & onion into pieces
combine all ingredients, add beaten eggs and pour into greased casserole dish
cook 50 mins 200 degrees..

Enjoy!!

Baigan Achari ( aubergine curry)

This a yummy recipe - not as complicated as it looks - great as a main course or side dish , aubergines are really meaty and I have made this loads of times just served with rice its delicious.

1 inch cube of fresh ginger, coarsely chopped
6 large cloves garlic, peeled
2 fl ozs (55ml) water
13/4 lbs aubergines
2 fl ozs water
about 12 fl oz (350ml) vegetable oil
1 teaspoon whole fennel seeds
1/2 teaspoon kalonji seeds (black onion seeds)
3/4 lb (350g) tomatoes, peeled and finely chopped
1 tablespoon ground coriander seeds
1/4 teaspoon ground turmeric
One third teaspoon cayenne (more if you like)
about 1.25 teaspoons salt

put ginger and garlic in liquidizer with 2 fl oz water. Blend until fairly smooth.

cut aubergine into slices or wedges that are 2cm thick by about 4-5cms long.

set a large sieve over a bowl.

heat 4 fl ozs (125ml) of oil in a deep, 10-12 inch (25-30cm) frying pan or saucepan over medium flame. When hot, put in as may aubergine slices as the pan will hold in a single layer. Let them turn a reddish-brown colour. Turn them over and brown the other side. Remove browned slices and put in sieve (to drain off oil). Add another 125ml of oil to the pan, heat it, then brown second batch of aubergine slices. You will probably need to do three batches, adding fresh oil to the pan each time.

now, turn off heat under pan, and leave aubergine to drain for about an hour.

put 3 tablespoons of oil in the frying pan and heat over medium flame. When hot, put in fennel seeds and kalonji. As soon as the fennel seeds turn a few shades darker (this takes a few seconds), add chopped tomato, ginger-and-garlic mixture, coriander, turmeric, cayenne and salt. Stir and cook for 5-6 mins, breaking tomato pieces with back of spoon. Turn heat up slightly, and continue to stir and cook until the spice mixture becomes thick and paste-like.

now, put in the fried aubergine slices and mix gently. Cook on medium-low heat for another 5-10 mins if you think it is necessary.

use a slotted spoon to lift the aubergine out (leaving any residual oil behind).

OP...a lot of italian dishes could be considered "vegetarian"...pasta sauce...both tomato based and alfredo dont neccessarily have to contain meat...a lot however do contain cheese...
do you not eat any animal things like eggs, cheese or milk?...can you eat fish?...or do you just not eat meat?...i went meatless(by choice) for about a week once...i was not a nice person to be around that week

I make this all the time, and it's DELICIOUS!!!

General Tao's Tofu

Ingredients (use vegan versions):

1 box of firm tofu
egg substitute for 1 egg
3/4 cup cornstarch
vegetable oil for frying
3 chopped green onions
1 Tablespoon minced ginger
1 Tablespoon minced garlic
2/3 cup vegetable stock
2 Tablespoons soy sauce
4 Tablespoons sugar
red pepper to taste
1 Tablespoon sherry (optional)
1 Tablespoon white vinegar
steamed broccoli

Directions:

Drain, dry and cut tofu into 1 inch chunks. You can freeze tofu the night before to get a more chicken-like consistency, but it isn't necessary. Mix the egg replacer as specified on the box and add an additional 3 tablespoons water. Dip tofu in egg replacer/water mixture and coat completely. Sprinkle 3/4 cup cornstarch over tofu and coat completely. Watch out that the cornstarch doesn't clump up at the bottom of the bowl.

Heat oil in pan and fry tofu pieces until golden. Drain oil.

Heat 3 Tablespoons vegetable oil in pan on medium heat. Add green onions, ginger and garlic, cook for about 2 minutes. Be careful not to burn garlic. Add vegetable stock, soy sauce, sugar, red pepper and vinegar. Mix 2 Tablespoons water with 1 Tablespoon cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly.

Serve immediately with steamed broccoli over your choice of rice.

Serves: 4

or baked summer stuffed squashes with other veggies n marinara sauce

Spaghetti squash.. many casseroles with fish.

Bruschette with different toppings

Mashed Broccoli /Cauliflower - garlic- seasonings mashed n than baked with toped with crackers

Birds nest cut julienne style with egg whites n fried

Barley casserole with V-8 -celery-peppers -garlic-onions--vegetable broth- pepper to taste n top at the end with toasted pine nuts-

Southwestern Macaroni
2 T. soft butter
2 c. milk
1½ c. Cheddar or Jack cheese cubed
2 c. macaroni dry uncooked
¾ tsp. garlic granular
1/2 tsp. salt
3 T. green chilies chopped
2 eggs beaten
2 T. butter melted
1/2 c. bread crumbs

Preheat oven 350°F. Mix all ingredients except butter - bread crumbs.

Put into casserole dish. Sprinkle with crumbs mixed with butter. Bake 40 to 50 minutes

Potato salads or casseroles

~Tomato Rice Cajun
by teacake
2 T. butter
2 T. olive oil
1 onion small chopped fine
1 c. long grain brown rice
1) 8 oz. Tomato sauce
salt ñ pepper to taste
2 c. chicken broth

In skillet- melt butter- add oil- sauté onion until transparent. Add rice – sauté - just until rice begins to turn opaque ñ little browner . Remove from fire- add tomato sauce- salt- pepper ñ chicken broth. Stir well - pour into covered casserole bake 45 minutes 350° F oven. "Do not stir". Remove from oven- fluff ñ serve.

Note~ add raw- peeled - deveined shrimp to dish before putting in oven for an easy shrimps with rice ñ substituted clam juice for chicken broth.

Calazones with favortie veggies stuffed inside with a white sauce n baked.

Sweet potato n yam casseroles

Vegetable soup with dumplings or Blackberry dumplings

Pierogies with onion n mashed potatoes

Seconding the ppk and veganlunchbox cooking blogs.

Some staples in my vegetarian kitchen are brown rice, garbanzos (chickpeas), black & red beans, and TVP. I always have a tub of hummus in the fridge (so easy to make) to eat a million different ways (smear on wraps for veggie sandwiches) and I make brown rice w/beans or garbanzos a couple of times a week. Rice&beans are easy to dress up with whatever veggies or sauces you have on hand.

MMmm, a lot of the recipes here looks really good. I personally love the fried firm tofu mixed with pea pods, bamboo, and thin sliced carrots. Fry with veggie oil and stir in some soy sauce (low sodium version).

According to my taste, I like frying them in garlic, a hint of ginger, and green onions (chopped).

Make some steam rice off to the side and you have an awesome dish!!! I had that the other day and thought I might share it with everyone. Healthy, low sodium, no MSG, hehe. If you like, you may add some brown sugar and corn starch, but now you're going a little overboard on nice healthy plate.

mock tuna salad

1 (19 ounce) can garbanzo beans, drained and mashed
2 tablespoons mayonnaise
2 teaspoons spicy brown mustard
1 tablespoon sweet pickle relish
2 green onions, chopped
salt and pepper to taste

In a medium bowl, combine garbanzo beans, mayonnaise, mustard, relish, chopped green onions, salt and pepper. Mix well.

SAguy, actually there are 8 different types of vegetarians - and I'm damn sure my youngest went out with one from each group - makes for interesting dinners to say the least.

A vegetarian who eats fish and poultry is a combination pesco/pollo vegetarian.

Sure enough there are different types of vegetarians that have different eating habits, reasons, and beliefs for becoming a vegetarian, each one special in their own way. But where they differ, they all share one thing in common. They don't like eating meat. Lets take a look at some of the different types of vegetarians.

1) Vegan - Vegans eat only plant food. They eat no flesh, eggs and no dairy products. Some may eat honey but many others choose not.

2) Lacto - Lacto vegetarians eat no flesh of any kind. Their diet consists of fruit, vegetables, and some dairy products (Mainly vegetarian cheese).

3) Lacto-Ovo - They eat the same things as Lacto vegetarians except they also eat eggs.

4) Religious - These people are vegetarian because of their belief and faith in their religion.

5) Fruitarians - Fruitarians eat only fruits and seeds (This includes the fruits of the vegetables such as tomatoes and courgettes). However they don't eat roots of plants such as carrots and potatoes.

6) Pesco Vegetarians - Peso vegetarians eat fish but no other meat.

7) Pollo Vegetarians - Pollo Vegetarians eat poultry but no other meat.

8) Semi Vegetarians - Semi Vegetarians don't eat pork or beef or any red meat.

Hmmm it depends are you the kind of vegetarian who will still eat seafood and dairy products or the kind that doesn't indulge in any animal products. just in case heres one of my favorite recipes.

Seafood bisque
1/2 a gallon of half and half
1/2 gallon of heavy cream
Worcestershire sauce 3 tablespoons
shrimp lobster or any kind of seafood you would want to put in it
you let it cook for 30 minutes or until thicken on low or med.

Trust me its delicious, especially with some Italian bread.

Did I read that correctly? 1/2 a gallon of heavy cream? It sounds delicious, but should probably just directly apply it directly to my hips?

I have determined I am a semi-vegitarian. I can't say enough about the Yves veggie ground round. I use it for spag. sauce, taco's and taco salad... burritos. No one knows the difference. My daughter is a vegitarian, since 9.... I however waver. It has made cooking a challenge in some ways.

My love of animals was a factor, but determined not to say hamburgers came from the hamburger tree.......as my mom did.

hi...

i suggest do not encourage her being vegetarian.....its her period of growth spurt and she needs more proteins..especially animal proteins...

am vegetarian myself.....been since 5 years....for some other reasons....

tell her it s not wrong eating meat....its natural....and a natural instinct for humans as well.....

yes being veggie has its advantages.....but i strongly recommend eating meat...especially i find english cusine has very little (nutrient wise) to offer in veg dishes....

does she eat egg.....its better if she eats egg atleast..they are vegetarian eggss...no life in it..its jus ovum..
