| High protein salads Posted: 5/25/2009 8:00:36 PM | I made this one last year to try and lose weight, and it seemed to work well. It helped my protein cravings, so that I'd eat this, instead of hitting McDonalds after work for a meat protein fix.
1/2 regular iceberg lettuce Morning Star or Boca veggie crumbles (I use about a third of the bag for one salad) Kidney beans (I use about half a can for one salad) carrots (I prefer the kind that are shredded) cherry tomatoes French dressing (whichever type you prefer)
I cut up the lettuce, then heat up the crumbles and kidney beans. The cherry tomatoes and shredded carrots add a nice texture, while the French dressing adds some sweetness to the kidney and veggie crumble flavor. The veggie crumbles and kidney beans add a nice amount of protein to your daily diet. This is a good high fiber salad too.
