So far all I know is I'm going to try the honey baked pears with raspberries that thecatsmeoww posted, and a recipe for sliced strawberries with Grand Marnier.

Posted: 6/28/2009 2:37:21 PM | Bringing a salad of some kind ( most likely my famous cold veggie salad maybe a pea salad also) as I've been invited to a get together at a friends house. Understand they have watermelons, a Turkey and 2 hens to smoke in addition to stuff going on the grill. Not sure what other people are brining! | |

The river is cool and they are going to be packed...and the 4th falls on the weekend...

Due to 24 days of rain in the month of June and more rain predicted thru Sunday , we're kind of going with the flo here in Maine. Maybe try a BBQ of some sort, and my moms carrot cake with cream cheese frosting as it is a friends birthday. | |

I plan to make bbq ribs (Adam's ribs they're called, ya boil them in Dr. Pepper, before BBQ'ing)...BBQ chicken, macaroni salad, a corn salad recipe I found, cherry pie and blueberry dump cake..just because of the colors..I'll probably do the red white and blue jello cups for the kids.....I have no idea what the others are bringing, but my bet would be along the lines of hotdogs and burgers, slaw and all the trimmings..so far this week has been a little more pleasant than last week as far as temps, so hopefully it will hold out till the weekend... | |

| 4th of July, 2009 - what will you be serving? Posted: 7/2/2009 10:51:11 AM | Blueberry Lemon Squares
Crust 1 cup butter softened 1 cup powdered sugar 1 teaspoon vanilla extract 2 cups all-purpose flour
Filling 1/2 cup granulated sugar 3 tablespoons all-purpose flour Juice and zest of 1 lemon 1/8 teaspoon salt 3 eggs 2 cups fresh or frozen unsweetened blueberries
Preheat oven 400° F. Make crust- coat 9 inch square baking dish with cooking spray. Medium bowl- use an electric mixer on low -beat together butter- powdered sugar - vanilla until fluffy. Add flour -beat just until mixture forms small crumbs. Press about 2/3rds crumb mixture evenly over bottom of baking dish. Set remaining mixture aside. Bake 12 to 15 minutes- or until lightly browned. Reduce oven 350° F. Meanwhile- start filling. Medium bowl- mix sugar- flour- lemon zest - salt. Add eggs with lemon juice- whisk until smooth. Spread blueberries in an even layer over crust. Pour filling over blueberries. Sprinkle reserved crumb mixture evenly over the top. Bake 30 to 40 minutes or until crumb topping is golden - filling is puffed. Transfer to a wire rack - let cool completely. Cut into squares.
Note~Fresh or frozen blueberries work equally well in these simple and delicious dessert bars. Once cooled- they transport well and don't need refrigeration- making them a preference for all occassionas.15 servings | |

| 4th of July, 2009 - what will you be serving? Posted: 7/2/2009 8:30:15 PM | IDK if you have kids, but I do something fun with the kids every year that is fun to make and fun to eat. This is something to do at home, but here goes. We make and eat the American flag. I put down foil or wax paper to cover an enire table. Then I cut up and wash strawberries and blueberries. The strawberries get cut dow the middle, long ways, I guess you could say, so that they lie on the table flat. Have the kids lay down a row of strawberries, a row of whipped cream, etc ...all 13 stripes, red and white. Then in the corner, you make a square of whipped cream with blueberries for stars and ENJOY! Messy and fun. Of course, this year, as with every year, we do the traditional BBQ, pasta salads, cold taco salad (if you want this recipe let me know..it is so good), macaroni salad,etc..YUM!! I love the holidays! | |

Mayan Chocolate Cream Pie 1/4 cup cornstarch 1/2 cup sugar 1/8 teaspoon salt 1 cup milk 1 cup semisweet chocolate chips 2 slightly beaten egg yolks 1 small package cream cheese 3 to 4 ounces 1 teaspoon vanilla 1 tablespoon cayenne pepper 1 tablespoon ground cinnamon 1 1/2 cups heavy cream 2 teaspoons sugar
* Note* This may be too much cayenne and cinnamon for your taste, if so, cut down on the amounts of both, equally.
In a heavy 2 quart saucepan combine cornstarch, sugar and salt. Stir in milk and blend well. Add chocolate chips, egg yolks, cayenne and cinnamon. Cook over medium heat, stirring constantly until thickened. remove from heat and mix in cream cheese and vanilla. Pour into a bowl and allow to cool completely. Whip the heavy cream and 2 teaspoons of sugar to soft peaks. Reserve one cup of whipped cream, fold the remainder into the cooled chocolate mixture. Spoon pie filling into a prepared pie crust of your choice and top with the reserved whipped cream. Refrigerate at least 6 hours or over night.

Posted: 7/3/2009 10:51:55 PM | my son and his family ... and I ... are taking food and going to my ex-husband's farm house to celebrate the 4th ... it's HOT here ... really hot ... even hotter out at his place ... I wish everyone was coming here because we could just lay around in the pool ... but it's "tradition" to do 4th of July at his house! we've been there every 4th of July since 1979!
not positive what the others are bringing besides potato salad and cupcakes!!!
but right now, I'm making a crab pasta salad ... a red, white and blue layered gelatin ... tomorrow, I'll make a cole slaw ... when I get to his house, I'll assemble and bake a blueberry cobbler ...

| 4th of July, 2009 - what will you be serving? Posted: 7/4/2009 7:07:31 AM | 4th of July picnics and traditions are so much fun! I hope you all enjoy yourselves today and I hope you all stay cool! It's rather cool here for this time of year and a beautiful breeze is blowing. It's going to be a great day for a picnic and a great night for fireworks!
I finally decided on catfish with cajun seasoning, potato salad, macaroni salad, sugar snap peas with raspberry balsamic dressing, sliced watermelon and cherries. For a treat I made some white "chocolate" dipped strawberries and decorated them with blue and red sparkle gel, so those will be for dessert. Yum!
Jesisbackagain ... I'd love that taco salad recipe, thanks!

| 4th of July, 2009 - what will you be serving? Posted: 7/6/2009 12:50:06 PM | our holiday turned out delightful ... my ex and I were the only ones who ate the crab pasta salad! (goodie, more for us!) ... the other dishes I made were very well received ...
for the blueberry cobbler, I planned to cheat by using Bisquick for the topping ... ran out of Bisquick and had to augment with a whole wheat pancake mix!!! everyone loved it! for a dessert, I just go for the fattening, artery-clogging stuff sometimes ... mixed it up with thick whipping cream ... probably thousands of calories per serving!
two of our sons with their families showed up ... we drove into town to the local high school for the fireworks displays ... great times ...

Posted: 7/13/2009 1:07:01 PM | | grilling a marinated leg of lamb boneless i open the leg of lamb lay it flat then in a bowl i put 1/2 cup key lime juice 1sp each of pepper oregano garlic powder onion powder rosmary and one tblsp of adobo,1tsp unseasoned meat tenderizer the papian kind not the msg kind, and one half cup of oil i use olive but you dont have to then i put it in a bag and throw it in the fridge over night then i grill it flat on the grill till both sides are nicely charred but not burned and let it rest 10 min then slice it with my electric knife in thin slices like a london broil its yummey i make mine med rare when i take it off the grill cause it continues to cook till its med when you let it rest | |
