Vegan Style!

6 TBSP Cocoa blended in 1/2 cup boiling water (let cool)
1 Ripe Avocado
1/2 Can Coconut Milk (not the cheap stuff!)
1 TSP Vanilla (not the fake stuff!)

For a sweetener, add Maple or Agave Syrup to taste.

Mix all ingredients in a blender.

Add a ripe banana for a creamery taste.

wouldn't something with silken tofu and agar agar have more of a mousse like consistency? And more neutral flavour for the cocoa?

What is the texture like? From the recipe given it seems more like a light smoothie than a mousse? I'm a big fan of Knoxs Gelatine to give mousse that 'backbone' on the spoon that makes for a more substantial dessert.

I don't think vegans eat gelatine, do they?

no, vegans don't eat gelatine, or gelatin. But I do believe they eat agar agar which is a seaweed that does pretty much the same thing.

Yes indeed, the gelatin would knock it out the 'veggie' category, perhaps there's a substitute.

Gelatin is made from boiling animal bones, might as well add cream... unless you're Vegan ;)

Coconut cream would be better than Coconut milk.

Tapioca pearls are plant based and could also work for texture.
