| Thai Fried Rice Posted: 6/29/2009 12:55:22 AM | Fried rice is an easy and filling dish - great for a bachelor gentleman. You just have to remember to cook the rice the night before. Ingredients: 4 c. cooked rice oil 2 eggs 1 carrot - diced 1/2 c. frozen peas 4 scallions - minced 1/2 c. leftover meat salt or soy sauce Steps: 1. Heat a wok or large skillet over high heat. 2. Add a little oil and wait a few moments for it to heat up. (if you like a small pieces of pork /or chicken/ or shrimp you can add after oil heat up, then stir fried it till its weldone. thai people put a ground garlics in to the hot oil about 2sec before meat to hide the meat smell - for me i like to put a square pcs of tomatoes and any vegetables that i can find from the fridhe.. in this section ) 3. Break the eggs into the wok and mix quickly to scramble. 4. When the egg is well-set, remove it and chop it into bite-size pieces or strips. 5. Wipe out the wok and add a little more oil. Wait for it to heat. 6. If the rice is clumpy, break it up with your hands so that each grain is separate. 7. Add the cold rice to the wok. Move the rice quickly around the hot pan by putting your spoon or spatula under the rice and turning it over. (This is the basic stir-frying technique.) 8. After a minute or so, add the diced carrots and move them about the pan with the rice. 9. After 3 minutes, add the frozen peas and stir-fry. 10. After 2 minutes, add the scallions, egg and meat, if using. 11. Season the rice with salt or soy sauce once the ingredients are well-mixed. Cook another minute or until everything is heated through. 12. Remove from heat and serve. Tips: The amount of oil you use is up to you. You need only a tablespoon or so to keep the rice from sticking. You can put anything you want in fried rice: leftover vegetables, stir-fry or anything that seems interesting. Try fried rice with ham and eggs for breakfast. Traditionally, fried rice is seasoned with salt instead of soy sauce, because soy sauce turns the rice brown. Whichever you choose, be conservative when you first add it. You can always add more, but you can\'t take too much back. Try a few drops of sesame oil in the egg before you cook it. Try some minced garlic and ginger in the oil before you add the rice. If your wok is large, you can cook the egg with everything else: After the rice and other ingredients are heated, push it to the sides of the wok so there\'s an empty space in the bottom. Crack the eggs into the space and cook. When the eggs are set, stir everything together to break up the eggs. Some people like ketchup on their fried rice. Warnings: Don\'t use hot rice, or you\'ll have a gloppy mess. Cooling the rice makes the grains separate

use some chopsticks to fluff up the rice in a bowl put in an egg, and keep whisking it till each grain is coated it stops them sticking and makes the rice a nice golden yellow colour | |

I'm sure different regions use different ingredients. My instructor used basil, lime leaves, green onions and cilantro in Thai cooking, including fried rice. | |

HOWEVER there are A LOT of people that post complete nonsense and think that they really do "know it all". Somebody comes along and reads what is written and thinks,"i guess once the oil is smoking it's ok to put my frozen fish in it." There are a lot of inexperienced cooks that read and post on here. If I can shed some light on something that is unclear, I do so, as do others. And just because you're from Texas, it doesn't make you an expert on bbq. The op's Thai rice recipe doesn't exactly scream "Thai" does it? It could be Chinese, Japanese, Korean or anything else if you omit the soy sauce. I make the same recipe all the time. It's fantastic. But I don't call it something it isn't. What's your problem with Canada? I'll put my cooking instruction up against your spelling any day. | |

It's one thing for a person to give constructive advice in a nice way. Then there are the snarky people who have a holier then thou attitude. They can't give advice without being mean about it. | Thai Fried Rice Posted: 7/3/2009 9:06:11 PM | You need to use already cooked rice that has been cooled. You can't use freshly cooked rice, at least not if you want it to turn out properly. It sticks together too much.
I imagine that a good jasmine rice would be very nice in this case. I've used it to make my own fried rice and like it better than the regular par-boiled. JMHO | |

i'm not a master of cooking but i love it and what i put is my heart i just post what thai people in my country do, only for sharing the experience. actually both of thailand and chinese or korean are in Asia and we also have many same ingredients , just different way to use. And it is nearly same tast of each sauce but if somebodies used to it, will find that there is something different.
normally thai food use a basil leaf with a spicy foods as a curry(with out coconut) and pad kra prao
but it is no problems friends, foods are nothing wrong, it is one piece of art. even the same ingredients but can be also a different tast.

Here it is,
1/2 lime 1-2 egg 4 teaspoons fish sauce 3 cloves garlic, minced 1/2 teaspoon ground dried chili pepper 1 shallot, minced 2 tablespoon tamarind sauce 1/2 package Thai rice noodles (Recommend noodles from Chanthaburi) 1/3 cup tofu - extra firm 1-1/2 cup Chinese chives - green 2 tablespoon vegetable oil 1 tablespoon preserved turnip (Hua Chai Po) 1-1/3 cup bean sprouts 2 tablespoons peanuts 1 tablespoon coconut sugar 1/2 banana flower Optional (i think you may not need it and also it is not easy to find)

How to : We got to prepare a noodles by put it in a water about 15 minutes or till it get soft.
