The chocolate cake will work, I need to make a good frosting, can anyone help with this? or any other ideas would be great as well.
Guess I should by a cook book or learn to make a cake on the BBQ.

You could just make a ganache and pour it over the cake.
Take a cup of heavy cream and 8 oz. of chopped dark chocolate. Put the chocolate in a small bowl. Put the cream in a pan and heat it until it simmers.
Pour the cream over the chocolate and stit until fully melted. Pour the ganache over the cake and chill until set.

I can't give you accurate measurements because I'm a "this looks right" kinda measurer.

1/2 cup butter (room temp)
3 cups icing sugar
1 cup cocoa
1-2 tsp vanilla
1/4 cup heavy cream.

Beat the butter til fluffy. Then add a cup of icing sugar. Press it into the butter w a rubber spatula to avoid it being blown everywhere. Once mostly combined, beat the mixture again. Repeat with remaining sugar and cocoa adding one cup at a time. Only add the cream and vanilla once the mixture is well beaten. Then whip till all fluffy.

In the event my measurements are askew: taste too buttery, add more sugar. Taste too sweet, add more cocoa. Too firm, add a little more cream. Everyone loves my icing, so the ingredients are right, can't guarantee the ratios... (My brother likes it more than betty crockers, and he and I do NOT get along)

Captain - that's the same one I used to make, and it's the cream that does it (by the way heavy cream = whipping cream). Good luck & good for you in creating from scratch.

yes, muddy11...good for you for scratch'n it, lol I''ll give u instructions on baking a cake on the bbq if u r serious dude...propane or charcoal? lmao
the frosting/topping too...imo...the ones at the store have that "plastic" taste to it, yuk!
I couldn't live without Jean Pare's, Company's Coming cookbooks... all delish!

yes girls, yum...I love that topping on a light fluffy choc cake...if it's a heavier (pound cake texture) I gotta have a chocolate cream cheese frosting, yummy!

This is the Barefoot Contessa's recipe. I've loved since the first time I tried it, and it's very rich and smooth - like velvet ... not hard to do either.

Chocolate Buttercream Frosting
2007, Ina Garten, All Rights Reserved

Serves: about 4 cups

1 pound bittersweet chocolate
12 ounces semisweet chocolate
3/4 cup egg whites (4 to 5 extra-large eggs), at room temperature
1 1/2 cups granulated sugar
1/4 teaspoon cream of tartar
3/4 teaspoon kosher salt
1 1/2 pounds unsalted butter, at room temperature
3 teaspoons pure vanilla extract
3 teaspoons instant espresso powder, dissolved in 1 1/2 teaspoons water
3 tablespoons dark rum, optional
Chop the chocolates and place them in a heat-proof bowl set over a pan simmering water. Stir until melted and set aside until cooled to room temperature.

Mix the egg whites, sugar, cream of tartar, and salt in the bowl of an electric mixer fitted with a whisk attachment. Place the bowl of egg whites over the pan of simmering water and heat the egg whites until they are warm to the touch, about 5 minutes. Return the bowl to the electric mixer and whisk on high speed for 5 minutes, or until the meringue is cool and holds a stiff peak.

Add the butter, 1 tablespoon at a time, while beating on medium speed. Scrape down the bowl, add the melted chocolate, vanilla, espresso, and rum, if using, and mix for 1 minute or until the chocolate is completely blended in. If the buttercream seems very soft, allow it to cool, and beat it again.

Oh, damn, damn, damn ... it's good!

EASY CHOCOLATE FROSTING

1 stick butter
1/3 c. Hershey's cocoa
2 c. sugar
1/4 tsp. salt
2/3 c. evaporated milk
1 tsp. vanilla

Melt butter slowly in heavy saucepan. Add other ingredients except vanilla and boil 3 minutes. Add vanilla and cool. Beat to spreading consistency and spread

How to Make Chocolate Frosting With Cocoa


* 2 cup powdered sugar
* 1 tsp. vanilla
* 1/4 cup soft butter or butter substitute
* A few tablespoons of milk or milk substitute (i.e. soy milk, rice milk, or nut milk)
* 1/4 cup raw cocoa

Step One
Mix powdered sugar and cocoa in a bowl together. Make sure that there are no lumps in the cocoa or the sugar; use a sifter if needed, or just pulverize any lumps with the back of a spoon.
Step Two
Take the softened butter or butter substitute, the milk or milk substitute, and the vanilla and slowly add the liquids, mixing the frosting with a hand mixer. If the milk is too cold, it may make the butter clump. Be sure to mix the frosting on medium speed until it is the right consistency and until there are no lumps.
Step Three
Thicken chocolate frosting that is too thin by adding some extra powdered sugar or extra cocoa.
Step Four
Thin out chocolate frosting that is too thick by adding extra milk, substitute milk or vanilla. Do not add extra butter; this will make the chocolate frosting too greasy.
Step Five
Add flavoring items to the cocoa chocolate frosting if you wish. Such items include chopped maraschino cherries, chocolate chips, butterscotch chips, peanut butter swirls, or fresh fruit. Do not use a mixer to add these items. Mix in with a basic spoon or spatula.
Step Six
Spread on your prepared, cooled cake and serve.

here's the one i used to use for decorating cakes.

2 sticks of parkay
1 pound of crisco shortening
2 pound bag of confectioners sugar
dash of salt
1 T. vanilla (white vanilla if making white frosting)

put parkay in mixer and beat till creamy. add the crisco and beat till mixed in well.
start adding confectioners sugar -once you have added about 1/2 the bag the mixer will start dragging a little. add the vanilla and salt and then add the rest of the confectioners sugar. when mixed together good turn up the mixer and beat till fluffy.

to make it chocolate-- put a little cocoa in a bowl and add some hot water-just enough to make a paste and then add it to the frosting and beat it in good.

this makes a good size batch of frosting so you'll probably have some left. store it in an airtight container and it will keep in the refrigerator for about two weeks.

2 easy ganache recipes ... have lots more if you want something different.

Chocolate Ganache
6 oz. double cream
11 oz. semi-sweet chocolate
3/4 oz. unsalted butter

Heat double cream and butter in a 2-1/2 quart saucepan over medium-high heat; bring to a boil. Place chocolate in a stainless steel bowl. Pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir until smooth. Keep at room temperature until needed.

Espresso Ganache
8 fl. oz. double cream
1 oz. unsalted butter
1 oz. castor sugar
8 oz. plain chocolate, broken into 1/2 oz. pieces
1 tbsp. instant espresso powder

Heat the double cream, butter, sugar and espresso powder in a 4-pint saucepan over medium-high heat, stirring to dissolve sugar and espresso. Bring the mixture to a boil. Place plain chocolate in a stainless steel bowl. Pour the boiling cream over the chocolate and espresso. Tightly cover the top with cling film and allow to stand for 10 minutes; stir until smooth. Keep at room temperature until ready to use.

Fudge Frosting

1 1/3 cups sugar
6 Tablespoons Butter

Mix till blended and then bring to full boil and boil for 1 minute.

Add: 6 Tablespons Milk and stir into sugar mixture.

Add: 1/2 chocolate chips and 6 marshmallows. Stir till melted into sugar mixture.
Add: 1 tsp vanilla.

When frosting is cooled, spread over cake or brownies.

NEVER USE MARGARINE OR SHORTENING WHEN MAKING FROSTING. I HAVE BEEN BAKING FROM SCRATCH FOR YEARS. I WONT EVEN TOUCH FROSTING IN THE CAN, TASTES LIKE PAINT REMOVER. ANYWAY HERES THE RECIPE I HAVE BEEN MAKING FOR YEARS.

"CHOCOLATE FROSTING"

6 TABLESPOONS BUTTER, 2 PLUS 2/3 CUPS CONFECTIONERS SUGAR ..HERSHEYS COCOA..1/2 CUP MEDIUM FLAVOR (OR) 3/4 CUP DARK FLAVOR..START WITH MEDIUM FLAVOR, YOU CAN ALWAYS MAKE IT A DARKER FROSTING ANOTHER TIME...
1/3 CUP MILK....1 TEASPOON VANILLA...DO NOT USE ARTIFICIAL VANILLA.........ALL INGREDIENTS MUST BE TOP QUALITY.
BEAT BUTTER UNTIL CREAMY. ADD POWDERED SUGAR AND COCOA ALTERNATELY WITH MILK. DO THIS SLOWLY SO ALL IS INCORPORATED EVENLY AND YOUR FROSTING WILL BE SMOOTH. THEN BLEND IN VANILLA........FROST COOLED CAKE AND ENJOY!!!!!!!!!

Hey there is a cook book out there just for bbq's. I can't remember butt it had a cake recipe just made for bbq. The easiest recipe for icing is this!
some butter, some icing sugar, a little vanilla and a mixer! Throw it all ina bowl until you get the look and taste you want. If you want chocolate icing, add coco and chocolate milk for texture!!

Cream Cheese Chocolate Frosting

1/4 cup butter - never use margarine or shortening...yuuuuk
8 oz softened cream cheese
3 squares unsweetened chocolate melted
dash of salt
3 cups icing sugar
1/3 cup cream (half & half works well)
1 tsp vanilla

Cream together butter and cream cheese. Add melted choc, salt, sifted icing sugar, cream and vanilla. Beat until smooth. Very tasty on brownies as well....k

The cream cheese one sounds wonderful!

I made a 9" by 13" pan of brownies today -- used this recipe from Nestles.com, but I didn't add the other 6 oz. of chocolate chips to the brownie recipe! I also had some leftover cooled strong brewed coffee. I added about 2 tablespoons to the brownie recipe.

Instead, I used the remaining 6 oz. with this recipe:

6 oz. chocolate chips
4 T. butter
1 T. cooled brewed coffee
--melt together in a heavy-duty saucepan on top of the stove.
--Add:
2 cups sifted powdered sugar
1 T. vanilla
--Mix together and then add milk VERY gradually, just enough to make a glossy smooth frosting.
--Add coarsely chopped pecans, or walnuts, and spread on top of cooled brownies.

Very good!

I make fudge "from scratch" ... sort of ... I am not adverse to cheating just a litte now and then if it makes my life easier ... I think, once it's cooled down some, it would make an EXCELLENT topping for something tuff like brownies ...

it's not a recipe for COOKING ... it's a recipe for MELTING and BLENDING ...

in medium to small sized sauce pan, melt 1/4 lb. or one cube of butter ...

dump in a 12 oz. bag of semi-sweet chocolate chips and stir that till it's all melted and blended with the butter ...

dump in a smallish (not the huge) bag of miniature marshmellows ... and stir and melt that all together ... pour in about 2 teaspoons of real vanilla extract ...

when it's melted ... it's done ... you're NOT COOKING ... you're melting and blending!

for use as an icing ... I'd let it cool down before I used it ... but I'd be beating it occasionally as it cooled ... to keep an eye on it ... it does set back up when it's cooled! ...

if you're making FUDGE ... then dump in all the things you like in fudge ... chopped almonds ... chunks of walnuts ... cocoanut ... whatever! sometimes for fudge ... I wait till it's cooled off some and dump in chopped walnuts and more miniature marshmellows to make rocky road fudge!

with all this help ... you're gonna do great! or buy the low sugar Betty Crocker's already made icing! it's better than the regular sugar version!

For a great recipe for anything go to allrecipes.com. Enter in the search window what you want to make and several recipes will come up rated 1-5. I only select from the recipes tried and true who have been rate a "5".
