| Ice cream sandwich cake ? Posted: 8/14/2009 10:15:21 PM | A quick visit to google turned up a ton of recipes- I just used " Ice cream sandwich cake" as a search term (without the quotes).
cooks dot com has 15 of them here: http://www.cooks.com/rec/search/0,1-0,ice_cream_sandwich_dessert,FF.html
and about dot com has a good kid friendly recipe: Ingredients:
* 20 ice cream sandwiches (regular, strawberry or neopolitan) * 1 12 oz. jar hot fudge sauce * 1 8 oz. container frozen whipped topping (such as Cool Whip), thawed * red, white and blue sprinkles
Preparation: 1. Cut one ice cream sandwich in half. Place one whole ice cream sandwich and one half of an ice cream sandwich side by side across the short end of a 9 x 13 pan.
2. Next to those ice cream sandwiches, arrange 8 more ice cream sandwiches lengthwise, to cover the bottom of the pan.
3. Place hot fudge sauce in a microwave-safe container. Heat on high for 30 seconds. Spread half of the sauce over the ice cream sandwiches.
4. Top with half of the whipped topping.
5. Repeat layers: ice cream sandwiches, hot fudge sauce and whipped topping. Scatter sprinkles over top.
6. Freeze, uncovered 2 hours. Cover with foil and freeze another hour.
Makes 24-36 servings. | |

| Ice cream sandwich cake ? Posted: 8/15/2009 1:09:27 PM | Ice Cream Sandwich Cake
1 quart vanilla ice cream or frozen yogurt, slightly softened
Topping 1/3 cup uncooked oats, quick or old fashioned 3 tbsp. all-purpose flour 2 tbsp. brown sugar, firmly packed 1/3 cup peanut butter 1 tbsp. butter
Brownie 1 cup (6 oz.) semi-sweet chocolate chips or morsels 1/2 cup butter 3/4 cup granulated sugar 1 tsp. vanilla extract 2 large eggs 1 cup all-purpose flour 3/4 cup uncooked oats, quick or old fashioned 1/2 tsp. baking powder 1/4 tsp. salt, optional Preheat oven to 350° F. Line 2 round 8” or 9” cake pans with aluminum foil, allowing foil to extend over sides of pans. Spray with cooking spray.
Topping: Combine oats, flour and brown sugar in large bowl. Cut in peanut butter and butter with two knives until mixture is crumbly; set aside.
Brownie: In medium saucepan, melt chocolate chips and butter over low heat, stirring frequently. Remove from heat; cool slightly. Stir in sugar and vanilla extract. Add eggs; mix well. Add combined flour, oats, baking powder and salt; mix well. Divide batter evenly between pans. Sprinkle with reserved topping, patting gently.
Bake for 22-24 minutes for 8” pan – 20-22 minutes for 9” pan or until center of brownie is set – do not overbake. Cool completely in pans on wire racks.
Assemble: Spread softened ice cream (or yogurt) evenly over 1 brownie while still in pan. Lift 2nd brownie out of pan; remove foil. With topping side up, place brownie on top of ice cream, pressing gently. Cover and freeze several hours or overnight. Remove from freezer 10-15 minutes before cutting. Lift from pan using foil edges. Remove foil; cut into wedges.
Note: Can individually wrap wedges and store in freezer. Note: Can omit topping if desired. | |

| Ice cream sandwich cake ? Posted: 8/15/2009 6:16:49 PM | | i've had it the way charon52 listed it in the kid friendly recipe and it is really yummy! just make sure you get it nice and set up in the freezer before you serve it or it's kind of messy and not as good. it's definetly an easy dessert to make and everyone i've ever served it to liked it a lot. also-- i kind of press them down a little after putting them in the pan to kind of fill in the space between the sandwiches. the ice cream in the middle squishes out a little to spread it all together. | |
