1 pound tilapia fillets 1 tablespoon olive oil 1 can diced tomatoes, or Italian-style stewed tomatoes (diced) 1 cup diced onion 1 cup white wine. 2 tablespoons chopped parsley (can used dried parsley) A teaspoon or two of capers
Heat a large skillet over medium-high heat. Add oil.
When hot, add onion and cook, stirring frequently, until softened but not browned.
Add tomatoes and cook, stirring occasionally, approximately 5 minutes.
Place fish on top of tomatoes. Pour wine over fish and sprinkle with parsley & capers.
Cover and reduce heat to simmer. Simmer until fish is cooked through, around 10 minutes.
Remove fish to serving platter and cover with foil. Bring the wine and tomato mixture to boil and cook about 3 minutes. Pour over fish. Serve over cooked rice, perhaps with a baguette.

| Stewed Tilapia in white wine and tomatoes Posted: 11/6/2009 4:59:23 AM | Sounds very good to me. But as tilapia is very high in omega-6, maybe I'll try it with a different kind of fish. The rice does sound like a great side.

but here I've seen Talapia the size of my are taken from the bank at area lakes...but in the markets the fish is small and scalely and very boney...with very little oily meat.
I cook with Whole Drum, or use Orange roughy fillets.
Make a paste of 2 tblspn of oil 1 tspn of garlic powder 1 tspn cumin powder 1 tspn chili flake 1 tspn salt and pepper 1 lemon juiced
spread paste over fillets
place in baking dish and cover with
sliced onion, sliced bell pepper, and crush/diced tomato
bake or grill at 325-350f for 20-25 minutes | |
