Michael's super scrummy no bake no cheese lemon cheesecakePage 1 of 1    
Ingredients....
1 packet of digestive biscuits
3 or 4 oz of butter
3 lemons,juice of
300 ml double or whipping cream
1 can(397 ml) condensed milk.... Crush the biscuits with gay abandon,melt the butter and combine in a bowl.Spread over the base of a loose bottom or springform tin of aprox 7-9 inches and cool in the fridge for one hour.Put on the kettle for a cup of tea.Pour the double/whipping cream,condensed milk and juice of the lemons into a bowl and whip into a frenzy until soft peaks are formed.Spread the mixture liberally onto the biscuit base and freeze for one hour or place in the fridge for 2-3 hours until set.Make a cup of tea,cut a slice of the cheesecake and enjoy the fruits of your labour...God Save The Queen....

lol...I love the way your recipe reads! This sounds like something quite nice to have made up for a quick treat on one of our hot summer days here! No baking! And I bet you could also do this with lime juice! Many thanks for sharing this.

i'd probably use vanilla vodka instead of lemon juice and make the whipped cream myself. that way i could control
the sweetness of it.

it sounds like something you could totally fall face-first into!

identical to a recipe i have except mine calls for graham crackers...

Interesting.Do Like your Thread how its done.So CheeseCake one does not need to Bake.Simple than.Recipe sounds good too.Esp.with Tea.&As this/your CheeseCake has no cheese thats better.Sounds scrumptious & without it.& Its lemon?Nice.HmCan picture it now&taste it &its aroma.. Dislike cheesecake-maybe only1/2 were actually OKay..Forgot what they were/where etc.Think twas storebought-&if others ever made it,
it was prob.still not liked alot.But this..this takes the cake.It sounds soft tender not too gritty etc even without cheese etc.ThankYou for this

Hmmm.......I'd probly end up drinking the vanilla vodka while singing, "God Save the Queen", while squeezing lemon or lime (or even chicken.......depends on how much vanilla vodka I've had) juice in to the recipe.

Sounds delicious OP and I agree with (I think it was) msg. 2!!! Your delivery of the recipe is hilarious!!!

I believe that a digestive biscuit is something akin to what you would let a small child chew. After all, it is about for a child having no teeth and if memory is right, they like the taste a bit. Best I can do folks from memory as a mother. Oh, and just remembered they like to chew something soft.

How about then even,hm think its DutchButterCookies in those blu round tins.Would they do as well maybe?Though they are just a little sweet & a tad crispy yet still crumbles.

Are now not so special and are very common here now.
I can even get Marmite.

I will be trying this.

butter cookies
3 cups flour
1 lb...or approx 3 cups potato starch...(not potato flour)
1 c fruit sugar...(berry sugar they call it now...just white sugar but with small crystals so it mixes easier)
1 pound butter...(salted butter)

mix thoroughly by hand till well blended...dont worry about working the gluten too much...it wont happen
roll dough to about 3/8" thick...cut with a 1" or so round cookie cutter...place on baking sheet...they can be put together closely as no spreading will occur
bake at 300F for 30-40 minutes...or until a hint of gold color is detected...
i like mine a bit more on the whitish side...
its basically a shortbread cookie...dee-lish in any event and stone simple

Digestive biscuits are similar to Graham crackers.

You can actually get digestive biscuits in some supermarkets that have international sections or World Market. Hobnobs work really well as the base for the cheesecake, and these can also be purchased in the international sections in grocery stores or World Market (for a high fee).

Great recipe for cheesecake btw. I use a similar one, but with the cream cheese. It came from a M&S cookbook about 30 years ago... I make it every Christmas and everyone loves it.

but if its perfect using those Dutch..
ButterCookies even though they are not flat..then mayb someday will be able to,try your recipe with said soft
biscuits & or buttercookies. Hmm actually just havin it alone without the biscuits sounds just as tasty to eat by itself.Lol at Sir I_Savant San stone simple hm.Ah one can do ButterCookies just like the ones in the round blu tin hm.Only four ingred. must be simple than to do.

to my taaste buds...once they start to go brownish...the fat from the butter seems like its cooked or burnt too much...but thats just me...
whatever you do...do not bake them till they are brown...light gold color is all

I do the basic same recipe, but for minis. I put a vanilla wafer in the bottom of a muffin cup, which i have placed in a muffin tin. Then proceed. It's good too and easy for a party amount.
