| | Michael's super scrummy no bake no cheese lemon cheesecakePage 1 of 1 | Ingredients.... 1 packet of digestive biscuits 3 or 4 oz of butter 3 lemons,juice of 300 ml double or whipping cream 1 can(397 ml) condensed milk.... Crush the biscuits with gay abandon,melt the butter and combine in a bowl.Spread over the base of a loose bottom or springform tin of aprox 7-9 inches and cool in the fridge for one hour.Put on the kettle for a cup of tea.Pour the double/whipping cream,condensed milk and juice of the lemons into a bowl and whip into a frenzy until soft peaks are formed.Spread the mixture liberally onto the biscuit base and freeze for one hour or place in the fridge for 2-3 hours until set.Make a cup of tea,cut a slice of the cheesecake and enjoy the fruits of your labour...God Save The Queen.... | |

After all, it is about for a child having no teeth and if memory is right, they like the taste a bit. Best I can do folks from memory as a mother. Oh, and just remembered they like to chew something soft.

Op- I actually can get digestive biscuits where I live. Most stores here carry many different specialty items which Are now not so special and are very common here now. I can even get Marmite.

| Michael's super scrummy no bake no cheese lemon cheesecake Posted: 4/11/2012 12:51:10 PM | butter cookies 3 cups flour 1 lb...or approx 3 cups potato starch...(not potato flour) 1 c fruit sugar...(berry sugar they call it now...just white sugar but with small crystals so it mixes easier) 1 pound butter...(salted butter)
mix thoroughly by hand till well blended...dont worry about working the gluten too much...it wont happen roll dough to about 3/8" thick...cut with a 1" or so round cookie cutter...place on baking sheet...they can be put together closely as no spreading will occur bake at 300F for 30-40 minutes...or until a hint of gold color is detected... i like mine a bit more on the whitish side... its basically a shortbread cookie...dee-lish in any event and stone simple | |

Digestive biscuits are similar to Graham crackers.
You can actually get digestive biscuits in some supermarkets that have international sections or World Market. Hobnobs work really well as the base for the cheesecake, and these can also be purchased in the international sections in grocery stores or World Market (for a high fee).
Great recipe for cheesecake btw. I use a similar one, but with the cream cheese. It came from a M&S cookbook about 30 years ago... I make it every Christmas and everyone loves it. | |
