Break in a couple eggs,stir up and cook until the eggs are done. Add your favorite seasonings and enjoy. I like to add a dollop of nacho cheese and a couple dashes of Frank's Red Hot. | |

the most popular is probably my baked French style cinnamon toast that I assemble in a buttered rectangular baking dish the night before, refrigerate overnight, then put it in a 325 degree oven before my guests get up the next morning ... basically, it's slices of bread layered in the baking dish with the egg custard poured over ... approximately 1 egg, 1 tbsp sugar, lots of cinnamon and nutmeg and whatever your favorite milk is, about 4-6 tbsp per slice of bread ... I then sprinkle extra cinnamon and nutmeg on the top before baking ... if it looks dry, I add more milk, taking care not to get it too wet ... this one is VERY easy to do in the morning so I can spend time with guests ...
another popular one is more labor-intensive in the morning and involves making a pot of freshly brewed coffee ... chunking up and frying bacon then adding potatoes, onions and bell peppers ... finishing this off with eggs, cooked to my guests' preference ... God willing ... otherwise, they sometimes have to live with scrambled eggs!!!
this morning, I made wheat-free muffins with bananas and strawberries ... nutmeg! put raw sugar crystals on the top as they went in the oven ... yum! they turned out GREAT!
aren't people just SOOO picky about their eggs!? one friend INSISTS on sunny-side-up, practically raw ... my granddaughter has to have the yolks runny but the whites solid ... another grandkid wants the entire egg cooked to the consistence of a rubber ball ... and me? I like my eggs over easy!
but ... when they stick to the pan or just don't turn out ... they get 'em scrambled! I'm not a chef and don't have to turn out stellar performances every time! | |

But age caught up with me, and now I have figured out that the best egg dish is done in a double boiler. Yeah, you heard me, read me!! Perfect two eggs done that way. Plate, then gets a good piece of cheese, my eggs, one toast with peach jam and skim milk. Oh, and the eggs must have catsup on them and a good black pepper and a wee bit of salt. Sometimes, not often though, some sliced (slim cut) ham, also on the place. Better yet, and sometimes I do this, squeezed orange juice. PERFECT BREAKFAST!!

then theres the old standby..........nice thick slice of ham........couple of eggs over easy and rye toast
or diced ham........fried taters [with onion of course]........a couple of eggs scrambled in........a couple of slices of cooper sharp cheese...........rye toast

| easy breakfast burritos Posted: 4/22/2012 2:54:46 PM | I don't like most breakfast food and am just as likely to dinner leftovers. I did find something I really like - breakfast burritos. You can make up a batch, freeze them individually, then heat in the microwave.
You need:
Large flour tortillas Scrambled eggs Salsa of your choice Whatever else you like to put into them: shredded cheese, chopped onions, peppers, tomatoes, ham, bacon, whatever Wax paper or deli paper Zip lock plastic bags
Scramble up some eggs. Warm tortillas in microwave to soften. Assemble burritos with whatever ingredients you like. Wrap each in a piece of wax paper or deli wrap paper. Store in ziplock bags and freeze. They can be individually heated in the microwave. I usually do one minute, turn it over, then another minute.
I like these. They are easy, tasty, and convenient. | |

you could make a Monte Cristo for breakfast! fill two pieces of bread with whatever ... ham and turkey maybe? dip in an egg batter and fry on a griddle ... THAT sounds good! yum ... I've never actually DONE it but it sounds like a great idea for breakfast for one or two ...
I rarely MAKE breakfast for one ... on those rare occasions when I'm so fortunate as to be making breakfast for two ... that would be nice, though ... (smiling) | |

These are really easy to make. Almost like making french toast Except having stuffing in between two pieces of bread with eggs n etc. Can bake or fry them n add anything thing inside. We used to make n after baking them we would drizzled with powdered sugar n drizzle with honey or syrup n would have homemade preserves to put on top or cut a piece off n dip in preserves. Good anytime. My brothers would always want theirs fried. | |
