Old Fashioned Texas Meat Loaf By; JayJayPage 1 of 1    
1 1/2 Lbs Ground Beef
15 saltine crackers
3 slices bread
1 diced onion
2-3 diced garlic cloves
lite parsley a couple small pinches
2 large eggs
Mix well

Add Tomato paste
Add diced tomatoes
For the top

Oven 360F
1 1/2 hours uncoverd
then cover with foil 20 min after you turn oven off !!!!!!

need some gravy with that meatloaf. 1/4 stick butter, 4tbs flour to make a rue. mix the dripping from the meatloaf in the pan. add some beef broth and bouillon. add a bay leaf and a pinch fo thyme.

I am a Texan! Our meatloaf was different. It is funny, meatloaf is something I rarely eat and it is basically a garbage meal when you put it next to the generally healthy roasted meats and seafood and good raw veggies and fruit I eat, but there are only a handful of dishes that people will stand adamantly for and defend so fiercely as their beloved meatloaf recipe. I always find that a great source of humor. I stand fiercely for mine too!

basically:
2.5# ground beef 80:20
1 large chopped onion
1/2 chopped green pepper
salt and pepper
3 eggs
1 cup crushed tomatoes
2 sleeves crushed saltines

Mix well, in a shallow baking pan or dish shape your loaf into the center, compacting it and smoothing it to a nice shape leaving plenty of space between the meat anbd the baking dish, all around.

Pour 1 cup crushed tomatoes and 1/2 cup water into baking pan around loaf.

Bake at 375 degrees F for 30 minutes, covered.

Remove cover and top with a thick coating of Heinz ketchup, completely.

Bake uncovered for an additional 45 minutes.

The meal in our family circle consists of
Homemade Mashed Potatoes with real butter
Candied Carrots
Green Peas
Hot Mexican Cornbread
Corn on the Cob
Green Beans with bacon
Banana Pudding or Banana Cream Pie

See why I rarely have it? Like once every 5 years.... sort of like Chicken Fried Steak, but it has been at least 12 years since I had that.

Oh, I forgot to add that the loaf and tomatoes in the pan make the most incredibly awesome gravy for the potatoes YUUUUUUUUUUMMMMMMMMMMMM !!!!!!!!!!!

I'm going to try these recipes as well. My mom always cooked out of boxes and cans. My "from scratch" cooking I learned from my grandma when I went to her house for summer vacations as a child. I just started experimenting from there. Some recipes I just haven't gotten "tweaked" the way I want them, but I still work on them regularly to get that perfect "YUMMY" factor. I appreciate all of the recipes that y'all share. I"ll share some of my own that I've learned to make from trial and error as well.

dammit...i really need new glasses...i looked at that and read 4 lbs flour...that would soitainly make a bathtub full of gravy...lol

Well I must add my recipe to this ( It is not only one of my favorites but my parrot loves it too ) Ha Ha

Mix one pound of hamburger with chopped up onions and one egg and some quick quaker oats.
After all mixed put in casserole dish. Put a can of tomato or mushroom soup on top.
Cook in microwave for 20 mins and enjoy.
Easy and delicious.

I should add for those of you who have birds that they can not have onions so I make sure the portion my parrot gets is without onions.

i think it's a pretty safe bet to say that there isn't a single person that will read this thread looking for a meatloaf that they can serve their parrots.

call me crazy but i really doubt that ground cow and mushroom soup is something that a bird should be eating.

Just curious now, but what exactly makes this "Texas" meat loaf???

I don't know what State to call mine. but I use the crushed tomatoes too and sometimes some finely grated carrot.

I like to make a big enough meat loaf that I can have a few cold meatloaf sandwiches after.......think I like them better than the actual meatloaf meal!!

1 # ground beef
1 # ground venison
1 cup finely diced onion
1/2 cup finely diced green pepper
1 clove minced garlic
1 can small italian diced tomatoes
2 T beef soup base
1/2 cup picante ketchup
1 T Worcestshire
2 T A1 Steak Sauce

Mix well and cover with 1 small can of tomaoto paste, then lightly sprinkle with sugar.

No gravy!! We always served our meatloaf with cheesy potatoes!!

For some reason I don't like the taste of oatmeal in meatloaf or hamburgers, usually use bread or cracker crumbs or bread crumbs in the meatloaf. Usually make a tomato sauce type gravy or mushroom gravy, not into ketchup topping either. LOOOOOVVEEEE leftover cold meatloaf sammies.
