"Carolyn Sassy & Savory Corn SaladPage 1 of 1    
Ingredients
4 packages of (frozen) whole kernel corn thawed and drained of excess water. *(can corn can be substituted)*
1/2 c. red bell pepper chopped
1/2 c. green bell pepper
1/2 c. yellow/orange bell pepper chopped
1/2 c. purple/red onion chopped
1 c. sliced black olives
1 cucumber - peeled, seeded and diced
3 med. roma tomatoes - seeded and diced
1 lg. jalepano pepper - seeded and diced
3 Tbsp. fresh cilantro rough chopped
1 c. smoked ham (*you can also use smoked turkey breast) chopped or shaved
1/2 lb. Seasoned boiled shrimp,(Zatarans crawfish/srimp boil), deveined (med. 15-20 count)
1 package Zatarans Crawfish/shrimp boil
1/2 lemon and 1 Tsp Salt to taste
3-4 c. mixed salad greens (optional)

Citrus Dressing
1 1/2 c. fresh squeezed orange juice
2 Tbsp. Lime juice
3 Tbsp. Extra Virgin Olive Oil
1/2 Tsp. Kosher salt
1/2 Tsp. Fresh ground black pepper
3 Tbsp. Honey

Directions
1. To boil shirmp - place 7 cups of water in pot and bring to a rolling boil, add Zataran's seafood boil for crab/shrimp/crawfish and 1 Tsp. salt and 1/2 lemon wedge...15 minute boiling time, then add shrimp, let cook for no more than 10 minutes...remove from heat and let stand for 15 minutes..discard the liquid and let shrimp cool in cold water... then peel and devein.
2. After corn has been drain in a collander proceed with tossing all the above ingredients for the salad together in a chilled salad bowl. Chill for about 1 hr or overnight if you like.
3. Whisk together the above ingredients for the dressing, make any necessary adjustments that might be needed (i.e more or less honey, depending on your taste) Serve corn mixture on a bed of mixed salad greens, add citrus dressing and enjoy.

Well, I think I have just died and gone to heaven. I haven't made or eaten this kind of good cooking since I came to Michigan. And I have been wanting to come home for a while.
