i think my favorite is bbq chicken......i cut it up the same way i do when i fry chicken toss it on the grill.[charcoal]..........cook till done and the skin is barely getting black
the sauce i use is......[sorry.no precise measurements] melt a stick of butter..add a couple cups of ketchup........several squirts of yellow mustard.......a handfull of brown sugar...about 10 to 15 "glugs" of worchestershire sauce......same amount of texas pete hot sauce..and enough vinegar to make you pucker a bit......just taste and add till you like it.........once you try it.i doubt you'll ever buy bbq sauce again
corn on the cob.....if you can find mirhi corn.....mmmmmmmmmmm peel the husks back...remove the silk.....sprinkle with old bay and close the husks back up.....toss on the grill....kep turning
usually..macaroni or potato salad
Potato and Cucumber Salad
(the amount of ingredients depends on how much you want to make)
potatoes, boiled and diced cucumber, diced sweet pickles, chopped tomatoes, diced onion, diced salt mayonnaise mix together ingredients, and mix with enough mayonnaise to "make wet", serve immediately.
Variations:
add a little yellow mustard drizzle a little vinegar into vegetables before adding the mayo add black olivesĀ·
Macaroni Salad 1 lb. Macaroni, cooked and drained 2 hard boiled eggs, chopped 2 ribs of celery, chopped 1 carrot, chopped Combine together, set aside. Dressing:
1 cup sugar 3-4 Tbsp mustard 1 cup mayonnaise 1/3 cup vinegar Combine well and pour over macaroni. Tastes best if it sits in the refrigerator overnight.
for dessert?....cant hardly beat pie
Glazed Strawberry-Rhubarb Pie
pastry for 2 crust pie
1/8 tsp. salt 2 c. fresh strawberries 2 Tbsp. butter or margarine 1 1/4 c. sugar 1/3 c. flour 2 c. fresh rhubarb cut into 1 inch pieces 1 Tbsp. sugar Combine 1 1/4 c. sugar, salt and flour. Arrange half of the strawberries and rhubarb in pastry lined 9 inch pie pan. Sprinkle with half of the sugar mixture. Repeat with the remaining fruit and sugar mixture, dot with butter. Bake at 425 degrees for 40-50 minutes, or until rhubarb is tender and crust is browned.
i know theres a million other things we all enjoy......i cant believe i left out ice cream or watermelon.....but .ahh well

| the summer bbq Posted: 7/11/2012 1:45:04 PM | I'm a fan of hamburgers... not the preformed frozen ones, but the ones where you take fresh ground beef, add a few spices (nothing overly heavy), flatten out the patty so it's quite thin and cooks quickly (I hate feeling like I have to dislocate my jaw to eat a burger) and serve it with some montery jack cheese and grilled peppers... or have some carmelized onions and mayo - not miracle whip, mayonaisse...
A side of greens spritzed with lemon wedges and you have a wonderful and light meal for a nice Sunday afternoon... | |

some "Indiana" sweet corn.......it IS the best out there! Mashed Potato Salad Candied Yellow Squash Fried Cabbage Fresh sliced Tomatoes and Strawberry Shortcake for dessert (We use Sara Lee Poundcake instead of shortcakes)
Homemade Peach Lemonade because my Dad loves it! (and my Sis and I can sneak a shot of vodka or rum in it without him knowing we are drinking!!) | |

| the summer bbq Posted: 7/12/2012 11:32:31 AM | Well, I always do a big mix of things so I have meals for a few days with that "to die for" grill-bbq flavor.
Chicken thighs that have been marinated in worcestershire, then smoked with mesquite chips while grilling. Big Beef Ribs that have marinated a couple of days w spices and fruit, with lots of BBQ sauce when grilling. Very thin hamburger patties then stacked 3 high w cheese in-between, grilled with BBQ sauce. Hebrew National Jumbo Hot Dogs. Grilled mix of Hot Chilies. Grilled thick Onions slices. Grilled Peaches and maybe Pineapple.
With Potato Salad, Cottage Cheese and Fresh Pineapple, Broccoli with cheese sauce, Baked garlic herb bread, sliced and grilled w a little butter.
Sometimes, when my children were at home, they would alternate the salads with Pea salad and Macaroni salad and we always also had grilled Pork shoulder steak like Micki. They loved pork steak, marinated in soy-worcestershire-garlic, so often some sweet potatoes were grilled too. It sounds like a lot of food, but I rarely got more than two sometimes three meals out of it, because it was usually 6 or more people for a weekend.
Just me alone today. I am still going to grill at least three meats and the rest, just in smaller portion and it lasts a week! Right now I am on a vegetarian diet, so it is going to be Portobello Mushrooms, corn-in-husk, chilies, peaches, pineapple, green tomato, onions, beets, sweet potato. Just as excellent!

I love summer cooking but this heat and humidity SUCKS big time. Still cooking outside beats cooking inside and heating up the place and easy clean ups for sure. Would love to have some roasted pig in the ground on a spit , pressure cooker or what ever. Love Ribs also. U can micro corn with husks and silk on in micro for 8 minutes and a little water in a bowl n using gloves the husks n silk remove all at once. Oh first cut the huge end off where it attaches at the corn stalk. ( So it sides easily) | |

I grill, roast and microwave corn (though only in a pinch, I try not to use the microwave).
All I do is remove the dark green outer husks, 2 - 4, cut off the black silk and little hanging leaves at the top of the husk, wash the outside and grill, roast or microwave fully whole. Afterwards I hold onto the stalk at the bottom with a towel, then pull 1/3 to 1/2 of the husk and silk all the way down to the stalk. Then I hold the top of the cob with a towel and break off all of the husks, silk and stalk at one time. The stalk will break off from the cob easily once cooked. Remove the few remaining tiny silk and it is all done.
If I have had the corn a few days, and know it is going to be a little drier than I would prefer, I just prepare it as above and soak it overnight in distilled water, salt and sugar. I find it easiest to put the corn, stalk ends up, in a pitcher (preferably deeper than the corn is high) and pour the water mix to the top. Rarely will they try to float if they are packed in there, but if they do, just balance a plate, can or something on top of them. They rehydrate perfectly through the husk and it also hydrates the husk enough that if you are grilling they do not burn before the corn is cooked. This is also the best thing to do with corn that is starchy and usually corn gets starchy because it has been off the stalk too long and the sugar turns back to a starchy unsweet flavor.
Corn cooked in the husk and silk is so delicious that it doesn't need butter at all. MMMMM

oh.and msmicki?..........try some mirai sweet corn........comming from lancaster county pa...i always thought we had the worlds best sweet corn...........then i had some mirai..........the differance is amazing..........sure..it tastes like corn..........only....more so.........it costs a bit more .....but man oh man is it worth it | |

I said I try not to use the microwave much after I said I microwave corn on occasion. It certainly wasn't a direction to people. I have my reasons for not using it much.
I always say if you're having a bad day take it out on the guilty party.

Normally I probably wouldn't have taken notice of it, but I was horribly oppressed by the heat today and I was in air conditioner. Sometimes I go crazy being cut off from the outdoors and required to stay in an artificial environment. I am a person that needs to touch the earth and breathe natural air, for goodness sakes. I NEED to be back living on the beach, because I can take the heat that way.
I don't think you are crazy at all for microwaving corn, I love the microwave for steaming vegetables, they come out perfect. However, I am unable to get definitive information that I can see for myself that microwaves do not change the molecular structure of food. It doesn't seem like it should, but I have never been able to get definitive information. There is much more info that says it does and that is not something I want.
I did a test once for 2 weeks. One week, I ate all of my vegetables microwaved and another week I ate all of them lightly steamed, or stir-fried; same vegetables, same amounts, same degree of cooked (tender crisp). I most definitely felt better with the steamed and stir-fried, but what if there were factors I am not aware of that caused the difference in how I felt? I still do not know if microwaves are as safe as we are lead to believe. Actually, the microwaved veggies were the second week.

I find- moonie- if I set the corm in a bowl with some water to soak (plain water) sometimes I do this n sometimes not- before mirco.. I thought it would make it moisture. Seems the same to me. Just so good n easy. Just make sure U use the pads to pull them out n hold from the cut stalk end upside down n shake over a bag and walla ~all the silk n husks gone. Hope this helps. | |

If they are large, then that is going to take 10-12 minutes. Let them sit in the microwave for 1 minutes after the time is completed, so they finish cooking. Microwaves boil the water inside of food. When the microwave goes off, the food is still boiling inside, like a pan on the burner after you turn it off. | |

for a backyard bbq it's hard to beat burgers but i like to do fresh salmon covered in dill, onions, peppers and lemon.
