...I found a couple old threads discussing the good/bad about Stevia, but nothing in the way of recipes. I have used it in beverages (Coffee/tea) and even sprinkled on cereal.

Has anyone had any luck baking with Stevia and if so, any good recipes to share?

Do a search on food network website, you should be able to find some useful information. I've used it successfully in cupcakes, but I prefer raw or unrefined sugar.

I haven't used Stevia yet.
I've used Splenda for cookies and cakes and they came out considerably good considering they were sugar free,
and yet Splenda is terrible in coffee or tea where I prefer sweet and low for those.
You'll just have to experiment with many of the sweeteners to find out which ones work best for each individual situation.

Sugar provides bulk in recipes that stevia does not. You cant just sub one for the other. Most people then use a combination of stevia, erythritol or xylitol and or inulin. I don't use sugar or honey in my baking at all anymore, though I occasionally use honey in sauces.
