| | LEMON BARS - The summer dessert Page 1 of 1 | I made lemon bars today, I think it is the best summer dessert, not very sweet and lemony, translucent and yummy. I used the recipe below which I have used many times and it is always successful. I zest the lemons before I squeeze them, and use all the lemon zest, which is more than 2 tablespoons, but the more the better. It takes about 40 minutes of baking total, and another 10 minutes for mixing the ingredients.
This recipe yields: 20 squares or 40 triangles or bars.
Ingredients For the crust:
1/2 pound unsalted butter, at room temperature 1/2 cup sugar 2 cups flour 1/8 teaspoon kosher salt
For the filling:
6 extra-large eggs at room temperature 3 cups granulated sugar 2 tablespoons grated lemon zest (4-6 lemons) 1 cup freshly squeezed lemon juice 1 cup flour Confectioners' sugar, for dusting
Directions:
Preheat the oven to 350 degrees F.
For the crust, cream the butter and sugar until light in the bowl of an electric mixer fitted with the paddle attachment. Combine the flour and salt and, with the mixer on low, add it to the butter until just mixed. Dump the dough onto a well-floured board and gather into a ball. Flatten the dough with floured hands and press it into a 9 by 13 by 2-inch baking sheet, building up a 1/2-inch edge on all sides.
Bake the crust for 15 to 20 minutes, until very lightly browned. Let cool on a wire rack. Leave the oven on.
For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 30 to 35 minutes, until the filling is set. Let cool to room temperature.
Cut into triangles or bars, and dust with confectioners' sugar. I keep them in the refrigerator, in a big tupper, layered, with wax paper between layers. | |

I remember looking up recipes for them once and was surprised how many different versions with varying ingredient amounts. 2 cups Lemon vs. 1 cup. 2 cups sugar vs. 3. 4, 5, or 6 eggs. I ended up coming up with my own (averaged ingredients) and it seems to work. I guess you just can't ruin Lemon Bars? | |

How do I print recipe. Looks tasty.
Yep. Just Select the text you want to print, hit print on your browser, and then find where is says "Print Selected" and choose that. This way you print just the text you want (not all the other web cr*p) and save ink. | |
