| | a pan fried fish dishPage 1 of 1 | Start cooking some Pene pasta when you are about 12 minutes from dinner time. Salt the water well. When you think you have salted it enough…add more salt. Remember you are pouring it out but all pasta should be good in heavily salted water.
Take a can of Petite green pea’s and mash them up then put through a sieve (throw away the skin) this should be very smooth and creamy…add fresh ground pepper and melted butter and put in a squeeze bottle (like a mustard/ketchup bottle) shake well. Put the bottle in Hot water (do not let bottle get water inside).. Shake every once in awhile to keep warm...you don't want to cook this....just want this to stay very warm.
1 cup of Small Portobello Mushrooms chopped fine sautéed in salted butter. Once dark add a little white wine, cook about 5 minutes longer until liquid is just about gone.
Make a cream cheddar cheese sauce using heavy whipping cream and a small amount of Velveeta cheese. Add the mushrooms to this sauce and add freshly ground pepper and salt to taste. Throw in about 30 capers. Add in the pasta. Now here you can stir in some sour cream if you like…sometimes I do, sometimes I don’t.
Pan sear a square of salted thick fish of your choice ( I like COD) in olive oil, just until it is good and brown (crunchy) and flakes nicely. Do not over cook fish.
Plate it like this:
First put down the pasta and mushroom cream sauce, then add the fish on top, now take your creamed pea’s and swirl it all around or zig zag it back and forth over the fish. Top it off with a sprig of Cilantro.

I like Velveeta and my kids love it for grilled cheese sandwiches as well as mac n cheese. I like cheese sauce from actual cheese better, but I cook more for their tastes than mine most of the time, so what ever works to keep the pack happy. Bacon crumbles,,, oh yes.....

that's ok micki, i'll say it.
velveeta is crap. i don't even consider it cheese. it's not even refrigerated. it's only one step above cheeze wiz (shudder). why would you buy cheese that isn't refrigerated? shouldn't that alone tell you IT ISN'T CHEESE. it's cheese "product".
i don't understand why people insist on eating this crap. or any processed cheese for that matter. it doesn't even taste like real cheese.
and for the record, i don't know how anyone eats paula dean's cooking. my mom has made a few of her recipes and none have been worth making a second time.

I have done this without the cheese at all and it is still very good.
Velveeta is just easy and stays creamy. As far as it not being a real cheese...I can't argue with him on that because I do agree.
I was done with Paula the day she deep fried a twinkie.

I think it was invented in the '50s to survive a nuclear war with the Soviets. Radiation resistant in the foil and needs no refrigeration.
Velveeta and skim milk are two things I NEVER touched again after I left mom's house.
But on topic, this dish sounds just fantastic, but I'd probably just nix the cheese all together and use white wine for the sauce. | |
