Well, my "someone" has two major interests, grilling and heavy metal music, and this little girl is not sitting through another Pantera rock-out session. So I am going to put together a grilling gift basket for him. Anyone have ideas for marinade mixes (dry seasoning mixes)???? | |

| Need marinade mix ideas Posted: 10/21/2005 8:15:42 AM | It has been a while since I have made this and the beauty behind this is that you can customize it to your liking. I will give you MY favorite combination and you can take it from there. Picked this one up overseas and it works GREAT on chicken legs, wings, breasts, and pork ribs. Not bad on steak. The most important part of this is the 1:1 ratio, everything else is to taste.
1:1 ratio vinegar/soy sauce (if you can find it, goto an asian market and get Silver Swan) lemon juice (to take the edge off) (you can also use 1 lemon 1/2 squeezed in, the other half sliced thin, add some orange slices if you like) 1 sweet or red onion, sliced thin garlic cloves to taste beer (lager) to taste salt and pepper
Season your meat with your favorite seasonings. and set aside. you can also add your favorite seasonings to the marinade mix
mix all of the ingredients and get it to taste (taste will be strong will lighten up some when cooked)
Put meat in and allow to marinate for several hours (over night if you prefer)
Light grill and prep for medium heat.
Put half of your food on the grill and cook evenly on both sides about half way done. remove meat and put back in mix, and put other half of meat on grill and do same. Cook all the way thru and serve
You can probably do the same on the broiler.
The beauty behind this marinate is that you will discover that slight changes will have drastic impact on flavor and you can have a lot of fun with this! | |

| Need marinade mix ideas Posted: 10/27/2005 12:17:24 AM | 1 cup white vinegar 1/2 cup veg oil 1/4 cup worcestershire sauce 1 Tbs Sea or Kosher salt 1 Tbs white sugar 1 tsp garlic powder 1 tsp onion powder 1 tsp white pepper 1/2 tsp celery salt Mix/shake till well dissolved. I put mine in a old worcestershire bottle with the shaker top. You can marinate the chicken in the sauce for up to 2 hrs before cooking. Grill chicken. | |

OT, I would like to find a great semi sweet jerky marinade so mine will taste like the stuff you get at the corner convenience store. Any suggestions? | |

I have never really worked with marinades, so while I have a good grasp of spices and what works well with what, I have no clue of quantities and such. I guess I could just buy the little premade envelopes, but I thought it would be nice to do home made blends. Speak up AZ!!! I know you can help me ......  | |

| Need marinade mix ideas Posted: 10/27/2005 11:40:28 AM | There is a new spice store, and I tried to find it on the web with no luck, but they are located at Preston and LBJ on the south west corner. It is a national chain, and is a cool place. The only thing they sell is spices. They are cheaper than the grocers would be, and they are extremely fresh. They sell empty bottles so you can mix your own concoctions. But they sell good blends as well.
I did this for a friend one year, and printed labels for my special blends. I gave them cute names, and it was a hit. She loved it.
edit: Found it. Penzey's. They have a web site, so check this place out. All the spices have a large jar in fron of them so you can get a good sniff. The web site is a valuable source for information on spices, too.

I like to put a little oil, season salt, garlic powder, soy sauce and sometimes just a plain teriyaki mix. Try it folks. They come out mighty tasty! | |

Great for Lamb marinade is Rosemary, mint and mustard
Perhaps you can supply these and label them with 'lamb' in the gift.
Pack some honey, soy sauce, tomato sauce (yes!) sweet chili sauce and an array of spices such as paprika, ginger powder or flakes, onion flakes or salt, the obvious garlic .. just be imaginative. | |

1/4 C. hoisin sauce 1/4 cup white wine 2 T balsamic vinegar 2 T vegetable oil 1 t. hot Asian chili sauce Salt and pepper
Ginger mint Mayo Sauce
1 Cup packed fresh mint leaves 12 coarsely chopped green onions 1/4 Cup drained pickled ginger coarsely chopped 1 tsp grated lime zest 3 T. lime juice 1/2 Cup mayo 1/4 plain yogurt Salt and pepper
Marinate the salmon at least overnight...... Don't Not use the Sauce
This is ethereal.....mouth watering...somewhat Asian, obviously by the ingredients....
Always' always when baking fish....take it out a little underdone, rather than overdone..... it continues to cook somewhat when you remove it from the oven..... | |
