Here's the recipe granny used ... she got it from grandad's side, and being Scottish they used lamb. Mom used to make Shepherds Pie with ground beef instead of the lamb. Either way I didn't eat it.

Shepherds Pie

1 lb. mince lamb, or leftover lamb cut into bite-sized pieces
1 – 1-1/2 lbs. potatoes
2 small carrots, diced
2 oz. fresh peas
1 oz. plain flour
1 tbsp. tomato puree
1 oz. butter
4 tbsp. milk
1 large onion, chopped
1 oz. mushrooms, sliced
1 bay leaf
1/2 pint lamb or beef stock
dash anchovy essence
grated cheese

Dry fry the mince lamb with the onion, bay leaf, mushrooms and carrots for 8-10 minutes. Add the flour and stir for 1-2 minutes. Reduce the heat slightly and slowly blend in the stock and tomato puree. Keep stirring until, until the mixture starts to thicken. Add fresh peas; cover the mixture and simmer gently for 25-30 minutes. Remove the bay leaf and place in an ovenproof serving dish.

At the same time, cook the potatoes in boiling water for 20 minutes until tender. Drain well, mash with the butter and milk and mix well. Spread on top of the mince mixture and sprinkle over with the grated cheese.

Bake for 15-25 minutes in a preheated oven at 400?F. Commonly the meat juice will sizzle slightly up the side and over the potato. Once cooked serve whilst still warm with vegetables

Mmmmmmm.....I love shepherds pie! I think I'll make one for dinner tonight! Mine is plain and simple.

Ground beef (not a big fan of lamb) mixed with onions on the bottom of the pan, a layer of canned or frozen corn, and then mashed potatoes on top with a bit of grated old cheddar cheese.

i'm starting to miss alot of home cooked type of meals like shepherds pie & meat loaf
here is my mom's recipe:

1 lb hamberger
1 can veggie soup
1tsp worcestershire sauce
1 cup bread crumbs
1/4 tsp garlic powder
salt & pepper
5 potatoes mashed
grated cheddar

heat oven to 325 f. mix first 6 ingredients & place in a casserol dish.bake for 1 hr.cover top with hot spuds.sprinkle with cheese.broil untill brown.

just make sure the potatoes have lots of butter in them so the leftovers are still somewhat smoothe.lumpy mashed potatoes are icky.

Veggie Shepherd's Pie (meat version too)

Hey All,

I make a mean veggie shepherds pie. Of course you can make it with ground beef... just like my mom used to make!

1 Package Yves Veggie Ground Round
1 Can Cream of Mushroom Soup
1 Ear of Corn (or one cup frozen or a can)
1 Onion (medium to Large)
Oil for frying
1 Pound of Potaters
1 cup of Milk or soy
1/2 cup of Butter
Handful of grated cheese
Garlic (fresh or powdered)
Salt
Pepper

All right kids you can get creative with this ... like add some mushrooms to the "meat" mix.

First peel potatoes and cut into chunks so they cook faster like cut it in 4 pieces. Put them on to boil.

Chop up the Onion

Put some oil in a fry pan and fry the onions until they start to brown. Mediumish heat

Add, Corn, ground round and 3/4's of the can of Cream of Mushroom Soup, sprinkle with garlic, pepper and salt.

Stir and heat through. Taste it to make sure it's ok and adjust seasoning to your pallet.

put this mixture in some sort of baking dish.

Drain the potato's once they are soft.

Put milk, butter, salt, pepper and about a tablespoon of dried garlic into the pot you cooked the potatoes in. Over medium low heat until milk is warm and butter is melted. Be sure to stir so you don't burn the milk.... lower heat is best

Take it off the heat and add the potato's and mash mash mash or use the electric beaters... whatever you like really. Just don't beat or mash too much or the taters get starchy. Again taste and see if anything needs adjusting... taters take lots of salt... they suck it all up.

Spread the mashed taters over the "meat" mixture. Spread the remaining cream of mushroom soup on top the taters then cover with grated cheese.

Cover the dish bake in oven at 350 Celsius for 20 min then take the cover off the dish and bake until cheese is all nice and melty.

The key is not to over bake/cook or the ground round will get rubbery.

Any questions? Ask me? my friends call me momma Martha...

If you are using real meat brown the onions remove from pan then fry up the ground beef however one cooks it and drain the fat then add the onions back to the pan and continue.

Well it tastes good but it is greasy. I guess it would be better if the ground beef was cooked and drained first. And there needs to be more vegetables than most people put in there. That would make me like it better. Tastes good though even with the grease.

I make mine with a layer of creamed corn between the meat mix and the spuds. Makes it nice and moist and a bit sweet as well.

The MOST important thing, I've found, is the preparation of the meat! This was, after all, poor folk leftovers... So the day after the meat's been cooked, and ate, break out the meat grinder to make your dinner~. It makes a difference using day old & doing it all properly, in my opinion :).

Never used cream corn tho, I'll have to try that Asante :) Might be good!

browned hamburger meat with onion and worcestershire sauce
whole kernel corn
french style green beans
mashed potatoes
pats of butter on top

layer all of these items in casserole dish just as they are listed~~bake long enough for corn and green beans to heat, and butter melts. yes, it is good with a little ketchup on it!!
everything you need for a meal~meat, veggies, and potatoes. add a salad and bread~ready to go. quick and easy.

Simple shepard's pie is just browning hamburg with onion and then layering that in a baking pan. Top it with canned corn and then mashed potatoes. Top with butter and bake. I like to add peas and carrots to my hamburg mixture. Once that cook I add some flour and cook for a few minutes and then add some beef stock to make a gravy. Then follow the other steps

I don't pre-cook the beef, just mix it like I was going to make meat loaf. In the pan I usually put some corn meal first, or if I'm feeling particularly decadent, I'll use a pie crust on the bottom (absorbs fat, never served to eat), then some corn meal over that. Meat mix goes in next at least 1" thick, then a layer of diced carrots and peas with a little parmesan, another layer of meat about 1/2", a layer of veggies again, then garlic smashed potatoes on top with some pats of butter and a light dusting of Old Bay for kick. Into the oven to bake for an hour or so, until it comes up to temperature. Let rest for 15 minutes whilst any other veggies are steaming and serve.

I really need to try the corn and especially creamed corn add-in instead of the carrots and peas, that sounds really good.

The meat's good cold for sammiches, and any leftover taters can be wrapped in puff pastry (or flattened out canned biscuits) and re-baked as a poor-man's knish.

Hello!! I too happen to love shepherds pie. It was a staple food at our house growing up with 7 siblings, :o). I have only tried it with minced beef on the bottom, a layer of mixed carrots and peas in between and mashed potatoes on top. Then to add to all the calories a good sprinkling of cheddar cheese on top of the mashed taters and dollops of butter. The cheese and butter melted down and created a mouth watering crust on top of the potatoes. Nothing tasted as good after a afternoon playing in the cold and snowy outdoors. Brings back good memories.....
