I think that we can all agree that there is nothing like a good sandwich. The combination of flavors and textures that a great sandwich can provide is only limited to the makers imagination. So, with that said, let's hear everyones favorite sandwich recipes...

Chicken Parmesan Sandwish

4 skinless boneless chicken breasts
1 loaf of crusty french bread
1 can or recipe of your favorite pizza sauce
1/2 cup of italian seasoned bread crumbs
4 slices mozzerella
4 slices provolone
olive oil

Butterfly chicken breasts, and pound to about 1/4 in thin. Press in bread crumbs until well coated. (You can use an egg wash if you like, but I never have an issue with the breadcrumbs not sticking.) Saute chicken breasts in olive oil in a medium hot pan until nice and brown. While chicken breasts are cooking, slice french bread in 1/2 (horizontally \ lenthwise) and toast under a broiler, once toasted spread pizza sauce on the bottom, and put slices of cheese on the top, and broil again until sauce is warm and cheese is melted. Add chicken breasts, fold sandwich over, and serve.

Chicago-Style Italian Beef Sandwiches

1 (5 to 7 pound) rump roast
2 cups boiling water
2 beef flavor bouillon cubes
1 teaspoon dried marjoram
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon hot pepper sauce, more or less, depending upon taste
Salt and pepper to taste
2 tablespoons Worcestershire sauce
6 garlic cloves, peeled and mashed
1/2 cup chopped green bell pepper
2 or more loaves Italian or Vienna bread, French
or any hard, crusty bread.

Place roast on a rack, in an open 13 x 9-inch roasting pan with the rack in it. Preheat oven to 325 degrees F. Bake, allowing 25 minutes per pound. Roast will be rare. Cool, and slice very thin. To the drippings in the pan, add the boiling water, bouillon cubes or granules, (1 bouillon cube for each cup of boiling water used). Add marjoram, thyme, oregano, hot pepper sauce, salt, pepper, Worcestershire sauce, garlic cloves, and chopped green pepper. Simmer for 15 minutes. Add the thinly sliced beef and cover. Marinate in gravy in refrigerator overnight. The next day, heat thoroughly, and serve warm on the French bread, along with a crisp, green salad.

Crab Melt Sandwiches

1 pound fresh lump crab meat, picked over
2 tablespoons fresh lime juice, or to taste
1/2 cup mayonnaise
2 teaspoons coarse-grained mustard
4 (1-inch thick) slices Italian bread, with crust removed
4 teaspoons freshly grated Parmesan
Unsalted butter, softened, if desired

Preheat broiler. Put crab meat in a bowl and add 1 tablespoon lime juice and toss to combine.
In a small bowl, whisk together remaining tablespoon lime juice, mayonnaise, and mustard until
smooth. Pour sauce over crab and toss to coat. Season crab mixture with salt and pepper and
chill, covered, for 30 minutes. Lightly toast bread. Lightly butter toast. Spoon one fourth crab mixture into 1/2 cup measure. Holding toast on top of mixture in measure, invert crab onto the toast an set on an ungreased baking sheet. Repeat procedure with remaining crab mixture and toast and sprinkle 1 tablespoon Parmesan over each sandwich. Broil sandwiches about 3 inches from heat until cheese is melted and golden, 1 to 2 minutes.

Fiesta Steak Sandwich

1 strip steak
1 hoagie roll
Sliced avocado
Sliced tomato
Shredded lettuce
Prepare strip steak by pan frying or broiling. Prepare Fiesta Mayo while steaks are cooking. Place a sliced Cheddar or jack cheese on the steak during the last minute of cooking to melt.

Fiesta Mayo
1/2 cup mayonnaise
1/2 teaspoon garlic powder
1/2 teaspoon crushed red pepper
1 teaspoon fresh finely diced cilantro
1 teaspoon lime juice

Mix all ingredients together until creamy.
Toast a hoagie roll. Spread fiesta Mayo on both sides of the bun. Place the steak with cheese on the bottom side of the roll. Top with sliced avocado, tomato and lettuce, then add the top side of the roll.

Grilled Eggplant Burgers

6 slices peeled eggplant, 1/2 inch thick
2 tablespoons olive oil
4 ounces goat cheese
1/4 cup sun dried tomatoes in oil
1/4 cup pine nuts
12 thin slices good quality bread, toasted

Grill, broil or sauté the slices of eggplant that have been brushed with oil until brown and soft.
Place the eggplant slices on the bread and top with goat cheese, sun dried tomatoes and pine
nuts. Top with remaining slices of bread and serve.

This seems odd, but trust me!!!

Upgraded Tuna

2 slices faccocia or similar bread
albacore tuna mixed with garlic mayo, small diced apple, pepper, dill
pear sliced thinly
brie/garganzola cheese

Slather one side bread with tuna and put sliced pears, then cheese

Grill in panini or on grill top! Sooooo good and very easy!!!

Good ol' fashioned peanut butter and banana...especially toasted! (or fried like the King)

Smoked Salmon and herb cream cheese with cucumber.

The beauty of sandwiches is that they can be anything you want them to be...even jellybean and marmalade sandwiches if you so desire! Just be sure to heap them up as hight as possible!!



But most of all I like my sandwiches with soup....for dunking.

Cucumber Chicken Pita: When it's too hot to cook, try this refreshing sandwich.

1/2 cup plain yogurt
1/4 cup finely chopped cucumber
1/4 cup chopped cilantro
4 large pitas
fresh lettuce and/or spinach leaves
6 ounces thinly sliced fully cooked chicken breast
1 small tomato, thinly sliced
1/3 cup crumbled feta cheese
in a small mixing bowl stir together yogurt, cucumber, and cilantro.
place a pita bread round on a plate. top with greens of your choice, chicken, tomato, and feta cheese. drizzle dressing on top, roll up the pita bread.



Stacked Chicken Salad Sandwich: an old favorite in a new shape.

4 7- to 8-inch flour tortillas
1/2 cup tub-style cream cheese
1 cup deli chicken or tuna salad
3 leaves iceberg lettuce
garlic or pimiento-stuffed olives, pitted ripe olives, gherkins, or cherry tomatoes (optional)
spread three tortillas with cream cheese, then top each with some chicken or tuna salad, then lettuce leaves, stack tortillas; top with remaining tortilla.
cut stack into wedges, and top with olives, gherkins, or tomatoes.

Cobb-Style Chicken Sandwich - chicken, cheese, bacon, and avocado are all part of the classic cobb salad that inspired this snappy tasting meal-on-a-bun.
4 slices bacon
2 large boneless, skinless chicken breast halves (8 ounces total)
1 tablespoon honey
feta, swiss, smoked cheddar, or jack cheese
whole wheat buns, split and toasted
dijon-style or coarse-grain mustard
1 small tomato, thinly sliced
1/2 small ripe avocado, sliced
2 fresh lettuce leaves
fresh chives or cilantro
cook bacon over medium heat until crisp, drain on paper towels; set aside. reserve 2 tablespoons of the drippings in the skillet; discard the remaining drippings.
lightly pound each chicken breast half between 2 pieces of plastic wrap. from the center to the edges, pound the chicken lightly to 1/4-inch thickness.
cook chicken in reserved bacon drippings over medium heat for 5 minutes or until tender and no pink remains, turning once. Brush chicken with honey; top with cheese.
spread bun halves with the mustard. Add the chicken with cheese, bacon, and, tomato, avocado, and lettuce leaves. Top with roll or bun tops. garnish with chive or cilantro
simple side dishes, potato or corn chips and strawberries or grapes, keep this meal quick.

Grilled grouper sandwich is king in Florida.

Lot's of Cubans have migrated here bringing with them their wonderful cuisine.
There are Cuban sandwich shops everywhere. Really good. They marinate
the pork roast and it is the best pork that I ever tried. Try one at home.
I prefer to do it on the rotis.

Honey Brie Chicken sandwich

Grilled chicken breast sliced and in pieces
Brown sugar
Brie Cheese
Watercress
red onion

With a really light and airy facoccia bread.......... sliced.... and fried on the inside.. in butta!

I love a french dip but I can never get the au juice right.....it has to be more than just reduced drippings. A good french dip is the best.

Okay, so I was going to start a thread like this, but this one is here, so i'll just bring it back.

Today I made a Tuna Fish sandwich. It was exceptionally good, so I thought id share.

Albacore Tuna.
Mayo
Shredded Chedder
Water Chestnuts
Onion Powder
Garlic Powder
Shredded Lettuce

I just used regular bread. But I mixed the mayo and tuna, sprinkled with a half cup of shredded cheese and quarter cup of chopped water chestnuts and quarter cup of shredded cheese.

sprinkle with Onion Powder and Garlic powder to taste and mix well.

Place on bread..

Enjoy!!

Good idea, Sanderick! I love water chestnuts in tuna/chicken salads. Good crunch. If you're feeling like something different some time, try the tuna salad with all your ingredients but use cream cheese to bind it. Some grn onions add kick too. It's awfully tasty.

Sounds like you got a good deal on the salmon, Raz? It's soooo versatile and healthy.

A judicious touch of celery salt works well with tuna salad, WW. Note the "judicious" part ... you can always add, but it's hard to take it back.

I like sandwiches, but I don't eat them often ... muffaletta, veal sandwich (with hot peppers ... mmmm), monte cristo, roast beef au jus, pulled pork, Philly cheese steak, crab/lobster salad ...

I'll dig up some of my old recipes to share, however.

WW,,, Wow, i've done that before with the cream cheese and it was great. I had also added coktail shrimp too. I like the green onion idea and may try that next time.

So, the sandwich I am making today is going to be a chicken curry sandwich, with shredded lettuce.

I'm going to sweat some garlic and onions down, add a little flour to make a roux, then add a little mushroom soup, salt pepper and curry powder. Let it co0k down and thicken and top my chicken chunks with the sauce.

Put in a sandwhich press til crispy on the outside. Simple, yet my favourite.

The last sandwich I made recently was............

Butter 2 pieces of Rye bread and toast on skillet, while toasting layer pastrami and swiss cheese, top with thousand island, oh yeah and add heated saurkraut too.

Cut the sandwich in half and place on a papertowel so the bread doesn't get soggy.

Yum!

Dork alert or brain fart. In my original post to bring back this thread I typoed my sandwich.

I said shredded cheese twice when the quarter cup was lettuce. Of course I just used handfuls, but thought i'd ballpark the cup measurements. lol

Anyways, I Love the sandwiches so far. Keep em coming.

my last sandwich

12 grain bread
mango chutney spread on one side
poppyseed dressing on the other
mozza on the mango then grilled yellow peppers
sliced onion on the poppyseed and spinach piled ontop
put together and devour
meatless yumminess

for my boys, per request, i took out the spinach and onion, added leftover pork that was marinated in sundried tomato mixture

avacado (organic)
Old cheddar and mayo (gotta be helmans)
