Excellent quick yummy desserts :)

Now, can you opt out of the pineapple?
I love it, but others do not..

As well, for the cheesecake, i find that whenever i try to make my own graham cracker crust, the damn thing falls apart.

TIPS?
other than buying a premade one - lol

u can use any fruit from a can as long as you save the juice for the bananas

for graham crusts: add a little extra butter, make the crust thick and always chill before hand

Here is one I take to pot lucks or office functions. Looks fancy, tatses great, and super simple.

You will need:
1 angel food cake (premade from the grocery bakery dept)
pint of fresh strawberries or a bag of frozen sliced (no syrup / thawed)
small box of strawberry jello
16 oz Cool Whip (thawed)

To assemble:
In a medium bowl mix sliced berries with 1/4 cup sugar, refrigerate for at least an hour (if using fresh berries add a tbls of water), drain before adding to cake.
Using a long bread knife carefully slice off 1 to 1 1/2" from the top and bottom of cake (you want to have 3 layers.
Mix 1/2 box of jello with the cool whip.
Spread 1/3 of cool whip mixture over bottom layer of cake, top with 1/3 of the sweetened berries, top with middle layer of cake. Repeat layer and place last layer of cake on top. spread top of cake with remaining cool whip mixture and berries. Chill well before slicing and serving.

fresh creamy water packed mozzerella with fresh strawberries, blueberries, raspberries.

seedless red or purple grapes with brie.

cut up any ripe fruit:
nectarines, skinned peaches, berries, pears, grapes, pineapple, apples, any citrus
add a bit of sugar and chopped pecans or almonds. let the mix sit in the fridge till it develops
a syrup; this happens pretty quickly. spoon over real vanilla bean or french vanilla ice cream, cream fraiche, or an ultrarich blend of sour cream and cream cheeze.

the above are quick, yummy and require NO cooking
what could be easier and better than fruit besides something decadently chocolate?!

Puree the raspberries in blender.
Press through a fine sieve to remove seeds.
In a medium bowl, beat together the mascarpone, sugar, vanilla and raspberry puree with electric mixer until smooth and fluffy.

I've got one I just discovered... but don't read the Jell-o thread before you make it LOL

1 pkg Jell-o (or other fruit flavoured gelatin dessert brand -can be sugar free variety with no harm to taste)

1/2 can sweetened condensed milk

1 container cool-whip (can be light), THAWED (I forgot once, big oops)

1 can your choice of pie filling to complement flavour of jello

1 pre-made graham or shortbread crust

Make your Jell-o with the boiling water step only, let chill in a largish bowl in the fridge about 1/2 hour until it's almost set but still a bit runny.

While waiting for the jello to set, spread about 1/3 of the can of pie filling on the bottom of the graham crust (the rest will keep for up to a week in the fridge, or just eat it, or put it on top of hte dessert, it's all good).

When the jello is ready, stir in the sweetened condensed milk and the cool whip (that's why it needs a big bowl).

Pile the jello/cool whip/milk into the pie crust. It will make a mound that's a bit rounded over the top of the crust. Top with more pie filling if you want.

Let chill about 2 - 3 hours in the fridge. It tastes sinfully good, can be any flavour of jello and fruit (I like orange jello and raspberry filing), is easy, requires no cooking, just takes a bit of chill time. My mom tried this yesterday and LOVED it.

Enjoy!

I have another one!

Take one container of cottage cheese, one cup of whipping cream, 1/2 cup of sugar (or splenda works too), and 1 tsp of vanilla flavouring. Beat the whipping cream into the cream cheese until thickened, add the sugar slowly and the vanilla. Serve. This dessert is VERY rich but sooooooooooooo yummy.

^^^^I've never made an angel food cake with a mix, but if the directions call for, let's say, eggs and oil, you don't add those ingredients?

Another quick and easy dessert...

1 package yellow or white cake mix
1 (12 ounce) can any variety soda/pop *

stir together with wire wisk until smooth.

Pour into microwave safe dish and bake on high for 7 minutes. This is done when it pulls away from the edges of the dish.

Let cool and frost if desired. **

*All you add is the can of soda/pop. That's it, no eggs, no oil, no water... nothing.

** I have made this and then cut it up into chunks about 3/4 of an inch square and layered it in parfait glasses with fresh fruit and a mixture 8 ounces of cream cheese, 1t vanilla and 1C powdered sugar beaten together and folded into of 2C whipped cream, whipped (whipped topping doesn't work).

We had creme brulee last night. I found an easier recipe that does not require cooking the custard and straining.

Simply add six yolks to six tablespoons of sugar, with a tablespoon of Madagascar vanilla. Cream this mixture then add one and a half cups of cream (I used half and half). After giving the mix a nice whisk, pour into your custard cups. Make a bain-marie (a warm water bath half way up the middle of the exterior of the cups to prevent a crust from forming on the outside of the custard before the interior is cooked) and place into a pre-heated 325 degree oven for about 35 minutes. The custard should be slightly jiggly when you remove from ven. be careful of the very hot bain-marie water bath as you remove.

Take the cups out of their bath and allow the cups to cool, and place into the refrigerator for at least 3 hours (if not over night). Evenly spread fine sugar across the surface of the custard and torch until golden and bubbly. You may also place these under a broiler until you achieve the same affect.

The result will be 4 to 6 creamy custards with a delightfully crunchy top crust. Garnish with a mint sprig and perhaps a strawberry half or a few blueberries.

I often sub half of the cream with coconut milk for a different take on this classic.

Soften two litres good quality chocolate ice cream (or you can use mint or banana ice cream for this, whatever goes good with chocolate)
Fold in a container of Cool Whip or homemade whipped cream
Put the ice cream/whip cream mixture into a prepared chocolate crumb pie shell (or make one yourself using the chocolate wafers and melted butter). Make a nice smooth surface using a spatula.
Lightly cover with plastic wrap
Put in freezer for at least two hours before serving. Decorate with whipped cream, a bit of chocolate syrup (Hershey's is best) and chocolate shavings or curls.

Great summer time dessert and even little kids will eat it.

Hi this is my own personal choc.chip cookie recipe. My son makes
it for his kids now. Very easy and my grandkids love to help.

Annettes Choc. Chip Cookies

3 c. selfrising flour
1 1/2 c. packed brown sugar
3 eggs
1 t. vanilla
1 c. shorten

I mix my flour and brown sugar together. Than I mix my eggs and vanilla
and shorten together. Than mix these 2 together, I use my hands. Than
I use semi sweet choc chips because it dont make the cookie to sweet.
Use as much as you want, a small bag is good. You can add walnuts if
you want to. I prefer not to, most people just like the chips. Ok now I
pinch off some and make 1 inch balls, just by rolling in your hand. Place
on cookie sheet about 2 inches apart. Now if you want a thick cookie
dont mash it down much, but if you want a thinner cookie pat down a
little more. Bake for 10 min. on 375. Let cool on cookie rack.
My kids use to snick and eat my dough balls, they loved them. The
more you make them the better you will get at it. People dont believe me
when I tell them I made them, cause I can make my all the same size. And
they are very tastey.

This is my own recipe and the only time I ever sold them was for someone
who was sick. So maybe you can carry on my tradition. Hope you enjoy,
Annette

Oh I just about forgot, you can use any kind of chips. I just perfer the semi
sweet and the mint chips.

FRESH FRUIT DIP

1 container any flavor yogurt (one of my fav's for this is black cherry flavor)
equal amount of frozen whipped topping

For the diet conscious-- by all means substitute with low fat for the topping. Does not affect taste.

Dip into with an assortment of cut up fresh fruit. So easy-- so good!!

Chocolate Log Roll

My mother has been making this for years so simple...

#1

Take a package of chocolate wafers the thin ones
Make real whip cream (med carton) whip with a tsp vanilla and 1/4 cup sugar till thickened
Take one cookie and spread whip cream take another cookie and do the same repeat until you have built a log on foil lined cookie sheet (reserve a couple of wafer usually the broken ones for the sprinkle on top)
Cover generously with remainder of whip cream and sprinkle with broken wafer place in fridge for a min.of 4 hours you want the wafers to absorb the moisture from the cream so they are like cake.....
To serve cut on a angle and garnish with a few strawberries (optional)
serves 4-6 depending on size of pieces is you need more make a double log
(side by side)

Voila chocolate log roll

#2

Buy or make a white angel food cake
Poke holes in the top to add your favorite coffee liqueur (kaluha)
Cover with sweetened whip cream fresh or cool whip
Take a Crispy Crunch Chocolate Bar or a couple of Almond Rocca and smash into little bits for the sprinkle on top and sides.

#3

Fresh Fruit Dip

Make Vanilla (regular or calorie reduced) instant pudding add in some Grande Marnier
Cut an assortment of fresh fruit for dipping

take a good-sized wedge of brie cheese, slice through it like you're making a sandwich. put a layer of raspberries on the bottom half, sprinkle with just a touch of sugar, and place the top half back on. Allow the brie to come up to room temperature (around an hour) before serving with toasted slices of baguette, crackers, etc
