| Spinach Salad Posted: 2/26/2006 7:58:10 PM | I really think the warm vinaigrette is the way to go with spinach. For one thing, all things great happen when you add bacon (or preferably, pancetta). Secondly, the heat of the bacon fat will wilt the spinach a little. I dig that.
I don't have an actual recipe written down but I'll give you the one in my head.
Spinach Salad with Warm Bacon Vinaigrette.
Canola oil. Any kind of neutral flavoured oil. A few strips of Bacon. 4 or 6, chopped A shallot, finely diced. clove or 2 of garlic. Finely sliced. White wine vinigar, around a tablespoon or so. It doesn't have to be exact. Salt and pepper
-Start off with bacon with a little bit of canola oil or veg oil. Brown till crispy, and set aside on paper towels. -If you think you need more oil to saute the shallot, then add more. Increase heat to just over medium. Throw in your shallot and sweat untill translucent, a few minutes. -Add garlic, and cook until fragrant, around a minute. Don't burn. -Deglaze the pan with the white wine vinigar. Get up all the nice browned bits on the bottom of the pan. -Pour over a big bowl of spinach. This will wilt the greens a bit. Add the bacon pieces. Maybe throw some hard-boiled egg in. Anchovies. Sliced mushrooms. Whatever you like. A bit of lemon juice/zest wouldn't hurt either.

| Spinach Salad Posted: 2/28/2006 10:31:32 AM | This is the recipe for Sioux Lookout Spinach salad. It is really yummy Ingredients:
***Dressing***
1/2 cup vegetable oil 2 tablespoons raspberry vinegar or 4 teaspoons red wine vinegar 1 tablespoon Worcestershire sauce 1 tablespoon granulated sugar (optional) 2 teaspoons poppy seeds 1 green onion, finely chopped 1/2 teaspoon salt 1 pinch paprika ***Sugared Almonds***
1/2 cup slivered almonds 1/4 cup granulated sugar 2 teaspoons water ***Salad***
2 (10 oz) bags spinach or 3 large bunches spinach 2 cups sliced strawberries Directions:
Place dressing ingredients in a jar or small container with a resealable lid. Shake well. Dressing can be made ahead and left at room temperature for up to 1 day or refrigerated, covered for 2 to 3 days. Flavour improves as it sits.
To prepare almonds, grease a large piece of foil and place on counter. Place almonds, sugar and water in a medium-size frying pan or saucepan.
Cook over medium heat, stirring frequently, until sugar melts. As soon as sugar turns light golden, stir slowly and constantly with a wooden spoon until all sugar is an even golden shade and coats almonds, from 6 to 8 minutes.
Immediately turn coated almonds out onto foil. Don't touch as they're extremely hot. Let cool, preferably to room temperature, then break into small pieces. (if making ahead, nuts will keep well at cool room temperature or in the refrigerator for weeks. If your kitchen is warm and humid, its best to store them in the refrigerator.)
Wash spinach, discarding tough stems, then tear into bite-size pieces.
Place in a large bowl, along with strawberries. (if not serving right away, cover salad with a damp paper towel and refrigerate for up to 4 hours) Just before serving, toss salad with about half of dressing, then keep adding a little more dressing and tossing until spinach is lightly coated. Add almonds and toss. | |

7 cups baby spinach 1 garlic clove, crushed 1 teaspoon butter 1/4 cup sour cream 1 tablespoon lemon juice 1 pinch salt
Steam or microwave the spinach just until wilted, about 3 minutes. Squeeze out the liquid. Saute the garlic clove in the butter for 2 minutes. Stir in the spinach, sour cream, lemon juice and salt. Stir often until just hot. | |

If vinegar is not your thing then try tc substitute crnberry juice. Taste great! Also throwing in a few dried cranberry's with your favorite nut is a nice touch... | |

SPINACH SALAD WITH CREAMY MUSTARD DRESSING
1 lb. spinach, rinsed and torn into pieces 1/2 lb. bacon, fried and crumbled 1/4 lb. fresh mushrooms, sliced 1 c. sliced water chestnuts (optional) 1/2 c. black olives (optional)
DRESSING:
2 hard cooked eggs, mashed with fork while warm 1/2 tsp. salt 1 1/2 tsp. sugar 1 tbsp. pepper 1 clove garlic, crushed 1/2 c. olive oil 1 tbsp. Dijon mustard 5 tbsp. heavy cream 1/4 c. red wine vinegar
Serves 8-10. In large bowl, combine all salad ingredients and toss well with creamy mustard dressing.
DRESSING: Mix eggs one at a time; in order thoroughly blend all other ingredients into mashed eggs. Whisk until smooth. | |

| Spinach Salad Posted: 5/20/2008 6:51:53 AM | | wow,so many recipes for spinach salad....I like to saute some sesame seeds and walnut pieces in maply syrup and just throw that over my spinach ...I first brown the sesame seeds in a little oil,add the nuts and then the maple syrup...just that is enough...you can add what you want to the spinach...seasoned oil, a little lime juice...whatever..just make sure you have nice spinach..I grow my own and of course have real maple syrup... | |

after you prepare your favorite spinach salad, try serving it in individual "BACON BOWLS" I also use these to make Breadless BLT"S...
use large muffin pan turned upside down, and weave uncooked "thick bacon" strips over the individual muffin cups.that have been covered by aluminum foil or parchment paper, place this on a large deep baking pan (to catch the drippings) bake in the oven at around 300 degrees, and keep an eye on it bake til the bacon is crisp/firm. Carefully remove from the oven (so you dont burn yourself with hot bacon grease) allow to cool slightly before removing the bacon cups. (best to just pull them off by the foil and slowly peel foil out of cups.) You can use canadian bacon for the bottom of the cup I would recommend using a dressing that doesnt yet include the bacon bits! (for obvious reasons.. | |
