I know that it's past St Patty's Day. But....just in case you didn't get enough Corn Beef or had a terrible meal like I did at my local restaurant on Friday here is a Recipe that is outstanding. Corn Beef is still available at Schnucks and Dierbergs. In fact, the brisket that I used was not the high end to make this. I used a 3 lb Brisket. I have a smaller crook pot. You will note that the recipe doesn't indicate. Also be sure to carefully trim all that nasty fat off the outside first.

Crock pot Apple And Brown Sugar Corned Beef Recipe (Crook Pot)

1 corned beef brisket
1 quart apple juice
1 cup brown sugar
1 Tbsp prepared mustard
8 small red potatoes
2 medium carrots, pared and cut into chunks (my girls love carrot's so I added more)
1 medium onion, peeled and cut into eights
1/2 head cabbage, cut into chunks

Place all ingredients in large crock pot (cut meat in half if necessary). Stir to mix.

Cook on high for 4 to 5 hours on high or 8 to 10 hours on low. (mine cooked in 8 hours) Remove meat and vegetables and some of the cooking liquid. Slice meat thinly across the grain. Serve with the vegetables and some of the liquid.

Use left over corn beef the next day.....layer in crock pot with sauerkraut and Swiss cheese. Warm and serve on rye bread with 1000 Island dressing!

Notes: I believe that the Apple Juice helps to cut the fat. That with the cup of Brown Sugar you get a sweet taste. I also added the seasoning packet that came with the Brisket.

Now this one is definately a keeper! Thanks! Matter of fact, I did have a sandwich just the way you described it with the thousand island dressing...I would have thought that idea to be gross, but I just loved it!

Glad you enjoyed the recipe. I even kept some of the left over juice and put it on fish while I was grilling it................yummy !

Sounds good! Isnt the corned beef sandwich with thousand island considered a Ruben sandwich? They are delicious if the corned beef is good. Havent had one in ages.

Reuben would have corned beef, Swiss cheese, thousand island dressing, sauerkraut, served on rye. I like a nice marbled rye. Toast mine please. The delightful sandwich was invented for a girlfriend of Charlie Chaplin's at a deli called 'Reubens' in NYC.

Hmm interesting note, Dallas. I never knew that. I agree toasted rye is best. This is on my next menu now, first the corned beef recipe above , then the reuben's!

Here is another plus to the recipe that I posted. The sauce that is generated should not be thrown away. Skim off the fat and save it. I've scoped out several cups and heated them just a bit and used them while doing the BBQ. Brushed several times will doing white fish and bbq chicken..........yummy ! Don't pitch it..........use it is what I say !
