| Onions and crying. Posted: 7/22/2006 5:43:06 AM | Cutting them under water (just the onions under water, not you as well) will stop the acid in the onions getting into the air and irritating your eyes.
Remember to wash your hands under clean water after before putting them anywhere near your face.

Posted: 7/23/2006 5:38:59 AM | This is going to sound crazy, but it really does work...... when you cut the top off the onion, place it on the top of your head, yes you read that right. Because you have to stand very straight to keep the onion from falling off, you keep your face out of the onion fumes........ and you really won't spend the rest of the night smelling like onion. If you're going out, wrap the cut end in some plastic wrap first ~ it'll still work.
Seriously. You may however get some odd looks from housemates....
Also, if anybody around wears contacts, get them to do it. Friends have told me the contacts act as a barrier to the smell.... | |

Two, dont breathe through your nose when chopping onions. And wash your hands after you chop them.
It is the ammonia in the onions that make you cry. So rinse them after you chop of the the ends and remove the skin. | |

I've seen some good cheffs go as far as soaking them in a bowl of cold water while preparing other ingredient. | |

Soaking the onion in water Chilling can help some as it slows down the molcules in the gas slightly Freezing is a option but hey you cannot slice or dice a frozen orb
Get a chopper it contains the gases with in the container and it does not get on your hands Use Vidalia onion as they are sweeter and have less of the offending gas
Never cut onions and put hands near face.. hello gas
I have seen chopped onion in some freezer sections prechopped and frozen but it does not taste the same
Use onion power or dried chopped onion from bulk stores
Find your self a good kithen **** (male or female) and sit back and wait for dinner, leave the chopping to them

| Onions and crying. Posted: 7/24/2006 12:54:46 AM | As a chef for over 23 years I have diced many onions and I still cry everyonce in a while from a very potent one. But if you store your onions in the fridge then cut the top before the root it releases the pressure of the oils that irritate your eyes. Then cut off the root end. slice in half from top to bottom then peel. If you do the opposite, with the root end first, tears will flow. Also always use a smooth edged blade that is extremely sharp not a dull or serrated knife. Asharp knife doesnt crush the onion causing much splash and squirting of onion juices. the same reason not to use a serrated blade, it splashes and squirts the juices into the air. | |

Then while I continue to cut the onion, I periodically run the knife under running water. I don't have much of a problem at all with irritation when I do it that way. | |
