Well, it all depends what you're looking for. Veggie? Meat based? something traditional? something unique? I've got more recipies than, well... i hate to use a line from good ol' mom, but more recipies than carter has little pills!

Stirfrys does wonders... get whole wheat noodles instead and pre-slice your veggies ahead when you bring them home to save you time chopping them when making a meal. I seperate and pre-marinate my meats before putting them in the freezer and take out what i want the night before to defrost.

Zucchini Noodle Pasta

MAKES 4 SERVINGS

Marinara:

2 large tomatoes
1/2 red bell pepper
1 cup sun-dried tomatoes, soaked and chopped
1 teaspoon honey
2 tablespoons EVOO
1 clove garlic
1 tablespoon basil (fresh) or 1tsp. dried
1/2 teaspoon salt, or to taste
1/4 teaspoon cayenne pepper, or to taste
1/4 cup water to thin, as necessary

Blend marinara ingredients in a food processor or blender. Add water to thin as necessary.


ZUCCHINI NOODLES:

3 small zucchini, unwaxed and unpeeled or peeled

(BY HAND)
Trim the ends of the zucchini and cut them lengthwise into 1/4-inch slices. Stack the slices and slice lengthwise again into 1/4-inch strips to make noodles. Work your way around the pulpy, seedy center of the zucchini, which should be discarded.

(WITH A MANDOLINE)
Adjust the mandoline for the julienne blade. Slice the zucchini on the mandoline in slow, smooth strokes to form long, slender noodles. Rotate the zucchini after every two or three passes to avoid the seedy core. When you've sliced the zucchini on all sides, throw the core away.

Pile the zucchini in a colander and carefully toss it with the salt. Set the colander in the sink and let the zucchini drain for 30 minutes. Bring a large pot of water to a rolling boil. Add the zucchini and blanch until just tender, about 1 minute. Drain the zucchini thoroughly.

Add marinara to noodles and sprinkle with parm or other low fat cheese. Serve.

Note: These "noodles" also work well cold with pesto or anything you would use on normal pasta.

Yeah, I agree with the stir fry thing. And go easy on the meat too when you make it. Too much meat will ruin a good stir fry. Usually a cup or two is good enough. After that, begin with the denser veg's like carrot, since they take longer to cook than the lighter stuff.

The quickest meals to make are things like wraps or stuffed pita pockets. For example, drain a can of chickpeas, mash them and mix in some mayo, mix in minced celery and minced onion, season with a bit of pepper and stuff into a pita pocket. Serve with a tossed salad on the side. It takes no time to prepare and is quite filling.

Wraps can be made out of just about any combination of chopped raw/steamed/grilled veggies, seasoned with whatever you have on hand and you can add other things like shredded cheese. I like to take refried beans and shredded cheese, roll them up and bake them in the oven and then serve the finished product topped with salsa. If I have leftover cooked rice, I'll have it on the side.

or try using spaghetti squash in digi's recipe,
as for preparing there squash there are many ways to do so
i find the easiest is to cut in half remove seeds
place as large a piece as you want into an oven proof dish (i use a pyrex one)
then put 1-1.5 inches of water and bake at i would think 350 F (i will check and get back to you if you need) until fork tender.
then remove from oven a use a fork to string the "noodles" in to a dish or onto a plate .

and voila spaghetti squash "noodles"

I have been going to this Organic store in Winnipeg on Osborne. Its called Organza's and they have many frozen meals that are the best Ive ever had. 5 minutes in the microwave and you have a meal of beans and rice and enchilada's....all vegetables. They also have many things that you can warm up or for example a pecan and honey bar that is a meal unto itself but very healthy. Also seeds, nuts, fruits and vegetables....none of them take all day. Good luck staying healthy, its really all that matters!

I do not eat very healthy but I do take suppliments to compensate. Recommend fish oil and B vitamins. Just trying to think of a creative answer. Hope that helps abit.

Healthy food is easy to come up with in a hurry. Fruit salad for a snack is easy to make, takes just a few minutes with fresh fruit and a knife in the kitchen and can be kept on hand in the fridge to sit and snack on whenever you want to.

Dealing with great meals, the wonder of all wonders is the crock pot. Make a beef stew base, put it on slow cook and let it go. Quick to start up, cooks while you are gone and is really good for you.

IF your watching your carb counts at all, noodles while easy to cook are a bit high on the list, but whole wheat noodles are great tasting. Spaghetti is a terrific base to start with. Boils fast, easy to cook and very diverse. A few cans of tomato sauce or paste and your favorite spices or meats mixed in take just a few mintues to heat up on the stove, toss a few slices of french bread in the oven buttered and sprinkled with garlic powder, and some grated cheese on top and bake it while you are cooking on the stove top. Whole meal takes 20 to 30 minutes to make, is filling and is extremely healthy.
