Ingedents:
1 lb Hamburger 6 peppers (green yellow red which ever is your fav) Jalopenos (optional) Taco Mix (the powder you kit in taco kits) Cheese (which ever you perfer) Mushrooms
In a frying pan brown hambuger and drain excess grease, add mushrooms, jalopenos, taco mix and 1/2 cup water, cook till sauce thickens, cut tops off peppers and remove seeds. Preheat oven to 350 and coat cookie sheet with Pam, stuff peppers 3/4 with hambuger mix fill rest with shredded cheese, bake till cheese is melted and peppers start to brown. Remove and salt and pepper to taste, for the bolder you can also add your favorite hot sauce. Enjoy! | |

| Stuffed peppers Posted: 12/28/2006 10:31:23 PM | Stuffed peppers are my most favorite food in the world; what I always asked for on my birthday.
I've never heard of anyone but my mother (and now me) boiling them, but this is how it goes:
(I hate to be vague, but it's a matter of taste.)
ground beef cooked rice (I always go with Uncle Ben's and undercook it by about 5 minutes) diced onion garlic worchestershire sauce (is there anyone out there who can pronounce that word?)
and, however many peppers what you have mixed will fill.
Now, this is the good stuff:
Stand them upright in whatever pan they will fit, and pour in tomato juice and canned tomatoes (I like the ones with the chilies, but I seem to say that in every recipe I post!). Bring to a boil and them simmer for 45 minutes to an hour.
Ya gotta have cornbread on the side.
And salad with garlic dressing and strawberry pie for dessert.
I have 6 months to go 'til my birthday and my usual 5-10 holiday pounds to lose.
But, why get out of bed if you don't have a dream . . . ?
(Oh, I'll settle down after New Year's Eve!! )

| Stuffed peppers Posted: 1/20/2009 6:34:26 PM | I've had this craving for stuffed peppers today and thought I'd check out this forum to see what's out there. I did a search and came up with this thread and thought I'd revive it to see what other wonderful recipes for peppers people might have.
For me personally, I'm looking for quick and easy options. Veggie and meat options please and thank you.

| Stuffed peppers Posted: 1/20/2009 6:50:46 PM | Peppers (I prefer the yellow or orange) Eggs (number depends on how many peppers you are filling) Milk Onion diced Leftover Veggies Diced ham (optional)
Cut the top off the peppers and remove the seeds. Mix the eggs with a bit of milk. Add onion and leftover veggies. Pour the mixture into the hollow peppers and bake in 350 degree oven, until the eggs are cooked.

| Stuffed peppers Posted: 1/21/2009 4:44:28 AM | 6 Orange and Yellow Peppers ( they are sweeter) 1lb of ground meat chopped garlic fresh ground pepper sea salt 1/2 cup of rice 1/2 can of corn 1/2 can of dark red kidney beans 2 jars of red spaggetti sauce. parmesan cheese
Cut tops and core peppers. Fry and drain meat, season to taste. Combine remaining ingrediants with 1 jar of sauce. Stuff peppers and bake at 325 for 1 hour. Add additonal jar of sauce and bake 30 more minutes. Top with parmesan cheese last 5 minutes. Let stand a few minutes and serve! | |

Put cooked white rice, turkey, and top with mozzarella or 6 cheese Italian shredded cheese. bake until desired tenderness of pepper. I like to add lots of spices and cilantro paste to my spaghetti sauce.  | |

you need mince meat - I usually buy prime mince (less fat) onions - say 3-4 big ones (white) 1 x egg oil for frying breadcrumbs x 1/2 cup - if u want to parm. cheese. or tasty ..depends on your taste
chop and brown onions in frypan, take out n put in bowl.. then you brown mince meat till cooked, then u add onions and mix through meat, with parm. cheese and you can add breadcrums if you wish into mixture, then you get capiscums - red, yellow, green and take top off and scoop out seeds and with a spoon - you put mixture into pepper till full and then u get egg and beat it and put bit of egg mixture on top of pepper and then you heat frypan with bit oil and place pepper down side up to seal the top of pepper and then you turn peppers on side and brown all over then once cooked you place in baking tray and continue cooking the rest as per above then all in oven for about 1 hour on 180 degrees and then take out and eat... yummy a meal on its own!
for variation - you can add mixed veges into the meat mixture and do same as above | |

| Stuffed peppers Posted: 11/6/2009 6:30:46 PM | I made stuffed peppers tonight, they were very good, even my son and his friend liked them.
I cooked 1 cup of organic brown rice according to package (takes about 45 minutes), then mixed it with Maverick Ranch extra lean ground beef, stuffed that into 3 fresh red bell peppers (tops cut off and seeded of course), put them in a baking dish and covered with two 8 oz. cans of organic tomato sauce, and baked in the oven till "done." Very easy, didn't even need any spices.
Have leftover rice so might make it again! | |

Try anything and everything. I am not a big fan of these, just because I strongly do not like the taste of green bell peppers, but I can tolerate the other colors, so when I was cooking for other people, I made them on occasion. For some reason I seem to mentally connect these and cabbage rolls, so I more often than not cooked up a batch of both at the same time.
As a base with the meat: Grains... Rice quinoa cracked wheat couscous orzo lentils instead of a grain or pasta, a root vegetable like... potato sweet potato carrots parsnip celeriac beets Jerusalem artichokes kohlrabi Other veggies... bok choi cabbage cauliflower Bread like stuffing... leftover dressing from Thanksgiving croutons bread crumbs stove-top
Mix any of those with a meat, ground or chunks... beef pork sausage ham turkey lamb venison or other wild game chicken
Mix in aromatics... onion garlic celery root veggies above mushrooms
Nuts... pinenuts pecans walnuts cashews almonds, etc...
Use spices and herbs... any and all that you like, it is unlimited
Some use a little cheese... whatever matches what your filling is, any kind at all
Maybe add some fruit if it works... raisins dates prunes apple pineapple dried cherries or cranberries
Here are just a few of my favorites... Yellow Bell Peppers 1. Curried Rice, ham, pineapple, dried cherries, caramelized onion 2. Orzo, pesto (basil, pinenuts, garlic, evoo, romano cheese), turkey 3. Beef or Lamb, mashed potato, cabbage, corn, lima beans, sauteed leeks, mushrooms....brown meat gravy over. 4. Make a chili pie inside with a little extra...fritos, chili, onions, sharp cheddar, or colby or longhorn, or pepper jack, refried beans, baked in a salsa, green or red. Sour cream if wanted.
Orange Bell Peppers 1. cracked wheat, preserved lemon, black oil cure olives, caramelized onion, golden raisins, nutmeg, cinnamon, clove, almonds, pomegranate seeds, mint 2. Pork sausage like breakfast sage, or Italian hot and sweet, rice, caramelized onion, tomato, celery. Cook in a little canned tomatoes with juice in bottom of shallow baking pan. 3. Cracked wheat, onion, mushroom, grated carrot, any kind of leftover meat. 4. Leftover pork shoulder or rib of any kind, brie cheese chunks, red jalapeno, green onions, tangerine marmalade, fresh basil, plain buttered white toast croutons. 5. MMMM imagine leftover Thanksgiving...cornbread dressing in the bottom, then turkey meat, whole cranberry sauce, thin layer of mashed sweet potato, chopped up leftover Brussels sprouts, or green beans, almonds or pecans on top with a sprinkle of cinnamon sugar. That is awesome!
Red Pepper 1. Yellow Lentils, ground beef, cabbage, prunes, onion, thyme, orange squash put a little dark beer in the bottom of the shallow baking dish. This is also good put inside an acorn squash, but instead of squash chunks, red bell pepper. 2. Any kind of leftover bird (turkey, chicken, pheasant, duck...), curried rice, pineapple, sweet potato, onion, celery 3. Creamy sweet coconut shrimp, green onion, fresh pineapple chunks, snow peas, lemongrass, corriander 4. Layer a mix of croutons and wild rice, then oysters with the tiniest bit of horseradish on them, then sausage and onions, repeat. Mix an egg with heavy cream, pour over mixture, bake in a lemon tomato sauce.
There is just no end to the amazing possibilities, literally It is too bad white and purple peppers turn green when cooked and taste like green ones, they could make some pretty dishes if they held their color. SS | |

Wish someone would make some for me.. It's been so long since I made this dish, I'm not sure I remember how.

| Stuffed peppers Posted: 11/7/2009 10:48:50 AM | I am with YOU TB. Like I said, I am not a bog fan either. In the last 10 years I have maybe made them for myself 1 or 2 times and I think I actually had a guest ocming that wanted them. I like cabbage rolls, but not enough to make them for myself, which is why I probably made them at the same time. Get the things I don't care about all done at once.
Now give me stuffed grape leaves and I am in heaven!!! I can show down on those.
There are a lot of ways to make them, but I can tell you one...
I prefer ground lamb because the meat should be very soft, brown it well with onions and garlic, also oregano, corriander, thyme, sage, salt, pepper and add fresh bread crumbs and egg to hold together and after cooking and mixing blend all in a processor until a fine meal, almost a paste, but don't use enough bread crumbs to make it like a paste, just about 1/4 or less of the volume of meat.
Make rice or cracked wheat, whichever you are using. Make it with lemon and tomato, using diced rind in it and oregano and thyme.
Lay out the grape leaves, having rinsed and dried them. Overlap 2 if they are small or torn. Put about 1 tsp of each mixture in center towards bottom of leaf. Fold over bottom, roll once, then sides, then roll. Pack a steamer basket with them about 4 deep. Steam with lemon tomato juice, with enough water to not stick, scorch or burn. About 30 minutes. Then cool a few minutes. Eat warm or cold.
Especially good with a lemon egg, cream sauce. Or can add more tomato juice, herbs etc... and make a tomato sauce or gravy from the steamer liquid.
