1/4 cup white bean flour 1/4 cup sorghum flour 1/4 cup cornstarch 1/4 cup tapioca flour 1 cup cornmeal 1/2 teaspoon xanthan gum 1 teaspoon egg substitute 1/4 cup sugar 1 teaspoon baking soda 1 teaspoon baking powder 3/4 teaspoon salt
Wet ingredients:
1 cup plain yogurt 2 eggs 2 tablespoons margarine, melted 1/4 cup orange juice or water Preheat oven to 400 degrees. Grease 8" square pan. In a mixing bowl, whisk together the dry ingredients. Set aside. In a smaller bowl, blend the yogurt, beaten eggs, melted margarine, and orange juice. Add the dry ingredients and stir until just blended. Spoon the dough into the prepared pan and bake for 20-25 minutes, or until the bread springs back when gently pressed. Cut into squares and serve warm or at room temperature.

SOUR CREAM CORNBREAD (Gluten-Free*)
A moist and sweet cornbread that is gluten-free and quick to fix for dinner. Preparation time: 10 min Baking time: 18 min Yield: 9 servings
1/4 cup LAND O LAKES® Butter, softened 3 tablespoons sugar 2 eggs 1/2 cup LAND O LAKES® Sour Cream 1/2 cup milk 1 cup Gluten-Free Flour Blend (see below) 2/3 cup yellow cornmeal 2 teaspoons gluten-free baking powder 1/2 teaspoon salt
Heat oven to 425°F. Combine butter and sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs; mix well. Stir in sour cream and milk. Reduce speed to low; add all remaining ingredients. Beat just until mixed.
Pour batter into greased 8-inch square baking pan. Bake for 18 to 22 minutes or until golden brown and toothpick inserted in center comes out clean. Serve warm.
Gluten-Free Flour Blend: To make flour blend, combine 2 cups rice flour, 2/3 cup potato starch, 1/3 cup tapioca flour and 1 teaspoon xanthan gum. Use appropriate amount for recipe; store remainder in container with tight-fitting lid.
To make corn muffins: Prepare batter as directed above. Spoon batter into 12 greased or paper-lined muffin cups. Bake for 15 to 18 minutes.

Gluten Free Cornbread recipe from back of Bob's Red Mill White Rice Flour Sack
2 eggs 1 cup Liquid (milk, juice, water) 4 tbsp. sugar 4 tbsp. oil 1 cup white rice flour 1 cup cornmeal 4 tsp. baking powder 1 tsp. salt
Mix well. Bake 425°F for 17-20 min. Makes 12 muffins or 1 9" cake. | |

I should dig out some of the better recipes my mom used to make, she would make a killer corn bread, and well, your son might like it!

Also try Deland Bakery in deland, products and ingredients can be found at local health food stores. also helpful are local celiac support groups. the answer is yes corn products w/o additives are gluten free. the gluten free diet is very complicated and requires diligent label reading, as foods may not contain: wheat, barley , rye , oats or any buy products of said foods. gluten is a wheat based allergy, gluten are the sugars that get eaten by yeast and in return farts carbon dioxide, this is what makes bread rise, hence strong gluten flours (like pizza flour) need one hell of a lot of working, gluten free flours have work-arounds like using plant extract gluten substitute (health food store job) corn is not wheat, quinoa is the best wheat free flour as it contains loads of different amino acids (the stuff your dna is made of) whole wheat has chunks of grains in it and can easily tear gluten strands formed when working the dough initially (vitamin c can be added to strengthen the gluten strands)  | |

Help Posted: 7/2/2007 7:18:44 PM | | i make an amazing cornbread. the secret is to add 1 small jar of pureed butternut squash, which you can find in the baby food aisle at the grocery store. i also use plain yogurt, lime juice, sage, tabasco, sun-dried tomatoes, green peppers and whole kernel corn. you can add these to basically any cornbread recipe. as long as you don't use wheat flour, you'll be ok. try using spelt flour instead. | |

Help Posted: 7/3/2007 1:33:25 AM | Pure corn starch is gluten free, as has been mentioned, however "cornflour" is often made from wheat, this type normally contains no corn at all, so be careful about things like lollies with cornflour on or in them, as it's often cornflour made from wheat.
It's a lot cheaper (here) to make your own gluten free flour mixtures by reading the labels of as many gluten free wheat flour substitutes as you can find. If you end up using it a lot, it's a good idea, as you can make it exactly the way you like.
labeling laws and methods depend on where you live. In Australia any possible wheat or gluten trace must be listed (so if no gluten is listed, it must legally be gluten free). And any products containing oats (which are a special case, they do not contain gluten but can cause a similar reaction in some coeliacs and they interfere with tests for gluten) cannot be labeled gluten free. If you are going to be buying gluten free foods in your area, it's worth looking up the food labeling laws. In fact the Coeliac Society here even runs classes on label reading and labeling laws related to coeliac disease.
If coeliac is suspected, it is recommended that you don't change your diet, and especially don't cut out gluten, until after diagnosis (both blood test and bowel biopsy), as it can lead to a false negative result.
Of course, you may know all of this, and he may be trying a gluten free diet for another reason, either way, good luck with it all. | |

100% rye bread has reduced gluten, but still does have some. Wheat flour in the last 100 years has been bred for a higher gluten level since it improves the baking of bread and so forth.
Take a look at potato bread, but I think you'll find some flour in that as well.

By the way, your sun will probably lose a little weight on a gluten free diet. It eliminates almost all the carbs we eat.

Things like guar gum and xanthan gum can help, and there are mixtures (normally labeled just "gluten substitute") available. You might be able to buy a gluten free cornbread (depending on your strict definition of cornbread, it's not going to be just like grandma made) where you are, we can, but I really don't know what specific ready made products are available outside Australia.
The above post is right, it's likely he will lose a little weight, although, I've found that it's easy to replace the carbohydrates (mostly rice, corn and rice cakes and gluten free bread), eating is just not as inspiring when you can't eat the basic foods you feel like eating.
Tip: curry and rice meals are great, they feel like a proper meal, the rest of the family doesn't complain about having to eat gluten free, you can make without any substitutes or fake versions of anything and you hardly ever have to worry about cross contamination. | |

Many grains aside from wheat do contain gluten and, as someone who used to love baking but has been gluten free since January, trust me when I say, simply substituting one gluten free flour for wheat flour doesn't work. I learned the hard way.
I don't know about cornbread specifically (I've never made it) but the following recipe for Wheat Free All Purpose Flour has worked fairly well as a substitute for me in most of my recipes:
3 cups white rice flour 3 cups brown rice flour 1 cup tapioca flour 1 T Xanthan Gum (it's expensive but if you're going to be baking gluten free you'll need it)
Store it in a sealed container and substitute it in equal amounts for recipes that call for all purpose baking flour.
Also Bob's Red Mill has a whole line of gluten free flours (although I find their all purpose flour has a beany flavour to it that I don't care for) and pre-mixes. http://www.bobsredmill.com/gluten_free_info.php
P.S. (If you're ever baking something sweet, definitely use some coconut flour. That stuff's the schizzle)

Help Posted: 7/16/2007 7:29:56 AM | ketch...are you answering her original question as to whether corn starch is gluten free?... as has been stated before...yes it is...but it can most definitely NOT be used as a sub for flour... did i also hear someone say use potato flour instead?...if you try that...could you please make me a couple of thousand...baked in bread pans?...i would like to build a new garage andthose would work quite well for bricks... corn starch and potato flour are basically thickening agents... i've tried gluten free bread...and quite frankly it was the shits...the permeating taste was yeast... OP...i am pretty sure there are other wheats that are gluten free...i think...not 100% sure... you might look into using flour made from either spelt...or kamut...they both contain gluten but apparently the gluten in spelt is very fragile and easier for people with celiacs to digest...just a thought | |

Help Posted: 7/16/2007 9:17:01 PM | OP, I'm unclear as to why your son is on the gluten free diet but PLEASE, if it's because of Celiac's disease or suspected Celiacs do NOT use spelt flour. Any amount of gluten is like feeding a person with celiac poison. Not only does it make you sick in the short term, which sucks enough trust me, in the long term, those bouts of damage to our insides (even if you've been gluten-free long enough that your stomach has healed and you don't notice that you've ingested gluten) are highly correlated to intestinal cancers and other devastating diseases.
