Any good recipes for Kielbasa ??

I have about 7 pounds of Kielbasa for the weekend. I am making it for the bar/club I work at and putting it out for anyone to have. Can be a crockpot recipe or skillet ?? Oven ?? Just looking for new ideas. I have a great recipe that I do with Kielbasa........ Saute it with onions and garlic and then add shredded cabbage with a can of beer and some creole mustard......Simmer for an hour or so....... Good Stuff

**OP** The recipe you have is by far the best and the one that I use mostly.

Have you tried sautee'ing the kielbasa with mustard and olive oil then when finished place in crockpot with a nice homemade honey-mustard or honey-dijon sauce??

Do a search on http://www.recipe.com or http://www.kraftfoods.com for koktail franks/weenies/smokies and there will be some other fine sauces that work well with kielbasa.

Thank you buddy, I appreciate the advice. I was going to do a crockpot thing like the coktail weenies but I think I just may go with the cabbage/mustard/beer thing. Who knows, maybe someone will come up with some good ideas...... Thanks again

I lived in New Orleans for awhile and every Monday, the bars served red beans and rice with andouille, which it is hard to find here, so I make it with kielbasa.

Also, I use it when I make gumbo.

I want to go to your bar!

THe easiest is to just boil it. Kielbasa can also be fried like sausage. My parents always make it with saurkraut. Fry onions, drain and rinse saurkraut, add to onions, add kielbasa, add water to cover, cook for about an hour.

This is going to sound really weird but it is really good. Take a 10 oz jar of chili sauce and a 10 oz jar of grape jelly. Heat over a low heat till bubbly and thick. pour over sliced cooked kelbasi and serve. I have also mixed in sliced sauteed onions and peppers for color and flavor. This recipe is simple and really tasty and no one will guess how easy it was to make or what makes up the sweet and pungent sauce.

Ahhhh, thanks for the advice everyone. The Red Beans and rice isn't a bad idea because I can leave it in the crockpot. I think I'm going to do a few different dishes because I have about 7 1/2 pounds of it. I'm also thinking of doing a homeade macaroni and cheese with some sliced Kielbasa in it.

That chili sauce recipe sounds pretty good, I have a similar recipe with just ketchup and grape jelly so that actually sounds a little better. Decision....Decisions

Here's something I just throw together. It's quick, easy and surprisingly delicious. And let's not forget CHEAP!

Kielbasa Noodle Supper
1 lb kielbasa or smoked sausage
16 oz pkg frozen chopped broccoli (or spinach, peas, whatever)
16 oz pkg spiral or wagon wheel pasta (or any other shape-bowties etc)
1 or 2 sticks butter
1 cup or so Grated Parmesan cheese (kind in the can)(I also use the shredded cheese in the bag, it's just as good, especially if you have some to use up!)

Slice kielbasa. Cut each slice into quarters. Brown in a few tablespoons butter in a very large skillet or Dutch oven. Meanwhile, cook broccoli as directed on package; drain. Cook noodles as directed on package; drain. Add broccoli and noodles to kielbasa. Add 1 or 2 sticks of butter. Add about 1 cup of grated Parmesan or more to taste. Heat through over low heat stirring until butter is melted and Parmesan incorporated. YUM!

Here's for Kielbassa Casserole

1 pkg(5.25 oz.) Scalloped Potatoes - Betty Crocker, Hungry Jack or similar
2 cups boiing water
2 T. margerine
2/3 cup milk
1 med size onion - finely chopped
1 lb. Kielbassa
Preparation -
In an 8" x 12" glass baking dish, mix potatoes, sauce mix, boiling water, margerine and milk. Stir in chopped onion. Slice kielbassa diagonally into 1/4" to 1/2" thick slices. Place slices on top of potato mixture.

Bake at 375ยบ for 35 to 40 minutes. Let stand 2 to 3 minutes before serving.

ah yes,,,,
it is called Letcho, well thats how its pronounced,,,,, anyway,
You have to have the following
ground beef
sweet peppers
onions
Kielbasa, sliced, diced no diff.
canned or fresh tomatoes
Paprika ( Hungarian of preference)
Rice
Time
Cook ground meat, set aside, fry chopped onions and sweet peppers, put oil in a huge pot and put the rice in the oil, stir around for it not to have so much starch. then add part water, part tomatoe juice, ( can be used from the can of tomatoes.) Add, all the meat,kielbasa,onions,peppers, tomatoes, and enough water to make the rice.
Bring to boil, lower heat, let simmer. Eat at leisure, YUMMY! can be reheated. I use the biggest pot in the kitchen, Everyone loves it, never stays in my house for long. :) Enjoy in good company!

Wow guys! I didn't realize there was so much to do with Kielbasa. I'm adding many of these to my recipe file. I especially love the Chili Sauce & Grape Jelly, the BBQ Sauce & Apple Jelly,
and the one with the onions, bell pepper, and potato.

Thanks for the pointers, even if I wasn't the one who asked the question. And to the guy who DID ask the question, what did you finally do?

My dad would always cook the kielbasa in my family.... and the only way I like it is sliced on the diagonal and seared in a pan until crisp. Then saute onions and peppers and serve on a nice quality kieser roll. But I bet whatever you make Kobie... will be wonderful!

I like using the beef kielbasa for flavoring refried beans. Take a pound or two of red or black or pinto beans, soak overnight. Cook until soft, pour off most of the water, mash them. Add a couple of cloves of garlic, plenty of onion, a tablespoon of powdered cumin and oregano. A cup of beef boullion/broth. Mash it all together. Add broth as needed until you get the texture and thickness you desire. Slice and add the kielbasa. Top with cheese. Ideal protein when served with rice or corn. Sometimes I top it with salsa.

Great as a side or in a hard or soft taco shell. If you're into making homemade doughs I do tortillas from scratch and deep fry them with this filling for an awesome chimmichanga.

Often I will make a huge batch of this and it will simplify cooking for the week for me. The cumin is the secret for preventing gas, btw. It has no fat aside from that in the sausage so its essentially very healthy eating with plenty of flavor.

Easily done in a crockpot, too. Sometimes I thin it down quite a bit and use it as chip dip garnished with a bit of sour cream. Nachos!

Slice the sausage in long strips. Coat in flour, egg, (water or milk will do) then coat in bread crumbs. Refridgerate for at least 30 minutes. Fry/brown in oil. Serve on kaiser rolls. Top with condiments and lettuce. Enjoy!!!!

I recommend cooking it. Maybe add some pierogi for some more of that Eastern European flavor? Perhaps some blood soup? Golobki? Saurkraut?

Actually, Screw all that.

Just order Pizza. Everyone loves Pizza. Which is something you can't quite say for blood soup.

I made a big platter of the Kielbasa that I pan fried with 4 dozen pierogi's !!!!! Then I also made the cabbage and kielbasa that I cook in beer and whole grain mustard for a side dish !!!!! Was a big hit...... a little more than Pizza

These recipes could give me a heart attack!!! Be carful you don't indulge in this often as heart problems run in my family. More importantly low-fat, lean protein, and lots of vegi's thats good carbs for energy!

I saw a good recipe on some Travel Channel show... cut the kielbasa into bun-length portions, score with a sharp knife into diamonds, heat a cast iron skillet or dutch oven and give the kielbasa a coating of olive oil. Sear in the super-hot cast iron, and then into a 300* oven to bake for about 20-30 minutes.

Serve either on buns with horseradish mustard, and your favorite condiments or slice on the diagonal into bite-size bits and keep warm in the crockpot with just a little saurkraut juice.

*Warning: High salt content & not heart healthy, but tastes darn good
