im looking for any homemade bbq sauce recipes. i do like bottled stuff but fresh is always better.
so does anyone have any recipes that they swear by.
id prefer a rich flavour but a semi simple recipe as im not a great cook.

Well, If you want absolutely simple, mix 4 parts ketchup to 1 part molasses. Sweeten with brown sugar. If you feel like putting more effort into it, which you might want to do if you are using it on an eighteen dollar porterhouse, try this:

Note: all fancy cooking terms have been consciously ignored. And my spelling is horrendous.

1L=4cupsish
250ml=1cupish
15ml=1tbspish

30ml oil or bacon fat or whatever you put on your toast
1 onion, chopped pinky nail size
6 cloves garlic, thinly sliced
125ml beer, wine, or water
1 L ketchup
250ml molasses
125ml brown sugar
15ml liquid smoke
45ml chili powder
15ml pepper
15ml salt
15ml cumin
15ml paprika

1 4L (1 gallonish) pot. Not a frying pan. A pot. Like what you reheat soup in. Or make Mr. Noodle in. Just make sure it will hold 4Ls (1 gallonish) because if it is on the verge of spilling over when all of the ingredients are in it, it will be a nightmare to stir and blend.

1 hand blender - Also called immersion blenders or beurre mixers. I call it a Braun. Use a blender in a pinch, but please make sure the sauce is cooled before blending.

1 stirring device - Please do not use your hand. Laugh all you want but I have seen apprentices do it.


Cook onions and garlic at med heat untill brown. Not black, but brown. If they are black start over. Pour in 125ml of whatever you are drinking at the time to dislodge all of those delicious brown bits. Hopefully it is a dark beer. If it was chocolate milk or a soya frappachino, you might want to start over. Add in ketchup, molasses, brown sugar, and the rest. Stir occasionally. Keep heating it until it starts bubbling and spitting at you while you enjoy the rest of your tasty beverage. Using a hand blender, blend the sauce until you can't see lumps of spices or delicious brown bits. Taste and evaluate. Too ketchupy? More molasses and chili powder. Too sweet? More ketchup. Too flat? More salt, pepper, and/or chili powder. Color off? More paprika and/or chili powder . Too sour? More brown sugar/mollases. Too difficult? Omit all of the cooking and blend all ingredients together from the beginning. Substitute onion powder and granulated garlic for the vegetables.

My mom makes BBQ sauce and uses the 'dump' method.....she dumps whatever she has in and it comes out slightly different each time. The following are the basics and you can add different seasonings for either a sweeter or 'hotter' sauce.


Ketchup
Brown Sugar or Maple Syrup
Liquid Smoke
Crushed Red Bell Pepper
Hot Sauce
Garlic salt

WESTERN BARBECUE SAUCE

1 TBSP BUTTER, MARGARINE OR COOKING OIL
3/4 CUP MINCED RAW ONION
1 CUP KETCHUP
1 CUP BOILING WATER
1 OXO BEEF CUBE
1/2 CUP MOLASSES
1/4 CUP BROWN SUGAR
2/3 CUP VINEGAR
2 TSP. DRY MUSTARD
1/2 TSP SALT, BLACK PEPPER
DASH OF CAYENNE

SAUTE ONION IN BUTTER. DISSOLVE OXO IN BOILING WATER, STIR IN THE ONION. ADD KETCHUP AND REMAINING INGREDIENTS. COVER AND SIMMER 20 MIN.

The sauce I posted goes really well with these:

APPETIZER MEAT BALLS

1 CLOVE GARLIC QUARTERED (I mince)
3 TBSP. BUTTER MARGARINE OR COOKING OIL
2 LBS. GROUND BEEF
2 BEATEN EGGS
1 CUP MILK
2 CUPS FINE DRY BREAD OR CRACKER CRUMBS
1 TSP SALT
1/2 TSP MACE, CELERY SEED
1 TSP BLACK PEPPER
1 WESTERN BARBECUE SAUCE RECIPE

COMBINE MEAT EGGS MILK BREAD CRUMBS AND SEASONINGS. SHAPE INTO BITE SIZE BALLS. SET ASIDE OVER VERY LOW HEAT,SAUTE GARLIC IN BUTTER UNTIL PIECES ARE TENDER BUT NOT BROWNED. DISCARD GARLIC. bROWN MEAT BALLS ON ALL SIDES. ADD WESTERN BARBECUE SAUCE AND SIMMER UNTIL THICKENED ABOUT 1 HR.

Ladytaz,

When I do the meatballs, I actually brown them in the microwave rather than in the frying pan, just to simplify .... still scrumptious!

kitchen sink BQQ sauce

2-3 can tomato sauce
1cup vinager
1cup brown suger
1 cup whiskey
dry mustard
chilepowder
salt & pepper
cumin
paparika
roast garlic
saute onion
honey
ketchup to thicken simmer 20 minutes add some hot peppers if you like

Pop's Quick & Dirty BBQ sauce...

1 bottle ketchup (about 2 cups)
1 bottle brown mustard (meh- 1 cup?)
1/4 cup or so cider vinegar
1/4 cup or so wine vinegar
--> OR replace vinegars with 1/2 cup strained brine from kosher dill pickles
3/4 cup REAL maple syrup (not that fake crapioka from aisle 3)
1/4 cup pickle relish w/juice
Garlic powder
Pepper to taste
Onion Powder

1 cup cheap beer (that $1.99/case SOP but pop used Rhinegold)

Mix well, let sit for 24 hours and soak whatever you're cooking in it. Add some brown sugar to thicken and use for a glaze too.

I used to think the same thing, until I discovered Sweet baby Ray’s. It’s a great bottled sauce, the
best that I’ve come across.

When I did make my own, it consisted of:


1 BOTTLE KETCHUP
1 CUP WATER
½ GRANULATED SUGAR
½ CUP MOLASSES
½ CUP APPLE CIDER VINEGAR
1 TABLESPOON WET OR DRY MUSTARD
CAYENNE TO TASTE
TABLESPOON WORCHESTERSHIRE SAUCE
½ BOTTLE COLGINS LIQUID SMOKE

Cook slowly for appx. 30 minutes.

Killer BBQ Meatballs:

1 BOTTLE BBQ SAUCE
1 SMALL JAR APPLE JELLY OR PRESERVES, OR WHATEVER JELLY YOU CHOOSE.
Cook the meatballs in the mixture for 20 – 30 minutes if meatballs are pre-cooked.
Add a dash of cayenne is you want to kick'em up!

1 Bottle Beer. Spicy Mustard. Crushed (fresh) garlic. Salt. Pepper. Small can of Tomato paste. Start with beer and Tomato paste, start mixing the other stuff. Taste it occasionally, you'll know when it's right.
Use it while cooking. Sear it in.

You will love it.

BTW, I am a Texan, and this is the first time I have shared this.

Alabama White Sauce! I don't ever measure when I make it, So I can't tell you how, but it is mayonaise, white vinegar, black pepper, sugar (I use Sweet 'n' Low...it dissolves easier) and bit of lemon juice.

I wasn't even going to read this thread because I know which sauce I like the best. raerae, you read my mind. I was thinking exactly that when reading this thread and was pleasantly surprised to see some one else thinks the way I do. I mean this:

I bought my first bottle in the place I buy my wood and screws and such. I've been using it ever since and now its available nearly everywhere. Back then even grocery stores did not have it! Just the hardware/wood store. The flavor just can not be beat! I love the hickory the best for all around use, honey bbq is the best on chicken or for dunking chicken nuggets, and the regular has a little bit of kick to it but more could be added.

For the newbies to Sweet Baby Rays: It has to be added near the end because of all the sugar... like the last 15-20 minutes. Otherwise it will burn.

Baby Rays has pineapple concentrate in it for the sweetness. Delicious!

My other favorite is a lime and chile bottled sauce. Forget which brand , all the major chain grocery stores have it, offhand but the fruit flavors seem to be the way to go. Ever read the ingredients of A1 steak sauce? Its almost all fruits!

I know, I sound like a salesman for that company. I just bought ten bottles of Sweet Baby Ray's BBQ sauce today -- they now have sweet vidalia onion BBQ sauce! Very good, had some on baby back ribs!

The lime sauce I was mentioning is Open Pit brand. Normally I didnt care much for their sauces but the lime BBQ is really something different.

I had the steaks on the bbq and couldn't find any sauce so I was open to ideas.
I remembered reading in the paper about some unusual bbq sauces that involved using pop!
There was no measuring involved at the time so just pour and adjust until you get the desired consistency...
Use any type of sweet fizzy pop..Coke or 7up work best, ketchup, Worcestershire Sauce and salt/pepper or steak spice as desired.

I have passed this along to some other friends and they reported that adding a small amount of rum made this even better...something about the only pop they had was in someones rum and coke that they unknowingly donated to the cause...

Apparently, if you use the coke version it also makes a good marinade as the acid in the pop is supposed to be some sort of crude tenderizer

whitetigress, Ive tried something similar, but with pork chops.
Just put the chops in a casserole and toss on the ketchup, coke, a sprinkle of brown sugar and a good size drizzle of REAL maple syrup, bake for an hour(depending on the thickness of the chops)
Effortless and delicious!!

heres one iuse that ill give up
mix a brw sugar, ketchup togetgether add vingar bring to a low boil
ok put a lg pot up on the stove pour in a lg bottle of ketchp now the brw sugar is to taste myself 2 packed cups ya might want it sweeter or less about a cup of white vinerage,ive use cider then i add salt and pepper to taste ive added cayenn,garlic,celery salt just whatever im in the mood
and by the way never ask for a bbq sauce recipe it just aint done were i come from

Simple and versatile:

Basic Molasses Barbeque Sauce

½ cup molasses
½ cup Dijon mustard
½ cup cider vinegar
½ cup catsup

Combine ingredients, blending well.

You can sub other mustards, chili sauce for the catsup, malt for the cider vinegar. Add some Jack Daniels for a bit of a kick. I usually throw in some hot sauce for fun. Onion, garlic ... whatever floats yer boat.
