| 6 week bran muffins Posted: 2/4/2007 7:04:39 PM | I found this recipe online, and absolutely love it... I was wondering if anyone else had any other good muffin recipes that last alright in the fridge for quick baking in the morning. I'm honestly not sure if these really last 6 weeks... they are lucky to make it through one week in my house!!
6 week bran muffins
1 box (15 oz) Raisin Bran Cereal 3 cups sugar 5 cups flour 5 tsp baking soda 2 tsp salt 4 eggs 1 cup oil 4 cups milk (actually calls for buttermilk, but I never have that on hand... skim works fine)
Mix all ingredients together. Place in airtight container in fridge.
Bake what you need at 350F for 10 - 12 minutes.
I tend to add extra raisins to the main batch too... then maybe some frozen berries just before cooking. These are so good that my son asked me to make them for his 'birthday cake' for school!!!

5-1/2 cups flour 2-1/2 cups granulated sugar 3 cups natural wheat bran 2 cups All Bran cereal 3 tbsp. baking soda 1-1/2 cups vegetable oi 1 quart buttermilk OR 1 quart sour milk 4 eggs 1/2 cup molasses 2 cups raisins
In medium bowl, combine baking soda and buttermilk; add oil, eggs and molasses; blend thoroughly. In large bowl, combine flour, sugar, wheat bran, and bran cereal. Make a well in centre of dry ingredients; pour in buttermilk mixture and thoroughly mix; stir in raisins. Store in plastic container or large glass jar with a tight fitting lid. Mixture will keep 6-8 weeks stored in the refrigerator ... and yes, it does last that long.
Note: Natural wheat bran is not a ready-to-eat cereal. It comes in plastic bags or boxes at either supermarkets or health food stores.
Baking
1. Preheat oven to 375°F. 2. Grease as many muffin tins as required. 3. Stir muffin mixture thoroughly. 4. Fill muffin tins 2/3's full. 5. Bake 15-20 minutes or until done.
Note: Can add dried cranberries, cherries, dried apricot or apple chunks or whatever dried fruit you like as well as chopped nuts just before baking. | |

2 1/4 C flour 1 1/4 C sugar 2 teaspoons baking soda 1 Tablespoon Cinnamon 1/2 teaspoon salt 1/2 C shredded Coconut 1/2 C raisins 2 C grated Carrots 1 Apple shredded 1 8 ounce can crushed pineapple (drained) 1/2 C pecans or walnuts 3 eggs 1 C vegetable oil 1 teaspoon vanilla extract
Sift the flour, sugar, baking soda, cinnamon and salt into a large bowl. Add coconut, raisins, carrots, apple, pineapple and pecans and mix well. Combine the eggs, oil and vanilla in a bowl and whisk until smooth. Add to the dry ingredients and mix well. Spoon into paper-lined muffin cups, filling to the top. Bake at 350 degrees for 30 to 35 minutes or until a wooden pick comes out clean. Cool in the pans for 10 minutes; remove the muffins to a wire rack to cool completely. Store for 24 hours before serving so the flavors come together. Makes 16 Muffins
Try serving with some cream cheese and honey !!!! Enjoy | |

| 6 week bran muffins Posted: 2/5/2007 9:22:56 AM | Here ya go ... 2 recipes that I alternate. When the mood strikes, I add 1/4 to 1/2 cup toasted sesame seeds to the B&B recipe. I use pecans - hate walnuts.
Morning Glory Muffins courtesy La Vista Plantation Bed & Breakfast
4 cups all-purpose flour 2-1/2 cups sugar 4 tsp. baking soda 4 tsp. ground cinnamon 1 tsp. salt 2 cups oil 6 eggs, lightly beaten 4 tsp. vanilla extract 4 cups grated, peeled apples 1 cup raisins 1 cup flaked coconut 1 cup shredded carrots 1 cup chopped walnuts, optional
In a large bowl combine flour, sugar, baking soda, cinnamon, and salt. In a separate bowl mix the oil, eggs and vanilla. Stir into the dry ingredients just until moistened. Fold in the apples, raisins, coconut, carrots and nuts. Fill greased or paper-lined muffin cups two-thirds full, Bake in a 350 oven for 25-30 minutes, or until a toothpick inserted in center muffin comes out clean. Makes 3 dozen.
Morning Glory Muffins / Bars
1-1/2 cups whole wheat flour 1-1/2 cups 100% Bran cereal OR All Bran cereal 1/4 cup toasted sesame seeds 1 tbsp. baking powder 1 tsp. cinnamon 1 tsp. allspice, optional 1/2 tsp. baking soda pinch salt 1 egg 3/4 cup buttermilk or yogurt 1/2 cup brown sugar 1/3 cup vegetable oil OR applesauce 2 tbsp. molasses OR honey 1-1/2 cups carrots, grated 1/2 cup chopped dates OR raisins OR apples
In large bowl, combine all dry ingredients except raisins and carrots. In medium bowl, whisk together egg, sugar, buttermilk, molasses and oil. Add wet ingredients to the dry ingredients until moist. Add carrots and raisins. Fill 12 muffin tins 2/3’s full or spread batter into 13” x 9” pan for bars. Bake at 350°F for 25-30 minutes or until toothpick inserted in centre comes out clean. Makes 12 muffins or 24 bars. | |

When I lived in Massachusetts, in the 80's and 90's, I would occasionally visit my parents in Virginia. Bonnie, my stepmother, would occasionally give me a ride to DC, or Georgetown, as she worked there, for a law firm. Right around the corner was this bakery. And our favorite were these incredible "morning glory" muffins. I have always wanted to find a recipe to make them, but never searched enough.
A year ago, Bonnie suddenly passed away, of a heart attack. Beautiful and vibrant, with a great sense of humor and warmth we all reveled in, she left a legacy with her spirit. And I've been thinking about those morning glorys, recently, and how Bonnie could just make a very basic, simple pleasure into what would seem one of the best days of your life. And making those muffins someday, and enjoying them, might feel lilke having a ray of Bonnie back some morning, much like a ray of sun shining through,starting your day.

The recipes look very similar, mine call for crushed pineapple and I guess its a matter of taste....... I personally love coconut and pineapple together.

This is EXTREMELY healthy: (low calorie too)
Carrot Nut Torte
1 cup grated carrots 1 cup walnuts 1 cup hi-protein flour (wh wheat, rice, soy and wheat germ- I always just use toasted wheat germ) 1/2 cup honey plus 2 tablespoons 1 teaspoon cinnamon 6 eggs
Separate eggs. Beat yolks and honey until light and creamy. Add grated carrots, coarsely broken nuts, flour, and cinnamon. Beat egg whites til stiff. Fold into mix. Pour into an 8x8 glass cake dish. Bake in oven 350 degrees 45 minutes.
I swear, this will be devoured instantly, even by those who say they don't like healthy food.
When I posted this, for a PoFer needing a recipe for a contest, she chose it because of its healthy content. But you MUST beat the egg whites stiff, separately, then fold it into the rest of the mix. This gal hand beat everything, and couldnt manage getting the eggwhites stiff on her own, thus having a very flat and moist cake. Poor gal!
One of the posters for that thread used my recipe for a taste test at his office. He said it was gone instantly,and a success. Whew, I feel better! lol | |

I don't have a lot of time to spend on here so I rarely post but.....
You've heard of "shoot from the hip" - well, I'm a "cook from the hip" - and according to my diners pretty darn good at it. I've as much as gotten "princess's" to eat venison, and liver haters to love it. And make awesome Key Lime pie - probably cause I have the Key Lime tree in my yard - fresh really counts there.
A cool site to get a basic start to modify from is "Epicurious.com" - you can search for either a name i.e. "Morning Glory muffins",,, but you can also throw a bunch of what you have on hand ingredients in the search box and get some interesting results as well..
Luckily at 53, and I'm not ashamed of it, I can still eat whatever and as much as I want and it doesn't hang around for keeps. Well, ok - I did have to give up a half gallon of ice cream a week.....
Can't bake to save my butt, including conquering my bread machine, so maybe that's what HAS saved my butt - from enlarging.

400* 20 minutes --------------------------------------- 1 package of devils food cake mix 1 small 15 oz. can of pumpkin (not mix) --------------------------------------- Empty both into bowl and mix. DON"T add eggs, water, or anthing else or you'll ruin it.
Line muffin cups with paper liners Makes 12 large muffins.

| 6 week bran muffins Posted: 5/1/2008 9:16:17 PM | Just a couple of notes about the 6 week bran muffins - 1) it really is best to use the buttermilk (you can even get powdered buttermilk to keep in your cupboard). 2) you can successfully replace half the oil in a recipe with applesauce (best unsweetened or cut back on amount of sugar in rcipe). 3) volume is reduced the longer the batch is kept in the fridge. stir well each time you use it - BEST THING if you have room in your freezer, cook the whole batch after one night in fridge and you will get the largest quantity out of recipe and also higher in size . | |
