Hi. I am (hoping) in the process of opening a vegeatarian (leaning towards vegan) breakfast bistro.

I am looking for what your fav veggie/vegan breakfast foods are.

The cafe will NOT be serving any EGGS, dairy milk, dairy CHEESE but will have yogurt. So beyond those limitations, please, offer up what you'd like to eat if you could go out and eat breakfast/brunch at cafe/bistro.

can you not use soy milk, rice cheese or soya yoghurt?

I love pumpkin and sunflower seed bread toasted with hummous or fresh fruit salad topped with non dairy yoghurt and mixed seeds.

I will be using rice, soy and oat milks. I use these to make my cheeses and yogurts. i only said NO Dairy products.

Thank you for the bread idea. I have not done much cooking with pumpkin but it sounds delicious. I plan to try my first recipe this this weekend. thanks

I like simple things... like granola and fruit.
My grandmother used to make me bananas with lemon juice and sugar on them... it's better than it sounds.

Typical vegan breakfast foods for me would include any of the following:

-scrambled tofu (sometimes in a wrap or whole wheat pita)
-fresh fruit
-soy yogurt and fresh or frozen berries
-steel cut oats with raisins and dried fruit
-any other sort of whole grain cereal with seeds, nuts and fruit
-whole grain pancakes or waffles with fruit and maple syrup
-fresh juices or smoothies
-coffeecoffeecoffee
-muesli
-whole grain bagel with nut butter and jam (or with soy "cream cheese")
-veggie sausages
-beans
-homefries
-whole grain toast with nut butter and jam (roasted almond butter is amazing!)
-potato pancakes

I've never tasted any veggie 'bacon' that had me asking for seconds... but I never much liked 'real' bacon back in the 'old days' either.
Most of the veg-heads I know are turned off by the faux-meats anyway.

Anything fresh out of the oven smeared with margarine. Also, oatmeal with a choice of additions (dried fruits, different sugars/syrups, even chocolate/carob chips... skies the limit). Good luck! When will you be opening?

I enjoy freshly mown grass blended with apricots and passion fruit, it's full of fibre and vitamins and sets me up for the day, or at least until brunch.

People eat grass??? Sorry, I'm carnivorous 'til the end but I just never thought people ate grass. Is this a common thing to do? Just curious...

I recently discovered this; it's actually a variation of something I learned in a cooking class: Cut soft tortilla shells into small chip-sized pieces, deep fry them until golden, lay them out on a plate, spread tikka masala sauce on them (you can make your own - no meat), then plain yogurt, and top with mild curry powder. Serve them like nachos. Very tasty for anyone who enjoys Indian food!
 Interesting.

Did you mean tortoise or turtle, either way they are protected over here so I doubt very much that I would be able to purchase either even at my local deli, can you suggest an alternative ?

No, I meant tortillas, what they use to make fajitas... I had taco shells stuck in my head when I was thinking of hard and soft shells.

I used to work as a Chef. I'll give you my Phone Number if you like, and when you're having a Breakfast wrap/Burrito,you can ring me and ask for my choice of vegetables.
Bear in mind i'm in London though and the obvious time difference. The last thing i want is a phone call at 3 a.m because you can't make your mind up over an Aubergine or some chopped Celeriac.

Advocating a Macrobiotic Diet & the benefits of miso soup .

A bowl of Morning Miso Soup is a wonderful way to start the day. Once you allow yourself to feel the difference in your well-being,you may find yourself with a healthy habit.

Makes 2 cups

1 dried shitali mushroom, sliced (soaked and drained)
2 cups water
1/2 medium onion, chopped
1 carrot, chopped
1 teaspoon wakame
1 heaping tablespoon red miso
drop of sesame oil
handful of roasted sunflower seeds

Pre-soak the dried shitake mushroom in warm water and drain. In a medium saucepan, combine the shitake mushroom, water, onion, carrot, and wakame. Bring to a boil and cook on medium heat for about 20 minutes, adding more waterr as needed. In a small measuring cup, combine the miso and a little of the cooked broth. stir and blend. Remove the soup from heat, thus stopping the boiling. Add the blended miso and broth and sesame oil. Pour into a soup bowl and top with sunflower seeds.

You can bye the instant, yet, don't forget the sunflower seeds and sesame oil!

There is something special about breakfast, yet it comes at a time of day when creativity and time are not exactly abundant. I urge you to participate in a morning meal that sustains your energy level easily until your next meal becomes a thought.

Buckwheat Groats (Kasha) steamed in veggie stock. It cooks up like rice, looks a little like oatmeal or grits, but has a rich nutty flavor and more protein.

Serve with a dollop or three of honey-yogurt on the side... some like the yogurt mixed in, but I can't get past the appearance of all mooshed together in a mottled-tan lumpy paste.

BTW: It's KASHA not Kashi (that terrible commercial cereal-mix crapioka).

* Honey-yogurt: Plain unflavored yogurt with about 2 tablespoons of your favorite honey per cup of yogurt
