Any ideas other than Hummus, tabbouleh, and Lentil soup? I am serving for fifty and have a tight budget but would like it to be nice as this could lead to a continuous job doing these theme brunches. | |

| Lebanese Cooking Posted: 2/19/2007 1:17:10 PM | Do you like Eggplant Dip? I love Babaghanouj - it is very simple and great to make ahead! Roasting the eggplant makes it so easy to prepare this dish! I serve it with warmed whole wheat pita- or a good wheat cracker and some celery/carrots. I get requests for this when I am to bring an appetizer! I'll grant you eggplant are not cheap in the winter...but sometimes I get lucky and go to the produce guy- when he is marking some down for quick sale- You can adjust this recipe up obviously if you find a great deal on a bunch of eggplant. Hmmm, I wonder how many eggplant i would roast for an appetizer for 50?
Babbaghanouj (Makes a decent amount for about 10 people with other appetizers on hand) *1 med /large eggplant (wash, then pierce all over with fork or knife) Roast 375(lay it right on the racks) til collapsed (put pan underneath) and soft (45min). Let cool, scrape all the soft gooey pulp into a glass bowl and add the the other ingredients (Save the Oil to drizzle over when ready to serve) You can sprinkle a little paprika over the dish for color. *1 cup sesame Tahini - you can adjust the amount to your taste *Garlic ,fresh or crushed garlic in jar- start with 1 clove and adjust *Fresh lemon juice- 1T. *Salt & fresh ground pepper *Fresh parsley (1/2 cup) minced-mix into the dish last and refrigerate *Olive oil | |

How about shish kabobbs...using ground beef on beds of rice- and not lamb ($$wise) - Stuffed grape leaves...Mujahdahra (sp) which is a lovely lentil dish with rice and carmelized onions---that one is probably not very good for such a huge group. (If you think of doing Greek food-try Moussaka, Spanakatipita, Tiropita, Grape Leaves, Cold Lemon Soup... finally Bye | |

I should have mentioned that I have access to a stove, hot plate, and crock pot for the occasion. I also am doing shish taouk with an indoor grill; the smell should drive them crazy. I found a recipe for a great lentil soup as well which will serve about 40 as an appy size bowl. On the same thread if you have any ideas for other easy to do themed brunches that would be great as well. | |
