Breakfast Nachos

1-1/4 refried beans
4 cups tortilla chips
4 eggs ,scrambled
1-1/2 cups of shredded (grated) cheddar cheese
1/4 cup sliced jalapeno (or Thick 'n Chunky Salsa, hot medium or mild)
sour cream
additional topping suggestions: guacamole, chopped green onions, chopped fresh cilantro, sliced blak or green olives-or both. :)

Spread beans onto bottom of large oven-proof platter (or foil-lined cookie sheet)
Arrange chips over beans. Top with scrambled eggs , cheese and Jalapenos.
(or the suggested) toppings of your choice.

Place under preheated broiler , 4 inches away from heat source, until cheese is melted. Top with Salsa and other choices........ Serve sour cream on side.
Makes 4-6 servings

Huevos a la Mexicana (Mexican Style Eggs)

6 eggs, whole large
2 green onion, chopped all the way including the green parts
1 tomato, peeled and chopped or 2 from a can
1 jalapeño pepper, sliced*
2 Tbsp olive oil,
oregano, a sprinkling of fresh if available, dry if not
salt, one shake from a salt shaker for every egg used
cilantro leaves, fresh and chopped, a couple of Tbsp

Heat oil in a large cast iron frying pan on medium high heat. Add the onions and brown for a minute or two. Add the chopped tomato and let cook for a few minutes on medium high heat until the tomatoes are somewhat cooked and mushy and some of the moisture has evaporated. It's okay if the tomatoes brown a bit. Add the oregano. Add the jalapeño pepper. Crack eggs directly into the pan with the cooking sauce. Add salt. Stir with a spatula to mix in the sauce and to lightly scramble the eggs. Remove from heat when the eggs cook to the desired consistency. If you are using a cast iron pan, remove the eggs from the pan and put into a serving bowl. Otherwise the eggs will continue to cook in the heat of the pan. Sprinkle with cilantro.

Serve with bread or heated tortillas.

Serves 2 or 3, depending on how many eggs per person are used.

Breakfast Burritos

[you will need microwave safe bowls]

2 large eggs
1 cup shredded cheese
1 potato
1 small onion chopped
1/2 green bell pepper chopped
1 stalk celery chopped
1/2 a package of chorizo or spicy Mexican sausage
flour tortillias
salsa

Prepare your veggies in bite size pieces: onion, celery, pepper.
Place in microwave safe bowl and cook for two minutes or until tender when pierced with a fork. Cut a couple of slice's in your potato and microwave until tender through. Chop on cutting board - careful, it's very hot. Salt and season with garlic powder and pepper. place in bowl with veggies. In a separate bowl, break the eggs and whip with a fork.

Add a tsp of water and cook for 30 sec. Stir and cook about 1 min more or until fluffy.

In a skillet cook meat according to heating instructions. Remove any grease and add eggs and veggies. Warm tortillas in microwave. Spoon ingredients into tortillas top with cheese and fold into burrito.

You can make these in advance and freeze. Its fast to warm up, when you use the microwave.

Thank you. I have been looking for an easy burrito recipe. (If it is easy, it is for me). My son makes these on the weekend, wraps them in plastic wrap and freezes them for an alternative breakfast when he oversleeps. They are yummy! Heading for the kitchen right now.

I love anything Mexican and would eat it anytime of the day. Here is an easy lasagna Tex-Mex style that frees you up for 2 hours before dinner. Serves 12 (6 in my family)

1 box lasagna noodles
1 pound ground meat
1 can refried beans
1 jar salsa
water
2 cups sour cream
2 cups shredded cheese
chopped black olives
chopped green onions

Layer noodles, ground meat, and beans in a baking pan deep enough to hold it.
Pour salsa over all
Add water just to the top layer. This extra liquid will cook the noodles for you.
Cover tightly with foil. Put pan on baking sheet to catch any overflow.
Bake in 350 oven for 1.5 hours
Remove from oven
Add grated cheese. Return to oven for 5 minutes just to melt cheese.
Allow to rest about 20 minutes if you can wait that long.
Cover with sour cream
sprinkle with olives and onion.

Serve with a green salad

Omit the water if you prefer to cook the noodles first. (I never do)
It is not necessary to cook the meat first, but it is up to you. I tried it both ways and it doesn't do much to the finished product.

Another breakfast burrito recipe

1 can black beans
1 can white beans
3 extra large eggs (beaten) (I like to add a little milk so they're a bit fluffy)
1 can goya tomato salsa
1 package charizo Mexican sausage
1 green pepper (sliced)
Sliced black olives (optional)

Cut the casing off of the sausage. Throw the casing out. Fry the sausage in a large frying pan.
Heat the beans in a pot while the sausage is cooking.

When the sausage looks done, add the eggs.

Keep the heat on high and continually scrape the bottom so that the eggs fluff, get spread among the sausage, but don't burn.

When the eggs look cooked, add the beans and the salsa. Mix it well. Then add the green pepper and the olives (if you want olives).

When it's well mixed put it on flour tortillas and add anything (cheese, sour cream, guacamole) that you like.

I couldn't tell you how many this serves, but when I make it I tend to eat it for 3 days. (I'm the only one I'm cooking for with this as not many of my friends like spicy food. When I make this I have one big meal a day for 3 days.)

In my opinion ....The best Mexican style breakfest is good ole Corizo & Eggs on some steamed corn tortillas!!!

bacon and eggs wraped in a fresh flour tortilla is my idea of mexican breakfast...

There's nothing better than a Tex/Mex breakfast, this is my favorite: Huevos a la Mexicana (eggs with tomatoes, onions, and peppers), fried potatoes, refried beans, homemade flour tortillas, hot sauce, and some good strong coffee, and the final ingredient....good friends to share it with!...mmmmmmm...can't wait till vacation time in Texas!

Mexican Chilaquiles
( pronounced: chill- ah –kill-es)
This is a baked dish using tortilla chips, chicken , onion cheese and coated in the sauce.
It can be awesome for lunch, dinner, a picnic or even breakfast the next morning.

One onion- half chopped- half slivered (save slivered for next step)
Minced garlic
Olive oil
Tomoato sauce
½- ¾ cup chicken broth
¼ cup Chipotle sauce- optional
Tortilla chips- (store bought will do)
Cooked and shredded chicken (1 breast or 2 thighs)
Mozzarella or Monterrey jack cheese (or both) (1 cup)

Tomato sauce:
Sauté chopped onion in olive oil, add garlic, and then tomato sauce basil and 1 tsp brown sugar, heat through and then add chicken stock and chipotle sauce (optional) and heat through. Put aside.
Alternate sauce: make Mole (red or green) sauce by dissolving in the chicken stock and omit the garlic and simmer. Then follow the following steps.

Tortilla
Method:
In a deep baking dish put a little sauce (1/4 cup), then layer with some tortilla chips, then chicken, slivered onion and cheese and repeat the layers- finishing with onion and cheese.
Bake for 30 mins at about 300 C / 150F, and cheese on top is melted. The tortilla chips should absorb the sauce but still be moist. serve with a dollop of sour cream (or creme fraiche) on top of each individual serving.
This has always been a hit.

I love doing Mexican for breakfast when my family is here( I don't do breakfast much myself) but I never thought about nachos for breakfast. Thanks for the tip.

Whoa...somebody has got to find some green chiles to put in the sausage , egg , onion and cheese mixture. No breakfast burrito is complete with out them. Or Eggs Rancheros, which a Spanish girlfriend of mine told me were house eggs or old fashioned eggs in our language.

Not sure this is anywhere near "authentic", but it isn't un-tasty.

Eggs Ranchero

4 eggs
4 small tortillas (or two larger ones)
2 tbs. butter
¼ cup grated cheese
4 green pepper rings
vegetable oil

Ranchero Sauce:

2 tbs. olive oil
1 cup finely chopped green pepper
¼ cup finely chopped onion
1 cup chili sauce or salsa
1 8 oz. can tomato sauce
2 tbs. lemon juice
1 tbs. Worcestershire sauce
¼ tsp. chili powder (or to taste)

To make Ranchero sauce: heat vegetable oil in medium saucepan over moderately high heat; sauté green pepper and onion, stirring constantly, until vegetables are just tender. Add chili sauce, tomato sauce, lemon juice, Worcestershire and chili pepper; bring to a boil, then reduce heat, cover and simmer for 15 minutes, stirring occasionally. Fry tortillas until soft, but not crisp. Fry eggs until yolk is still runny. To serve: brush each tortilla with a little sauce, top with an egg, more sauce, cheese and a green pepper ring. Serve immediately. Serves 2.

This is a a really simple breakfast recipe and it is so filling- 1 will usually do.
"Syncronizada" (Mexican grilled cheese)
2 tortillas (corn or flour)
dab of butter
3 -4 slices of monterrey jack cheese
sliced turkey or chickent lunch meat
heat fry pan. Lightly butter one side of the torilla. on the non buttered side put a slice or two of the lunch meat, then the cheese and then top with the other tortilla- with buttered side facing out.
Put into frying pan- brown one side and then carefully flip and brown the other side.
Serve with salsa verde, regular salsa, hot salsa,or guacamole . if you want use ketchup- that works too. Kids like it because it is simple.
It is nice and filling too. (See if you can finish 2 of these)
