Posted: 3/5/2007 9:43:30 PM | simply shock the eggs with cold tap water let it run for a couple of minute or so...then let them stand...the shell holds it's form while the eggs will shrink, therefore creating a tiny layer of space between the shell and the eggs in result pulls the membrain apart ( the mebraain is what hold it together)...crack the eggs as if you were going to put them in a bowl for an omlet then either roll the egg firmly in your hands or on a counter and the shell should just fall off.... I use to be a chef...boil 400 eggs at one time and you learn quite quickly how to shell an egg...haha... hope I was able to help | |

| why hard boiled eggs shells stick! Posted: 3/5/2007 10:14:20 PM | This is what I dug up from several places a few months ago, when every dang egg was reduced to nothing after peeling.
Use eggs that are 1 to 2 weeks old, not fresh. Let sit on countertop till almost room temperature. Don't leave them out too long or they'll be rotten. Use cold water. Add a little vinegar, I add about 3 ounces to a quart pot. Medium to high heat until water boils, turn heat down to barely boiling and cook 10-13 minutes depending on egg size. Dump hot water and add cold water and a bunch of ice cubes. Peel under cold running water.
If this fails, make scrambled eggs, they're pretty easy.  | |

I read somewhere that for perfect hard boiled eggs, you start them in cold salted water and as soon as the water begins to boil, set a timer for 10 minutes (but not until the boiling starts). one thing they suggest that I also saw on a great cooking show was to prick the round end (not the pointy end) with a pin - the air pocket at that end tries to expand with the heat but just builds up pressure against the egg if it isn't released through a hole. The excessive pressure helps to cause the green colour and forces the egg against the shell while cooking - thus making it harder to peel.  | |

Posted: 3/6/2007 10:02:20 AM | I read somewhere that there is a farmer here in the UK who actually injects his chickens with a vinegar substitute for the sole purpose of making the egg shells thinner and more elastic in development which in turn makes them so much easy to peel but I don't know anybody that has actually tried one.

Doing your culinary apprentiseship in a 5 star resort you quickly learn that your chef will have a shit fit if you mess up even the simplest task. ie. the hard boiled eggs.
Place eggs in pot and cover with cold water. Bring water to a boil then turn to a simmer for nine minutes exactly. This time garauntees a fully cooked egg as well as prevents the greying of the yolk. Remove eggs from the water and place in cold water. Peeling them right after cooking them makes them easier to peel. To peel do not crack the bottom, instead lightly crack the side of an egg on a cutting board and roll it using slight pressure with your palm to crack the egg all the way around... then peel.

| why hard boiled eggs shells stick! Posted: 3/8/2007 1:04:31 AM | I agree ... just cover eggs in cold water, set on flame, bring to rolling boil for whatever time works for you (9-15 minutes or so), bathe in cold water to stop the cooking, crack, roll and peel. No grey yolks, no sticking shells.
Soft boiled ... warm eggs to room temp. Boil enough water to cover eggs to a high rolling boil ... coddle eggs into water, boil for 3 minutes or so, remove, bathe in cold water to stop cooking, peel and serve.

I knew there was something to be done but couldn't remember just what.I thought it might involve vinegar so I tried both. Worked great! | |
