| Hummus recipes Posted: 3/6/2007 11:59:38 AM | I was given a can (19 fl. oz) of chick peas (PLEASE don't ask...LOL), and I'm looking for a recipe for hummus so I can use them. Recipes I've seen so far involve pine nuts, and I can't use them due to allergies. Thanks for your help. | |

Buy yourself a can of CEDAR chick pea dip and just add one lemon, a 1/2 teaspoon or so of olive oil a little garlic powder and mix. It is simple....put on pita bread and it is perfect. 1/4 cup of chicken or vegetable stock. Can of chick peas. 2 or 3 cloves of Garlic. A little Lemon Juice. Approx 3 tbs Tahini(Sesame paste) or ground Sesame seeds.
Then drizzle a little Olive oil and Paprika or chilli sauce) on top. | |

| Hummus recipes Posted: 3/6/2007 1:07:00 PM | I make my own Tahini (ground sesame seeds made into a paste). Put about 2 tbls in a pan and toast them very lightly in a cooler oven, about 200 degrees. Then in a blender, blend the seeds with about 2 tlbs olive oil until pasty.
Chick peas arent the only beans to make hummus. I make black bean hummus, red hummus with pintos or kidneys beans, and even soybeans to make a green hummus. I put each hummus in a sectioned tray and surround them with home made pita chips. Great for a party! I basically use the same recipe for each one; olive oil, minced garlic, tahini, lemon juice, salt and pepper. I seldom use pine nuts. You can also add some plain yogurt for a different flavor.
Baba ghanouj is basically a hummus made with eggplant. It definitely calls for yogurt.
Pita chips: Buy pita rounds and slice them into eighths. You can separate the leaves if they are thick. Spray with Pam and then sprinkle garlic powder over. Spread out on a baking sheet and bake for 20-30 minutes on about 200-250 degrees. | |

| Hummus recipes Posted: 3/7/2007 9:09:19 PM | 1 cup cooked (canned) Chick Peas 3 tablespoons lemon juice 1/4 cup tahini (sesame seed paste) 1 clove garlic, crushed 1/2 tablespoon ground coriander 1/2 tablespoon ground cumin 1 tablespoon soy sauce 1 tablespoon parsley
Directions:Process all ingredients until smooth Chill before serving. For a less traditional Hummus but even yummier (I think) you can use the same measure of soy beans in lieu of the chick peas. Serve as a dip for raw vegetables, put a spoonful on halved tomatoes and sprinkle chopped chives over them. Use in sandwiches instead of margarine or butter. Use as a spread on toast or warmed pita bread.
Cilantro Jalapeno Hummus Recipe
Ingredients: 2 cloves garlic 2 (15 ounce) cans garbanzo beans, drained and rinsed 3 tablespoons lime juice 1/2 teaspoon salt 1/2 cup olive oil 3/4 cup chopped fresh cilantro 2 jalapeno peppers, seeded and minced
Directions:
Place garlic in a food processor and process until minced, about 10 seconds. Add beans, lime juice and salt. Process into a puree. With the processor running, slowly add olive oil in a steady stream through the feed tube. Process until mixture thickens, about 1-2 minutes. Add cilantro and jalapeno and pulse throughout, about 10 seconds. Store in an airtight container in the refrigerator. Bring to room temperature before serving.  | |

1 202 size can of garbanzo beans, drained - reserve juice 1 - 2 cloves garlic (to taste) 1 -2 Tablespoons tahini (sesame paste -- or you can substitute 1 Tablespoon peanutbutter) pinch salt juice of 1 or 2 lemons 1/4 cup olive oil
Throw everything in a food processor. Add a bit of reserved juice if mix is too dry. Serve with pita (I like mine toasted into chips), and veggie crudite. Mama Bouridi always served it with cleaned green onions, cucumber spears, chunks of sweet bell pepper and pickled turnips. | |

| Hummus recipes Posted: 5/9/2007 4:55:02 PM | u need more than that. go get another couple cans of chick peas unless ur serious about making a mini batch ok lets do it. break out a blender. yes u need one. if not go borrow one from a neighbor. pour the beans into the pitcher. open the can first. get a half onion (its a mini batch ok?) now a couple cloves of garlic about a tablespoon of virgin olive oil. yes the oil has to be a virgin or it wont work right. maybe a bit of green onion and parsley can go in there (optional) a sprinkle of cayenne, black pepper, salt , tsp lemon juice or juice from a half lemon, and then turn on the blender for about a half min to a minute with the top ON. til u have the lumpiness out of the beans and its a thick creamy consistency. voila , hummous. now serve with pita bread or tortillas . If anyone wants recipes for any mideastern dishes or east indian preparations just ask!!!  | |

| Hummus recipes Posted: 5/9/2007 8:00:16 PM | Pine nuts in hummus?? I've never heard of that. Prolly you are thinking of pesto, which call for pine nuts (but you can use walnuts too) in the recipe.
Another use for a can of chick peas (as one alert reader pointed out, 1 can of chick peas isnt enough to make a goo d batch of hummus) is fried chick peas.
Heat up some olive oil in a frying pan. Add in a can of drained chick peas. Lightly sprinkle paprika over it (Hungarian sweet is best) and when its light golden, remove from heat.
Its a delicious healthy snack. | |

Add to food processor or blender:
For every 10 ounces of chick peas add.... 1-2 Tbs canola or olive oil (I prefer canola, which has a milder taste) 1-2 tsps lemon juice salt & pepper several slices bottled red pepper slices (I like to use lots and lots! Do it according to your liking for them) 1 tsp garlic (chopped, bottled)
Use the liquid from the chick peas if you need to thin the mixture while it's blending
After blending, let sit for a few hours so the flavors will blend

From Eating Well Recipe Rescue Cookbook
1 head garlic 1 19-oz. can chickpeas, drained and rinsed, or 2 cups cooked chickpeas (canned work best) 2 Tbsp. fresh lemon juice 1 Tbsp. reduced-sodium soy sauce 1 Tbsp. tahini 2 Tbsp. chopped fresh parsley plus a sprig for garnish salt to taste paprika for garnish
Preheat oven to 425. Remove the Loose papery outside skin from the garlic head without separating the cloves. Slice off the top 1/2 inch. Wrap in a small square of foil and roast for about 40 minutes or until the garlic is very soft. Unwrap and cool slightly. Separate the cloves & pee1.
In a food processor, puree the garlic, chickpeas, lemon juice, soy sauce, tahini and about 2 Tbsp. water (enough to make a fairly firm dip). Transfer to bowl, stir in parsley and season with salt. The hummus may be made ahead and stored, covered, in the refrigerator for up to 2 days.
Garnish with a sprig of parsley and a sprinkle of paprika. Serve surrounde by fresh vegetables and pita bread. Makes 1 2/3 cups.
24 calories per tablespoon: 1 G protien, 1 G fat, 4 G carbohydrate, 20 mg sodium, 0 mg cholesterol | |

1 can of chick pea (rinsed) 1/4 cup of water 2 tbsp tahini 2 tbsp vinegar 2 tbsp lemon juice 2 crushed clove of garlic 1 tsp olive oil salt, pepper 1/4 tsp curry (optional) parsley(optional)
Put everything in the food processor and process until you like the texture and then enjoy with whole wheat pita bread or as a replacement for mayonnaise in sandwiches. | |

When I tried to make it myself, it never tasted as good...I did a little online digging, and asked the family some questions and I think I've got it perfect now...the ultimate Hummus!!! (by the way many hummus recipes are family-specific, and closely guarded!!)
Put in a food processor: (if you use a blender, you'll have to stir frequently) 1/2 cup Olive oil 2 tblsp fresh lemon juice 5 cloves of garlic 1/2 tsp coarse salt 1/4 cup tahini 1 tsp paprika 1/2 cup of the liquid in a typical chick pea can (19 oz size) and all of the chick peas Process until it suits you. Add more chick pea water if you like it runnier. AND...quickly saute your pita before serving. Makes a BIG difference! (About 38 calories/tblsp by my calcs)

1 can chick peas 1 dash lemon Juice dizzle of olive oil 2-3 garlic gloves a litttle squirt of lemon juice dash salt dash pepper
throw in food processor until smooth and enjoy with pita bread.
Another way to enjoy:
1 can chick peas 1/4 cup minced red onion re and green peppers sliced small 1 tbsp. olive oil 2 tablespoons cider vinegar a dash of salt a dash of pepper
mix in a bowl and let marinade overnight.
(You can also add celery and carrots to the mix)
