| Homemade crackers? Posted: 3/8/2007 5:08:12 PM | Does anybody have any simple recipes for homemade crackers (preferably recipes that use whole grains and that don't use a whole lot of oil)? I have a few recipes in a few cookbooks, but they all use so much oil that I'm not really interested in trying them out.

2 cups shredded old cheddard cheese 500 ml 1/4 cup butter softened 50 ml 2/3 cup all purpose flour 150 ml 1/2 tsp baking powder 2 ml 1/2 tsp paprika 2 ml 1/4 tsp salt 1 ml 2 dashes tobassco sauce 3 tbsp sesame seeds 45 ml
cream cheese and butter in a large bowl until smooth and creamy. combine flour, baking powder, paprika and salt. Add to to cheese mixture along with hot sauce. Using 2 knives, a pastry blender or your fingers, blend mixture until it resembles coarse crumbs. Turn out onto a lightly floured board and knead lightly to form a dough.
Shape dough into a log about 9 inches long and 1 inch thick in diameter. Roll in sesame seeds, press seeds firmly and wrap in waxed paper and refridgerate until firm 2 hours or over night.
cut dough into 1/8 inch or .05 cms slices arrange on baking sheet. Bake for 8 - 10 minutes or until the edges are lightly browned. Serve warm or at room temperature
These are best the same day they are made.
I hope this helps some although there is no wheat

1 cup wheat flour 1 tbsp wheat bran 1 tsp corn meal 1/2 tsp salt 1/4 tsp baking powder 1/2 tsp sugar 1 tsp honey 2 tbsp butter, chilled 1/4 cup water, plus 1-2 tbsp, if needed
Sprinkle with salt, black pepper, cumin and paprika before baking
Combine all ingredients except water in a food processor and process until well combined. Add water and continue to process until mixture starts to come together into a dough. Between two sheets of parchment or wax paper, roll out the dough into a rectangle of about 1/4 inch thickness. Refrigerate the dough for about 1/2 hour. Preheat the oven to 375F. Remove dough from refrigerator and roll out to approximately 1/8 inch or less. Sprinkle dough with salt and/or toppings of your choice. Use a pizza cutter to slice into 1 inch squares, discarding excess dough. Score each cracker with a fork or several pricks of a toothpick. Transfer crackers to a parchment lined baking sheet and space out slightly. Bake at 375 for 18-20 minutes, until edges are brown. Cool completely and store in an airtight container | |

Posted: 5/3/2008 4:28:36 AM | alot do not realise that unless the 'flour' in a recipe is rice or of that sort it is 'wheat' flour just that it is bleached. i have celiac which means i have a wheat intolerance and i have to watch and change anything that has 'reg' flour in it. i am placing a recipe that is gluten-free for you Soda Crackers (Gluten-Free) Ingredients: 2 Cups Flour (Replace with gluten-free flour blend) 1 Teaspoon Salt ¼ Cup Butter ½ Teaspoon Baking Soda ½ Cup Sour Milk 1 Large Egg
Directions: Sift the flour, salt and baking soda into a bowl. Cut in the butter until very fine. Add the milk and egg and mix to make stiff dough. Kneed thoroughly, and then roll the dough very thin. Cut into squares or rounds and place on lightly buttered cookie sheets. Prick the crackers with a fork and then bake in a 400F degree oven for 10 minutes or until very lightly browned. If desired, crackers may be sprinkled with coarse salt.
